ALMOND MAPLE GRANOLA

Almond Maple Granola image

This granola is good and crunchy with lots of sweet flavor, thanks to the pure maple syrup and dark brown sugar. It uses a lot less oil than some granola recipes. Can be made 1 week ahead.

Categories     Breakfast and Brunch     Cereals     Granola Recipes

Time 1h35m

Yield 12

Number Of Ingredients 11

3 cups rolled oats
1 cup blanched slivered almonds
¼ cup wheat germ
1 (14 ounce) package flaked coconut
⅓ cup unsalted sunflower seeds
6 tablespoons pure maple syrup
6 tablespoons packed dark brown sugar
¼ cup vegetable oil
2 tablespoons warm water
½ teaspoon salt
1 cup raisins

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C). Lightly grease a cookie sheet with sides, or a large cake pan with cooking spray.
  • In a large bowl, toss together the oats, almonds, wheat germ, coconut, and sunflower seeds. In a separate bowl, whisk together the maple syrup, brown sugar, oil, water and salt. Pour the liquid over the oat and nut mixture, and stir until evenly coated. Spread out on the prepared cookie sheet. If you want some chunky bits, squeeze some small handfuls into little clumps.
  • Bake for 1 hour and 15 minutes in the preheated oven, stirring occasionally until evenly toasted. Mix in raisins. Cool, and store in an airtight container at room temperature.

HONEY MAPLE GRANOLA

Honey Maple Granola image

This is my favorite granola recipe adapted from the joy of baking website. It's not too sweet, and tastes great with a variety of nuts and dried fruit. Makes a great gift!

Provided by Harriet

Categories     Breakfast

Time 55m

Yield 4 cups

Number Of Ingredients 9

3 cups old fashioned oats
1/2 cup shredded coconut (sweetened or unsweetened)
1 cup nuts, chopped (I like a mixture of almonds, pecans, cashews, and sunflower seeds)
1/2-1 teaspoon cinnamon (I use 1 teaspoon)
1/4 teaspoon salt
2 tablespoons vegetable oil
3 tablespoons honey
3 tablespoons maple syrup
1 cup dried fruit (I like a mixture of cranberries, raisins, chopped apples and apricots)

Steps:

  • Preheat oven to 300 degrees.
  • Line a baking sheet with parchment paper.
  • Combine rolled oats, coconut, nuts, cinnamon, and salt.
  • In a separate bowl stir together oil, maple syrup and honey.
  • Pour liquid mixture over the dry ingredients and stir together.
  • Spread onto the prepared baking sheet and bake for approx 20-25 minutes (stirring occasionally).
  • The longer you bake it the crunchier the granola will be. It may still be sticky when it comes out of the oven, but it will become crisp and dry as it cools.
  • Place baking sheet on a wire cooling rack.
  • Once cooled, mix in the dried fruit and store in an airtight container or plastic bag in the refrigerator.
  • It will keep for several weeks.

MAPLE-ALMOND GRANOLA RECIPE | MYRECIPES
This is a great granola recipe! I love how the house smells while it is baking. I'm not a fan of canola oil so I have used walnut and/or almond oil intead. I like adding dried cherries with the raisins and omitting the dried apricots. Everyone raves about this granola. Last year I put it in little gift bags and gave it out for the holidays.

Turn the granola out onto pan and use a rubber spatula or large spoon to spread it out evenly. Bake for 24 minutes, stirring halfway through. Mix in smaller seeds/nuts if desired The granola should be a light golden color (but keep an eye on it as honey/maple syrup tends to brown without warning). The granola will become crispier as it cools.
