Steps:
- Boil the potatoes for about 20 minutes, or until tender, and allow them to cool. In a large bowl, combine the remaining ingredients. Mix and chill before serving.
MAMAW'S SCALLOPED POTATOES
This is my mamaw's recipe. It's one of the foods I really remember her making. This is my favorite.

Steps:
- Peel and slice potatoes and boil in water till tender, put into a casserole dish.
- Melt butter and stir in flour until combined
- Add milk and stir till smooth and thick
- Add cheese and stir till melted.
- Pour over potatoes, cover with foil and cook for 40 minutes at 350°F.

Steps:
- Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 18-21 minutes. Drain; cool slightly. Peel and thinly slice. Whisk oil, vinegar, salt and pepper. Add potatoes; toss to coat. Add remaining ingredients; toss to combine. Serve warm.

MAMAW'S POTATO SALAD
Steps:
- Peel potatoes and put in large pot to boil until soft. Hard boil eggs, rinse in cold water and peel.
- When potatoes are cooled enough to handle, cut into large bite size chunks, put in large bowl. Chop up eggs and put in bowl with potatoes. Add chopped olives and sweet pickle relish. Add mustard, mayo, and salt to taste.
- Mix everything until well blended. If mixture seems dry add more mayo, consistency should be moist.

- In a large kettle, cook potatoes in boiling salted water until tender. Drain and cool. Peel potatoes; cut into chunks. Separate egg yolks from whites. Set yolks aside. Chop whites and add to potatoes with onion., In a small bowl, mash yolks. Stir in mayonnaise, milk, vinegar, mustard, sugar, salt and pepper. Pour over potatoes; toss well. Adjust seasonings if necessary. Spoon into a serving bowl. Garnish with egg slices and paprika. Chill until serving.

Steps:
- Place potatoes and lemon juice in a large saucepan, and add enough water to cover. Bring to a boil over medium-high heat, and cook until tender, about 15 minutes.
- Drain water from potatoes, and use a potato masher to mash. Stir in egg white and butter, and gradually mix in the half-and-half using the masher. Use more or less cream to reach your desired consistency. Season with salt and pepper to taste.
