- In a large bowl, mix together the dry pudding mixes and buttermilk. Fold in the Cool-Whip. Stir in the pineapple and mandarin oranges until incorporated. Break cookies into bite-size pieces and gently fold into salad mixture. Serve immediately. If you want to make this ahead of time, just wait to add the cookie pieces until right before you serve it because the cookies tend to go soggy, unless you like them that way!

This recipe comes from a good friend. She calls it a salad. I call it a dessert. Regardless, it's fantastic. Feel free to substitute vanilla ice cream for the sherbet. The servings are a total guess (haven't made this for a long time).

MANDARIN ORANGE MARMALADE COOKIES
A tasty little cookie that comes from the about.com site. I have made this once (today actually lol) and used semi sweet chocolate and added a teaspoon of orange extract....very very good. Prep time includes chilling time for dough.

Steps:
- Preheat oven to 300 degrees F & Line cookie sheets with parchment paper or silpats.
- Whisk together flour and baking powder in a medium bowl; set aside.
- Place butter and sugar in a large mixing bowl and blend with an electric mixer on medium speed until the mixture appears grainy but well-mixed.
- Add egg and orange marmalade, beating until smooth; reduce mixer speed to low and add flour mixture and mandarin oranges.
- Mix only until combined; do not overmix.
- Fold in white chocolate chips; chill mixture for 30 to 60 minutes to firm up.
- Drop tablespoons of dough onto prepared cookie sheets, placing cookies 1-1/2 inches apart.
- Bake 15 to 18 minutes, until bottoms just begin to brown.
- Let rest on cookie sheets for 5 minutes before using a spatula to move them to racks.
- Cool to room temperature and dust with powdered sugar, if desired.

Steps:
- Combine 1/4 cup white sugar, salt, pepper, vinegar and oil.
- Heat until sugar dissolves.
- Cool.
- Meanwhile cook almonds and 6 tsp.
- sugar over med-low heat in saucepan stirring constantly until sugar melts and almonds coated.
- Cool and break apart.
- Break apart lettuces into bite size pieces.
- Add thinly sliced celery, cut on diagonal and thinly sliced green onions.
- 5 minutes before serving toss with drained mandarin oranges, sugared almonds and cooled dressing.
- If desired can add a few pieces of chunked pineapple and top with a few crunchy chow mein noodles.

- Mix together crackers, butter and sugar.
- Press in a 13x9-inch baking dish. (Save a little bit of the crumbs for top).
- Refrigerate this while making rest of recipe so it becomes firm.
- Fold the rest of ingredients together.
- Spread over crumbs in dish.
- Top with remaining crumbs.
- Refrigerate until ready to serve.
