A sweet and refreshing mango shake is the perfect drink to enjoy when mangos are in their peak of the season. Here I share two equally easy and delicious recipes for making rich and creamy mango milkshakes - one with dairy and a vegan version made with coconut milk.

Number Of Ingredients 10

2 mangoes (- medium sized alphonso mangoes or any sweet variety)
1.5 cups milk (or ¾ cup milk + ¾ cup water - cold or at room temperature)
3 to 4 ice cubes (- optional)
2 tablespoons sugar (or honey or palm sugar, coconut sugar - optional)
2 mangoes (- medium sized alphonso mangoes or any sweet variety)
2 cups Coconut Milk ((thick or lite) or almond milk or cashew milk)
2 tablespoons raw sugar ( or maple syrup, coconut sugar, add as required - optional)
3 to 4 ice cubes (- optional)
10 to 12 saffron strands (- optional)
1 to 2 tablespoons chopped cashews (almonds, pistachios to garnish - optional)

Steps:

  • Rinse and pat dry the mangoes. Peel and chop them. Add chopped mangoes in a blender jar.
  • Add milk and the ice cubes (optional).
  • Blend to a smooth consistency. Check the consistency and if you find the shake too thick, add some milk and blend again.
  • Pour in glasses.
  • Serve mango shake straight away.
  • Rinse the mangoes and pat dry them with a clean kitchen towel. Peel and chop roughly.
  • Add the chopped mangoes and coconut milk in a blender. Optionally add the sweeteners like cane sugar or palm sugar, coconut sugar or jaggery according to your taste and considering the sweetness of mangoes.
  • Add saffron or your preferred choice of flavorings like ground cinnamon or cardamom powder or vanilla. Choose to omit any flavorings if you like.
  • You can add a few ice cubes also at this point or you can add the ice cubes while serving the mango shake.
  • Blend all the ingredients until smooth.
  • If the consistency is too thick too your liking, add some water. Blend again.
  • Pour in glasses and top with some chopped nuts. Serve vegan mango shake with a few saffron strands as a garnish (optional).

1½ to 2 cups mangoes (chopped or 1 cup pulp)
1 to 1½ cup chilled milk ((or coconut milk, almond milk))
2 tablespoons sugar ((honey, maple syrup, coconut sugar, jaggery) (skip if using ice cream))
25 cashews or almonds (or 4 scoops of vanilla ice cream)
1½ teaspoon vanilla extract ((optional, or ¼ cardamom powder))
2 tablespoons sliced nuts (for garnish)

Steps:

  • Wash mangoes under running water and peel them. Chop them to bite sized pieces. Chill the milk.
  • For a chilled milkshake without ice cream, chill the mangoes for a few hours. Also soak cashews for 30 minutes or almonds for 6 hours. Peel them.
  • Add all the ingredients to a blender and blend them until smooth. If using ice cream skip sugar.
  • Taste test and add more milk or mangoes to suit your taste and blend again.
  • Pour mango milkshake to serving glasses and garnish with sliced nuts.

  • Wash, peel and chop mangoes into small pieces, discard stone. Transfer them to a blender jar.
  • Add milk, sugar (to taste or according to sweetness of mango) and ice-cubes.

Steps:

  • Stand one of the mangos upright with the narrow end facing you. Slice off the 'cheeks' on either side of the stone and slice these in half lengthwise. Cut around the stone to take off as much flesh as possible, capturing all the running juices in a bowl.
  • Remove the skin by peeling or cutting the fruit carefully off it. Repeat with the other mango. Discard the skin and puree the flesh and juice in a food processor or blender.
  • Add the milk and sugar, and combine until it becomes a thick smooth mass. Transfer the liquid to a pitcher and chill the mixture until ready to drink. Add the ice cubes to the pitcher and serve straight from the refrigerator. A little goes a long way, so serve in small glasses.
