MANIFOLD ROAST (CAR-B-QUE)
Something to cook on a five- to six-hour car trip. This is not my creation. It appeared in the Baton Rouge Morning Advocate newspaper and I believe it was taken from a published cookbook.

Steps:
- Start with a 2- to 3-pound roast, the flatter the better.
- Season with dry Good Seasons Salad Dressing mix or dry mushroom soup, salt and pepper or any way you season a roast before roasting.
- Double or triple wrap in heavy-duty aluminum foil, crimping on sides so liquid will not leak when you turn the roast. Place on or against the flat part of exhaust manifold or against hot part of engine block.
- Drive five to six hours.
- Turn once halfway to destination.
- You will arrive with a tender, juicy roast, ready to eat, and you will enjoy the smells of a home-cooked meal en route. Note: This will not work on all vehicles, only those with appropriate engine design.

Steps:
- In a small skillet, sauté crawfish tails in butter or olive oil for about 2 minutes to until warm--Do not overcook.
- In a bowl, combine crawfish, pan juices, artichokes, mayonnaise, cream cheese, Asiage cheese, and salsa.
- Stir in green onions.
- Pour into a greased casserole dish and bake at 350 degrees for about 20 minutes or until hot.
- For low carb eaters, serve with low card crackers or chips or over low carb pasta.
- For others, serve as a dip on crackers or as a topping for pasta.

LEFTOVER ROAST BEEF BAR-B-QUE SANDWICH FILLING
This is usually what I do with leftover roast beef since we can never seem to finish eating a whole one. Amounts are just a guesstiment since it depends on how much you have leftover. Making it this way, it seems like your not having the same dish 2 nights in a row.

Steps:
- Shred or cut roast into thin slices (I shred).
- Mix enough bar-b-que sauce to make moist.
- Put into bowl with a lid.
- Refrigerate overnight or freeze.
- When ready to use, thaw, if frozen and microwave until hot, usually 2 minutes at a time until hot.
- Serve on buns with sliced onion and pickles.

Steps:
- Heat oven 350.
- Poach pork fat for 10 minutes. Drain. Let cool. Mince.
- In a food processor combine the fat with the ham, nuoc nam, water, flour, sugar, baking powder, MSG, pepper and cinnamon. Pulse until combined.
- Press mixture into a sprayed loaf pan.
- Place pan in another pan filled with 1 inch of water.
- Bake 40 minutes.
- Serve at room temperature.

My sons have always been interested in learning of their Filipino heritage ... I am trying to collect recipes of all the foods my own mama made for my brother and I when we were small. This one is very simple, something she would make as a snack.

Steps:
- Peel the sweet potato and slice into 1/2"-thick rounds.
- Heat the oil in a medium-sized saucepan; when it's hot, add the brown sugar to the oil. I know it's weird - but it works :).
- When the brown sugar floats, add the slice sweet potato and fry about 10 minutes, turning every once in a while to get the brown sugar all over the potato.
- When the potato is tender, remove from pan and let it cool off a few minutes - that sugar is HOT.
- You can serve this on a plate, or on a bamboo skewer.
