4 ounces mango juice, cold
2 ounces lime juice (about 2 limes)
1 bottle ginger beer, cold
2 lime wheels
2 mango wedges

Steps:

Divide the mango juice and lime juice between two glasses over ice, if desired. Top off with ginger beer. Add a lime wheel and a mango spear for garnish.

2 fresh ripe mangoes, peeled and pitted
1 cup Aperol or Campari
Ice
2 cups dry white wine
2 cups prosecco
4 slices orange
4 large green olives with pits

Steps:

Place mangoes and aperol in the jar of a blender and puree. Place 1/4 cup mango puree in each of 4 glasses. Fill with ice; add 1/2 cup white wine and 1/2 cup prosecco. Add an orange slice to each glass. Spear each olive with a toothpick and add to each glass. Serve immediately.

2 cups prosecco
4 green olives (with pits, use Castelvetrano or Green Cerignola)

Steps:

Place mangoes and Campari/Aperol in the jar of a blender and puree.
Place 1/4 cup mango puree in each of 4 glasses.
Fill with ice; add 1/2 cup white wine and 1/2 cup prosecco to each glass.
Garnish each glass with a slice of orange.
Spear each olive with a toothpick and add to each glass. Serve immediately.

1 cup Sugar
1 cup Water
4 Cinnamon Sticks
1 Mango
2 oz Cinnamon Simple Syrup
3 tbsp Water
1/2 cup Crushed Ice
4 Fresh Basil sprigs
4-6 oz Chilled Prosecco
Mango Slices, for garnish

Steps:

In a small saucepan over medium-high heat, combine the sugar and water and bring to a boil until the sugar dissolves. Add in the cinnamon sticks, reduce the heat to low, and simmer for 15-20 minutes.
Remove the saucepan from the heat and strain the syrup into a heat proof container. Allow the syrup to cool before using.
Using a sharp knife cut the mango on both sides and into chunks using the method described above then scoop the mango into a blender. Pour in the cinnamon simple syrup and water, then blend on low until the puree is smooth.
Add the ice to a wine or spritz glass, add in the basil, and spoon 3 tablespoons of the mango puree into the glass. Top with the chilled Prosecco and garnish with 1 or 2 slices of mango.

Peel and de-pit the mango, and chop it into rough chunks. You can set aside a couple of thin slices to garnish your glasses if you like (I did this in the pictures, but actually they look perfectly swish with just these lime green chevron paper straws in each glass!), before dumping it all in a blender (I have a basic Nutri Ninja, fyi).
Pour a good measure of soda water into the mango puree and stir until it is loose enough to drink and pour.
Divide between each glass, top up with more soda water and stir each glass with a long spoon so that everything is cold and combined.
