1 large under ripe mango
2 ripe mangoes
1 head savoy cabbage
1 red pepper
1 yellow pepper
1 orange pepper
1/2 red onion
1/2 cup fresh lime juice
1/2 cup rice wine vinegar
1/3 cup canola oil
1/2 teaspoon red pepper flakes
1 teaspoon salt
about 8 grinds white pepper

Steps:

  • Combine all the vegetables in a large bowl. In another bowl, combine the dressing ingredients and whisk together. Pour over the vegetables and toss very well. I like to use a container with a sealing lid and toss, then close and shake. I find it helps to combine the dressing so that you don't have a pool of liquid at the bottom, but all the veggies have dressing.
  • My red onion was very strong, so I only used half. If you have a milder onion you might want to add more. This was so fresh and crisp and really good. Next time I might break down and buy a mandoline to get the veggies really sliced thin.

1/4 cup seasoned rice vinegar

  • Toss all ingredients gently and let marinate for about 1 hour.

1 head red cabbage, halved and very finely shredded (about 8 cups)
1 teaspoon salt
1 large or 2 small ripe mangoes, peeled, fruit sliced from the pit, and diced
1 tablespoon chopped fresh cilantro leaves
1/4 cup lime juice (about 2 limes)
1 tablespoon cider vinegar
1 tablespoon granulated sugar

Steps:

  • Place the cabbage in a large bowl and toss it with the salt, using your hands to press down firmly on the cabbage to encourage the cabbage to release some of its moisture and better absorb the salt. Transfer the cabbage to a colander and let it sit for 20 minutes to drain.
  • Using paper towels or a kitchen towel, squeeze as much liquid as possible from the cabbage and place it in a clean, large bowl. Toss with the mangoes, cilantro, lime juice, vinegar and sugar. Let the coleslaw sit at room temperature for 15 minutes before serving.

  • In a serving bowl, combine first 8 ingredients. Process dressing ingredients in a blender until smooth. Toss dressing with slaw at least 30 minutes before serving. Refrigerate.
