MAPLE-BACON CHOCOLATE CHIP COOKIES
This recipe was born out of a challenge to include bacon in a cookie batter. While that has been done before, the inclusion of chocolate chips and maple together in a whipped batter make this a sweet-yet-savory chewy cookie treat!

- Preheat an oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. Whisk together the flour, baking powder, baking soda, and salt; set aside.
- Beat together the butter, brown sugar, and white sugar with an electric mixer until smooth. Add one egg; beat until blended into the butter mixture. Add the remaining egg, vanilla extract, and maple extract; beat until well blended and slightly fluffy. Stir in the flour mixture a little at a time, mixing just until combined. Stir in the bacon and chocolate chips. Scoop by rounded tablespoonfuls onto prepared cookie sheets.
- Bake in the preheated oven until edges turn golden brown, 10 to 12 minutes. Remove from the oven, and cool on a wire rack.

- Maple Bacon1. In a frying pan over medium heat, cook 8 pieces of bacon until medium-well done (not crispy) and drain on paper towels.2. Chop bacon finely and add back to frying pan over medium heat. Continue to cook and stir the bacon until crispy.3. Turn the heat to low and add slowly 1/4 cup of pure maple syrup. Stir constantly and continue cooking another 5 to 10 minutes until nice and crispy.4. Transfer onto paper towel to cool.Shortbread Base 1. Preheat oven to 325F2. In a mixer, cream together butter, icing sugar and vanilla until light and fluffy.3. On low speed gradually add the flour until blended thoroughly.4. Knead cooled maple bacon into cookie dough.5. Scoop the desired size on parchment lined cookie sheets, flatten slightly.6. Bake at 325 F until lightly browned on the edges, 12-15 minutes depending on how large and thick the cookies are.

BACON BARK

- Preheat the oven to 350 degrees F.
- To prepare the nuts: In a small bowl, add the pecans, walnuts, brown sugar, maple syrup, pumpkin pie spice, paprika and a pinch of salt and a grind or 2 of pepper. Stir until everything is coated and set aside.
- To prepare the bacon: In another small bowl, add the brown sugar, paprika, bacon, lemon zest, a pinch of salt and a grind or 2 of pepper. Spread out on a nonstick baking sheet and cook until the bacon is almost done and the sugars are bubbling, 8 to 10 minutes. Remove from the oven and add the nut mixture on to the sheet. Stir and fold with a spatula and spread everything out on the sheet again. Place back in the oven for 15 more minutes, stirring and spreading again halfway through. Serve warm, or allow to cool and break apart.

- Prepare a baking sheet by lining it with parchment or wax paper.
- Using a large standing mixer, cream the butter and the sugar together until light and fluffy.
- Add the condensed milk and maple syrup and beat until well-mixed, then add the flour and salt and beat on low until combined. Stir in bacon.
- Using a small scoop or a teaspoon, scoop up small round balls of the dough and place them on the prepared baking sheet. Refrigerate for one hour. Remove from fridge and roll into balls. Place back in fridge for another hour.
- Melt chocolate in double boiler, in the microwave or, as I prefer, in a Crock Pot on low. Dip balls one at a time and coat evenly. [I tried dumping a bunch in the Crock Pot at once but they get soft fast. Alternatively, you could put the balls in the freezer for a few minutes before dipping first so they get good and cold.] Remove them with a fork and tap against the side of the pot to remove any excess chocolate. Place back on baking sheet and top with a piece of candied bacon, if desired.
- Put truffles back in fridge until firm. Store in fridge. Enjoy!

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. When cool, chop the bacon, and set aside.
- Beat the butter, white sugar, and brown sugar together in a large mixing bowl until fluffy with an electric mixer on medium speed, then mix in egg, and vanilla extract until thoroughly combined. Whisk the flour, baking soda, salt, and cinnamon together in a bowl, and stir the flour mixture into the butter mixture. Gradually stir in the oats and bacon, about 1/3 cup of oats at a time, and cover the dough. Refrigerate at least 1 hour.
- Preheat oven to 375 degrees F (190 degrees C). Thoroughly grease baking sheets.
- Scoop about 1/3 cup of dough per cookie, roll into balls, and place the balls at least 3 inches apart on the greased baking sheets. Use a fork dipped in water to flatten the balls slightly.
- Bake in the preheated oven until the cookies are golden brown with slightly browner edges, 10 to 12 minutes. Allow to cool on baking sheets 3 to 5 minutes before removing to finish cooling on racks.
- To make glaze, whisk confectioners' sugar, water, and maple syrup together in a bowl until smooth. Let the glaze stand about 5 minutes to slightly thicken; drizzle onto the tops of the cookies. Allow glazed cookies to stand about 20 minutes to set up before storing.

- Preheat an oven to 350°F. Line a rimmed baking sheet with parchment and set wire rack on the lined baking sheet. Lightly spray the wire rack with non-stick cooking spray. Arrange bacon in a single layer on the wire rack. Brush 1 tablespoon of maple syrup evenly over the slices. Cook the bacon for 10 minutes in the oven, then flip the slices, and brush the other side evenly with 1 tablespoon maple syrup. Continue to cook the bacon until crisp and dark in spots (about 10 – 15 minutes more). Let the bacon cool completely, then chop into small bits.
- Combine flour, baking soda and sea salt in a medium bowl, whisking to combine. Set aside. Add butter and sugar to a stand mixer fitted with the paddle attachment. Cream sugar on medium speed until light and fluffy (2 – 3 minutes). You can also use a hand mixer here. Add the egg, vanilla extract and maple extract, mixing until incorporated. Add the maple syrup, and mix until well incorporated. Add the dry ingredients (flour mixture) to the wet ingredients (butter-egg mixture) in 3 additions, beating at a lower speed until each addition is just incorporated. Fold in the reserved, chopped candied bacon. Cover the cookie dough with plastic wrap, and let chill in the refrigerator for 1 hour.
- Preheat an oven to 350°F and place a rack in the center of the oven. Scoop 1 tablespoon of cookie dough, and, using your hands, roll into a ball. Place balls on a parchment-lined baking sheet 2 inches apart. Bake for 10 – 12 minutes until the cookies turn lightly golden around the edges. Allow to cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
