MANGO AND LIME DRESSING
This ultra-refreshing ango and lime combination makes for the perfect summer salad dressing for your salad recipe. Easy to make, it is also such a healthy homemade dressing.

Steps:
- Peel the mango and extract as much flesh as possible.
- In a food processor, add the mango, juice of 2 limes, leaves of 2 sprigs of coriander, green chilli, honey, olive oil and apple cider vinegar.
- Blitz until pureed and well combined.

HERB-ROASTED TURKEY TENDERLOIN WITH MANGO, LIME AND GINGER DRESSING AND ROASTED SWEET POTATOES

- Preheat oven to 400 degrees F.
- Season turkey tenderloins all over with salt, black pepper and cumin.
- In a large skillet over medium high heat, add about 2 to 3 tablespoons olive oil. Once heated, add the turkey tenderloins and saute on 1 side. Add the potatoes to the pan, flip the turkey, when ready and place the pan into the preheated oven. Roast turkey and potatoes for about 15 minutes or until a meat thermometer registers 170 to 180 degrees F. Let turkey stand 10 minutes before slicing crosswise into 1/2-inch thick slices.
- Meanwhile, in a blender combine mangoes, mint, lime juice, mustard, and ginger. Puree until blended. Add yogurt and puree until smooth. Serve 1/2 of the turkey with all of the sauce spooned over top and all of the sweet potatoes.
- Reserve remaining turkey for Thai Turkey and Rice.

This tangy, nutty dressing is enlivened by sesame oil, chili oil, fresh ginger and lime juice.

GINGER-MANGO "NICE" CREAM
No need for dairy in this frozen treat. Frozen bananas and mango are pureed until thick and creamy with a bit of agave to enhance the flavor and keep the texture soft, not icy, when frozen.

- Freeze 2 sliced bananas and 1 diced mango until firm, at least 4 hours. Puree in a food processor with 3 tablespoons agave syrup, 1/2 teaspoon grated fresh ginger and a pinch of salt until thick and smooth. Transfer to a small baking dish and freeze until firm. Scoop into bowls and top with chopped fresh mango.
MANGO-BERRY SALAD WITH HONEY LIME DRESSING
This is an amazingly simple salad with fresh, summer flavors and eye-popping color presentation. The lime juice in the honey-lime dressing nicely accentuates the mango and strawberries. I served this salad to our Memorial Day backyard barbeque guests and received many compliments. Enjoy!

- In a large serving bowl, combine mango, strawberries and blueberries (do not add raspberries yet).
- In a small mixing bowl, whisk together honey, lime juice and mint. Drizzle over fruit.
- Cover bowl and refrigerate until ready to serve.
- Just before serving, toss fruit to evenly distribute juices. Then add raspberries to bowl atop the rest of the fruit (do not toss, as raspberries have a tendency to break up).
- Serve with a slotted spoon and enjoy!

MANGO WITH CHILE-LIME SALT
This take on the classic street food, served throughout Mexico, is encountered often in open air markets, beaches and parks in summer. The original is often made with tajín spice, a store-bought blend of ground chile, lime and salt. This preparation allows you to use any variety of mango, in states of ripeness from soft and juicy to firm, and the homemade chile-lime salt can be used for a variety of savory or sweet dishes as a garnish or topping. If using store-bought chile-lime salt, substitute the ground chile, lime zest and salt with 2 tablespoons of the seasoning.

- In a small bowl, combine the chile powder, lime zest and salt. Use the chile-lime salt immediately or store at room temperature in an airtight container for up to 3 days.
- Sprinkle the chile-lime salt all over the mango and serve immediately, or loosely cover and refrigerate for up to 4 hours.
