SPINACH-CHEESE STUFFED MEATLOAF

1 1/2 lbs extra lean ground beef (only use very lean)
2 eggs
1 cup Italian seasoned breadcrumbs
salt & pepper
1/3 cup ketchup or 1/3 cup tomato sauce
3 tablespoons onions, minced
1 garlic clove, minced
1 1/2 teaspoons Worcestershire sauce
1 teaspoon dried oregano
15 -20 baby spinach leaves
3/4 cup mozzarella cheese, shredded
1/2 cup ketchup
1/2 cup brown sugar
1 tablespoon italian seasoning

Steps:

  • Mix together beef, egg, breadcrumbs salt and pepper, onion, garlic, ketchup/tomato sauce, Worcestershire sauce and oregano. Mix well with clean hands. On a piece of plastic wrap or wax paper, spread out meat mixture in a rectangle - 12 x 8".
  • Spread spinach on top leaving 1/2" clear all around meat edges.
  • Sprinkle with cheese. Using paper/plastic to help roll up loaf starting from 8" side. Press gently as you go to make sure you have a firmly rolled loaf.
  • Press seam to seal.
  • Tightly wrap meatloaf in plastic wrap and refrigerate for at least an hour (or overnight).
  • Mix ketchup, 1 tablespoons Italian seasoning, and brown sugar together.
  • Place meatloaf, seam side down, in a baking pan (make sure that ends are sealed well).
  • Cover top with ketchup mixture and bake in a 350 degrees F. oven for 1 hour.
  • Remove from oven and let set for 15 minutes before slicing.

Fantastic hot or cold. It doesn't last long. Next time I will double the recipe and freeze one loaf. I topped the meatloaf with 1/4 cup pasta sauce before cooking and added another 1/4 cup during the last 15 minutes. I used leftover ham but Coppacola would be even better.

4 ounces mushrooms, thinly sliced
1 tablespoon olive oil
1 lb lean ground beef
1/2 lb ground pork
4 ounces frozen chopped spinach, defrosted and squeezed dry
2 cloves garlic, minced
2 ounces provolone cheese, diced (about 1/4 cup)
1/2 cup cooked ham, diced
2 tablespoons grated parmesan cheese
1 cup fresh breadcrumb
1 tablespoon dried oregano
1/2 tablespoon dried basil
1 egg, beaten
1/4 cup red wine
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • Brown mushrooms in oil.
  • Combine with remaining ingredients.
  • Place in a 9x5 inch loaf pan and bake 1 hour.
  • Let rest 10 minutes before serving.

2 celery stalks, cut into large dice
1 medium carrot, cut into large dice
1/2 medium yellow onion, cut into large dice
2 tablespoons canola oil
1 cup panko
1/3 cup buttermilk
1/3 cup ketchup
1 tablespoon Worcestershire sauce
2 eggs
2 tablespoons chopped fresh parsley
1 tablespoon kosher salt
1 tablespoon freshly cracked black pepper
1 teaspoon cayenne pepper
2 pounds ground beef chuck
1 pound fresh ground pork
Herb Aioli, recipe follows
Spicy Hollandaise, recipe follows
1 1/2 cups Southern-style mayonnaise
1 cup olive oil
3 tablespoons chopped fresh sage
1 tablespoon chopped green onions
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
1/2 tablespoon kosher salt
2 teaspoons freshly cracked black pepper
3 egg yolks
1 1/2 pounds (6 sticks) unsalted butter
2 cups pasteurized egg yolks
1/2 cup Louisiana-style hot sauce, such as Texas Pete
1/4 cup white wine Pinch kosher salt
Pinch pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Pulse the celery, carrots and onions in a food processor until finely chopped. Add the oil to a saute pan over medium-low heat, then add the chopped veggies and cook, covered, until translucent. Transfer the veggies to a plate and cool in the refrigerator.
  • Meanwhile, mix together the panko, buttermilk, ketchup, Worcestershire and eggs in a bowl. Add the parsley, salt, black pepper and cayenne and mix well. Once the veggies are cool, add them to the mixture and incorporate. Next add the ground beef and pork and mix thoroughly with your hands.
  • Line two loaf pans with parchment paper and divide the meatloaf mixture between them. Cover with foil and bake until the meatloaves reach an internal temperature of 165 degrees F, about 1 hour. Slice and serve immediately, or cool, slice and reheat. Serve with Herb Aioli and Spicy Hollandaise.
  • Add the mayonnaise, olive oil, sage, green onions, rosemary, thyme, salt, pepper and egg yolks to a blender or food processor and blend until smooth and well incorporated.
  • Melt the butter in small saucepan over medium heat. Blend the yolks, hot sauce, wine, salt and pepper in a blender, then drizzle in the melted butter while blending, until the sauce is smooth.

1 pound ground beef
1 (12 ounce) package bulk pork breakfast sausage
6 fresh mushrooms, chopped
1 red onion, chopped
2 tablespoons barbecue sauce
2 teaspoons Worcestershire sauce
1 egg
½ cup instant oatmeal
1 teaspoon garlic powder
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese
4 strips bacon

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Mix the ground beef, sausage, mushrooms, onion, barbecue sauce, Worcestershire sauce, egg, oatmeal, garlic powder, pepper, and Cheddar cheese together in a large bowl until evenly mixed. Form into a loaf and place in a 9x13-inch baking dish. Lie the bacon strips across the top of the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
