This was a favorite cake growing up. The middle gets sunken, all good from the topping sinking into it. You may wnat to double the topping so you can pour extra over the edge pieces of the cake, they don't seem to get as much of the topping sinking in as it all flows to the middle of the cake.

2 cups sugar
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
2 cans drained mandarin oranges
3/4 cup brown sugar
3 tablespoons milk
2 tablespoons butter

Steps:

  • Preheat oven to 350F degrees.
  • Beat the eggs, add oranges and dry ingredients, sugar, flour, baking soda and salt, beat on low speed until combined Pour into a greased and floured pan.
  • Bake for 30-35 minutes.
  • In a small saucepan bring the final 3 ingredients to a boil and pour over the hot cake as soon as it comes out of the oven Serve with whipped cream.

1 (18.25 ounce) package yellow cake mix
4 eggs
1 (11 ounce) can mandarin oranges
⅓ cup vegetable oil
⅓ cup water
⅓ cup white sugar
¼ cup orange liqueur, such as Grand Marnier®
2 (15 ounce) cans mandarin oranges, drained
1 recipe Frosting or whipped cream (see Editor's Notes)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line two 8-inch pans with parchment paper.
  • In a large bowl, combine yellow cake mix, eggs, mandarin oranges with juice, and oil. Beat well.
  • Divide batter into prepared cake pans. Bake in preheated oven for 30 minutes or until cake springs back when lightly tapped. Allow to cool.
  • While the cakes are cooling, make the simple syrup. Combine 1/3 cup water and 1/2 cup sugar in a glass measuring cup. Microwave for 1 minute. Stir to dissolve sugar. Pour about 1/4 cup orange liqueur into sugar-water mixture.
  • Set one cake layer on a serving plate. Brush generously with orange syrup. Spread cake with frosting and layer drained mandarin oranges on top of filling. Carefully set remaining cake layer on base. Brush top layer with orange syrup. Frost top and sides of cake; decorate top with remaining orange slices, if desired.

1 pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding
1-1/3 cups BREAKSTONE'S or KNUDSEN Sour Cream, divided
3/4 cup water
1/4 cup oil
3 eggs
2 Tbsp. orange zest
1/4 cup powdered sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 can (11 oz.) mandarin oranges, drained

Steps:

  • Heat oven to 350°F.
  • Beat cake mix, dry pudding mix, 1 cup sour cream, water, oil, eggs and orange zest with mixer until blended. Pour into 2 greased and floured 9-inch round pans.
  • Bake 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 min. Invert onto wire racks; gently remove pans. Cool cakes completely.
  • Whisk remaining sour cream and sugar in large bowl until blended. Stir in COOL WHIP.
  • Stack cake layers on plate, filling with half each of the COOL WHIP mixture and oranges. Frost top with remaining COOL WHIP mixture. Garnish with remaining oranges. Keep refrigerated.

1 can (11 ounces) mandarin oranges, undrained
1 package yellow cake mix (regular size)
1/2 cup vegetable oil
4 large eggs
1 teaspoon orange extract
TOPPING:
2 cups cold whole milk
1 package (3.4 ounces) instant vanilla pudding mix
1 can (8 ounces) unsweetened crushed pineapple, drained
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • Drain oranges, reserving juice. Set oranges aside. In a large bowl, beat the cake mix, oil, eggs, orange extract and reserved juice on low speed for 30 seconds. Beat on medium for 2 minutes. Transfer to a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack., For topping, in a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. 15 ounces mandarin oranges
1 tablespoon orange zest
16 ounces Cool Whip

Steps:

  • Add the juice from the oranges and the orange zest to the cake mix.
  • Stir to combine.
  • Bake in a bundt pan at 350 degrees for about 30 minutes.
  • Cool completly. Frost with Cool Whip and decorate with the mandarin oranges.
  • I used 3 Tbs. orange zest, but that is just a personal preference. You can also add half the caan of oranges into the batter before baking, but for some reason it always makes my cake stick to the pan. So just experiment. It is just as good with the oranges on top of the cake instead of in it.
