MANGO GAZPACHO WITH PICKLED SHRIMP



Mango Gazpacho with Pickled Shrimp image

Number Of Ingredients 22

3 ripe mangoes (peeled and cut into chunks)
1 cup cantaloupe chunks
1 yellow bell pepper (seeded and cut into chunks)
¾ cup red onion (cut into large chunks)
3 cloves garlic
1 rib celery (cut into chunks)
1 large jalapeno (seeded)
3 limes (juiced)
1 ½ cups Simply Orange Juice with Mango (if you can't find this brand regular orange juice will work)
1 teaspoon salt
¼ cup fruity olive oil
1/4 cup red wine vinegar
¼ cup cilantro leaves for garnish
1 avocado (diced)
1 pound medium shrimp
3 cups water
½ cup champagne vinegar
1 tablespoon mustard seed
1 tablespoon peppercorns
pinch of red pepper flakes
1 1- inch knob of fresh ginger (smashed)
1 teaspoon sugar

Steps:

  • For Gazpacho
  • Set aside ¼ cup each of red onion and mango. Put the rest of the ingredients except cilantro in a blender. Pulse 5-8 times. If you like your gazpacho chunky, reserve 1 cup of mixture at this and add after blending the rest of the ingredients until smooth. If you a smoother gazpacho, go ahead and blend it all at once. Chill in the refrigerator for 30 minutes for flavor to meld. Serve with cilantro and avocado and top with pickled shrimp.
  • For Pickled Shrimp
  • Rinse, shell and devein shrimp and set aside.
  • Bring water, vinegar, mustard seed, sugar, ginger knob and red pepper flakes to a boil in a medium pan. Remove pan from heat and add shrimp. Let rest for 10 minutes, turning shrimp so they cook evenly. Place mixture in refrigerator and let marinate for 30 minutes to one hour. Use as garnish for gazpacho or eat on their own. Delicious.

2 cups 1/4-inch-diced fresh mangoes
2 cups orange juice
2 tablespoons extra-virgin olive oil
1 seedless cucumber, cut into 1/4-inch dice
1 small red bell pepper, seeded and cut into 1/4-inch dice
1 small onion, cut into 1/4-inch dice
2 medium garlic cloves, minced
1 small jalapeno pepper, seeded and minced
3 tablespoons fresh lime juice
2 tablespoons chopped fresh parsley, basil or cilantro
Salt and freshly ground black pepper

Steps:

  • Process mangoes, orange juice and oil in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste. Refrigerate until ready to serve. (Can be made several hours before serving.)

1 teaspoon hot sauce, or more to taste
1 teaspoon sugar
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
Juice of 2 limes
2 cloves garlic, finely chopped
1/2 cup extra-virgin olive oil
4 mangoes, sliced
4 Roma tomatoes, halved and sliced
1 small jicama, peeled and cut into julienne
1 red onion, thinly sliced
1/4 cup fresh cilantro leaves
8 leaves fresh basil
2 avocados, sliced

Steps:

  • Whisk together the hot sauce, sugar, salt, cumin, lime juice and garlic in a small bowl. Whisk in the olive oil.
  • Add the mangoes, tomatoes, jicama and onion to a large bowl. Pour over the dressing and toss to coat. Add half the cilantro and basil and toss again. Stir in the avocado. Serve garnished with the remaining cilantro and basil.

1/2 small red onion
1 small clove garlic
Kosher salt
Juice of 2 limes
1/2 teaspoon chili powder
1/4 cup extra-virgin olive oil
1 1/4 pounds cooked medium shrimp, peeled
1 ripe mango, peeled, pitted and diced
1 14-ounce can black beans, rinsed and drained
1 head romaine lettuce or 3 romaine hearts, torn into bite-size pieces
Large handful fresh cilantro leaves, chopped
1 cup mixed cherry tomatoes

Steps:

  • 1. Thinly slice the onion and soak in cold water while you prepare the rest of the salad.
  • 2. Smashed the garlic and sprinkle with a pinch of salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Transfer to a large serving bowl. Add the lime juice, 2 teaspoons salt, and chili powder. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a dressing. Toss the shrimp in the dressing.
  • 3. Add the mango, beans, lettuce, and cilantro to the bowl. Drain and dry the onion, and scatter over the salad. Gently toss the salad together and serve.

Steps:

  • Make mango salad:
  • Whisk together brown sugar and lime juice in a large bowl until sugar is dissolved, then whisk in red chile, shallot, cilantro, and mint. Add mangoes, tossing gently.
  • Grill shrimp:
  • Beginning at thick end, insert a skewer lengthwise through each shrimp to straighten. Transfer to a tray.
  • Prepare grill.
  • Whisk together oil, jalapeño, cumin, and salt, then brush on skewered shrimp until well coated. Grill shrimp, turning occasionally, until lightly charred and just cooked through, about 4 minutes.
  • Toss mango salad again and divide among 4 plates. Arrange 4 shrimp on top of each serving.

1 loaf country bread, cut into 1-inch cubes (about 6 cups)
2 tablespoons white wine vinegar
1 1/2 cups water, more if needed
3 cucumbers, peeled, halved lengthwise, seeded, and chopped
1/2 onion, chopped
2 teaspoons sliced almonds
2 garlic cloves
2 cups green seedless grapes
1/2 cup olive oil, plus
2 tablespoons olive oil
2 teaspoons salt
1 lb shrimp, shelled and halved lengthwise

Steps:

  • In a medium glass or stainless-steel bowl, combine 3 cups of the bread cubes with the vinegar. Add the water; set aside 5 minutes to soften.
  • In a blender, combine the cucumbers, onion, almonds, 1 clove of the garlic, and 1 cup of the grapes.
  • Add the soaked bread, the 1/2 cup olive oil, and 1 teaspoon of the salt. Puree until smooth. Put the soup in the refrigerator to chill for about 20 minutes, or up to several hours.
  • Meanwhile, in a large nonstick frying pan, heat the remaining 2 tablespoons of oil over moderately high heat. Add the shrimp and the remaining 1 clove garlic and 1 teaspoon salt.
  • Cook, stirring frequently, until the shrimp are just done, 3 to 5 minutes. Remove the shrimp with a slotted spoon.
  • Reduce the heat to moderate and add the remaining 3 cups of bread cubes.
  • Cook, stirring frequently, until the bread is crisp and golden, about 5 minutes.
  • Cut the remaining grapes in half. In a small bowl, stir together the halved grapes, the shrimp, and the croutons.
  • Serve the gazpacho (thinned with a small amount of water if it's thicker than you like) topped with the warm or room-temperature shrimp-and-grape mixture.
