1 (15 ounce) can mandarin oranges, drained
1 bunch green onion, diced
¾ cup slivered almonds

Steps:

  • In a medium skillet over medium-high heat, cook bacon until evenly brown. Drain, cool, and crumble.
  • To make the dressing, thoroughly blend the vinegar, honey, dry mustard, celery salt, paprika, and olive oil.
  • Place lettuce, oranges, green onion, bacon, and almonds in a serving bowl. Toss with dressing and serve.

1 head romaine lettuce - rinsed, dried and chopped
2 (11 ounce) cans mandarin oranges, drained
6 green onions, thinly sliced
2 tablespoons white sugar
½ cup sliced almonds
¼ cup red wine vinegar
½ cup olive oil
1 tablespoon white sugar
⅛ teaspoon crushed red pepper flakes
ground black pepper to taste

Steps:

  • In a large bowl, combine the romaine lettuce, oranges and green onions.
  • Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
  • Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.
  • Before serving, toss lettuce with salad dressing until coated. Transfer to a decorative serving bowl, and sprinkle with sugared almonds.

1/2 cup vegetable oil
1/4 cup cider vinegar
1/4 cup sugar
2 tablespoons finely chopped fresh parsley
1 teaspoon salt
1/4 teaspoon hot pepper sauce
1 cup sliced almonds
1/3 cup sugar
1 head iceberg lettuce
1 head romaine lettuce
2 cups chopped celery
2 (11 ounce) cans mandarin oranges, drained
1 cup thinly sliced red onion

Steps:

  • Shake first 6 dressing ingredients in a jar and refrigerate.
  • Stir almonds and sugar in a small pan over medium heat until sugar melts and starts to caramelize and almonds are very lightly toasted.
  • Scrape into metal bowl and cool to room temperature.
  • Break up and store covered at room temperature.
  • Just before serving, put chopped lettuces in a large bowl.
  • Add celery, oranges, onions and almonds.
  • Shake dressing well and pour over salad.
  • Toss to mix and coat.

5 pieces bacon (cooked, drained and crumbled (save drippings))
1 15 ounce can mandarin oranges in light syrup, drained, reserve syrup (You could use fresh oranges in the salad and orange juice in the dressing
2 to 3 cups fresh baby spinach
1/3 cup purple onion (cut up or chopped (could use green onion or just regular onion))
2 teaspoons toasted sesame seeds (could use toasted almonds or just about any kind of nuts you like)
3 to 4 tablespoons bacon drippings
1/4 teaspoon garlic powder
2 tablespoons red wine vinegar
1/3 cup light mandarin orange syrup
2 tablespoons water
1/4 teaspoon black pepper
1 tablespoon lemon juice
2 teaspoons sugar (Optional)

Steps:

  • Combine salad ingredients and toss to mix well. Combine dressing ingredients and heat until warm. I put my dressing in a small pitcher like a cream pitcher and let each person add the amount they want at the table. Salad will keep in the fridge for a couple days without dressing.

It's also good as a main course with a chicken breast on top. Very adaptable - you can add other fruit, too. Strawberries and blueberries.

1/2 head iceberg lettuce
1/2 head romaine lettuce

1 teaspoon cornstarch
1/4 cup white wine or red wine vinegar
1/4 teaspoon salt
1/3 cup granulated sugar
1 teaspoon dry mustard
1/4 cup water
1/2 cup plain yogurt or mayonnaise
4-5 cups broccoli florets (chopped)
8 slices bacon (cooked, drained and chopped)
1/2 cup slivered almonds (toasted)
1/4 - 1/2 cup finely diced red onion
1/2 cup craisins
1 (10-ounce) can mandarin oranges (drained well)

Steps:

  • For the dressing, combine the eggs, cornstarch, vinegar, salt, sugar, mustard, and water together in a medium saucepan. Whisk well. Bring the mixture to a boil over medium heat, whisking constantly, until it bubbles and thickens - it should be the consistency of pudding (take care not to heat too high or stop whisking or there might be small bits of cooked egg in the mixture).
  • Remove from heat and let cool 10 minutes. Stir in the yogurt or mayonnaise and let cool completely.
  • Toss all the salad ingredients together in a large bowl. Stir in the dressing and toss lightly until all the ingredients are covered with dressing.
  • Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours before serving.
