2 lbs cooked chicken breasts, diced
1 stalk celery, diced
2 mangoes, peeled, pitted and diced
1/2-1 teaspoon curry powder
1/4 teaspoon ground cumin
1 cup coarsley chopped cashews
2 tablespoons chopped cilantro
2/3 cup low-fat mayonnaise
1/3-1/2 cup reduced-fat sour cream
salt and pepper, to taste

Steps:

  • Place all ingredients in a mixing bowl and gently toss to mix/coat well.
  • Chill about 1 hour before serving.
  • Garnish with extra cilantro, if desired.

This lightly-spiced, fruity salad is a modern take on Coronation chicken - a low calorie-lunch for two

6 chicken mini fillets
1 tsp olive oil
2 tsp curry powder
4 tbsp Greek yogurt
2 tbsp mango chutney
zest ½ lime and 2 tsp juice
1 Little Gem lettuce , leaves separated
1 ripe mango , peeled and sliced
½ red onion , finely sliced
2 tsp toasted sesame seed

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the chicken in the oil and 1 tsp of the curry powder, season and mix well to coat. Put the chicken on a foil-lined baking tray and bake for 20 mins until cooked through. Leave to cool a little, then slice.
  • Meanwhile, make the dressing. In a bowl, combine the remaining curry powder with the yogurt, chutney and lime zest and juice (add 1 tbsp water if the dressing is a little thick).
  • To serve, arrange the lettuce leaves on 2 plates. Top with the mango and cooked chicken, then drizzle with the dressing. Scatter with the red onion and sesame seeds before serving.

3 whole (6 split) chicken breasts, bone-in, skin-on
Olive oil
Kosher salt and freshly ground black pepper
1 1/2 cups good mayonnaise (recommended: Hellman's)
1/3 cup dry white wine
1/4 cup chutney (recommended: Major Grey's)
3 tablespoons curry powder
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)
1/4 cup raisins
1 cup whole roasted, salted cashews

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.
  • For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.
  • Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews and serve at room temperature.

This is from The Lunch Box Restaurant courtesy of The Fort Worth Star Telegram. I did make this salad, and I all I can say is that it tastes as good as it looks. It probably is too "light" for the men, but it would make a lovely dish for a salad luncheon or potluck.

5 -6 cups fresh broccoli florets
4 -5 lbs chicken breasts, poached and chilled (including bones)
1 large red bell pepper, seeded, deveined and chopped
1 (8 1/2 ounce) jar mango chutney
1 1/2 tablespoons curry powder
1 1/2 cups mayonnaise

Steps:

  • Chop chutney in a food processor 15 to 20 seconds using on/off switch.
  • Combine mayonnaise and curry powder in a bowl and blend well.
  • Stir in chutney.
  • Cover and chill.
  • Cook broccoli in salted water until crisp tender (about 1 minute).
  • Drain, and place in cold water to stop cooking process.
  • Drain again and pat dry.
  • Skin and debone chicken.
  • Cut into bite-size chunks.
  • Combine chicken, broccoli and red bell pepper and toss gently.
  • Blend in dressing and mix gently again.
  • Chill well and serve.

Creamy chicken & mango curry image

Use korma paste, turmeric and black onion seeds as the base for this mild, Indian spice-pot, made creamy with coconut milk

12 boneless, skinless chicken thighs
2 tsp turmeric
2 tbsp sunflower oil
2 onions , 1 chopped, 1 quartered
2 large ripe mangoes
6 tbsp good-quality korma paste
100g ginger , roughly chopped
2 tsp ground cumin
1 tbsp black onion seed (kalonji or nigella)
400g can light coconut milk
600ml chicken stock
few coriander sprigs, basmati rice, naan bread, mango chutney, lime pickle and our sides (see 'goes well with'), to serve (optional)

Steps:

  • Toss the chicken thighs with 1 tsp of the turmeric and some salt. Heat the oil in a big frying pan or wide flameproof casserole, and brown the thighs well on both sides. Remove from the pan. Add the chopped onion and cook for 5 mins until softened.
  • Roughly cut all the flesh from one of the mangoes, scraping as much as you can from the stone. Put into a food processor with the korma paste, ginger and quartered onion. Whizz to a paste, then tip into the pan and gently cook until softened.
  • Stir in the remaining turmeric, cumin and onion seeds and turn up the heat for a couple of mins. Return the chicken to the pan. Stir in the coconut milk and stock. Bring to a gentle simmer, then cover and cook for 20 mins.
  • Uncover the pan and cook for another 25-30 mins until the chicken is really tender, adding a few drops of water to keep it saucy.
  • Slice the remaining mango and stir in to heat through while you shred the chicken with two forks. Season and serve scattered with the coriander, with basmati rice, naan bread, chutney, lime pickle and our sides, if you like.

  • Cube the grilled chicken into 1/2″ pieces, you’ll have about 2 1/2 cups. Add the cubed chicken to a medium sized mixing bowl along with the mango, cilantro, green onion, carrots, and celery. Lightly toss to combine.
  • For the dressing mix together all the ingredients called for. Taste to see if you need to add more salt, then mix the dressing together with the chicken mixture until combined. Taste again to see if you need to adjust the salt, then serve the chicken salad with your choice of wrap.
  • I prefer to let the chicken salad sit for at least 2 hours in the fridge to let the flavors meld, and the dressing really sink into the chicken. I either make it the night before and take it for lunch for the next 2-3 days. Or I make it in the morning to serve at a brunch or light dinner.
  • To make homemade mayonnaise, crack the room temperature egg into a bowl, making sure there’s no bits of shell. Then add the egg to a blender along with the white wine vinegar, Dijon mustard, and sea salt. Then secure the lid and blend starting on low speed.
