My family absolutely loves when I make this! It looks complicated, but it's really not. I got this out of a Paula Deen magazine. Just a few hints...I use flexible cookware when I bake and the first time I made this I had to use 3 regular sized loaf pans. The next time I used two flexible bunt pans it turned out great! I couldn't find one on here that used brown sugar in place of white. So I thought I would share this one. I don't know how many servings this makes, all I know is that it will feed my brood and then some. **Note: I have substituted Splenda Brown Sugar and light sour cream as well; it still turns out fantastic! Please let me know what you think!

6 medium very ripe bananas
2 tablespoons vanilla extract
2 cups firmly packed brown sugar
1 1/2 cups vegetable oil
1 cup sour cream
4 large eggs
3 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 cup ground pecans
2 cups miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350. Grease two (6x9 inch) loaf pans.
  • In a small bowl, mash bananas together with vanilla.
  • In a large bowl combine brown sugar, oil, sour cream, and eggs, stirring until combined.
  • In a medium bowl, combine flour, baking soda, baking powder, and salt. Gradually add to sugar mixture, stirring until just combined. Stir in banana mixture, ground pecans, and mini chocolate morsels.
  • Pour into pans and bake for 1 hour and 15 minutes, or until wooden pick inserted in center comes out clean. Let cool in pans for 15 minutes; remove from pans, and cool completely on wire racks.

3 cups whole milk
2 cups half-and-half cream
6 large egg yolks
1-1/2 cups sugar
1/2 cup cornstarch
1 teaspoon salt
3 tablespoons butter, softened
2 teaspoons vanilla extract
1 package (12 ounces) vanilla wafers
4 medium bananas, sliced
1 carton (12 ounces) frozen whipped topping, thawed
Caramel sundae syrup, optional

Steps:

  • In a large heavy saucepan, bring milk and cream to a simmer. In a bowl, whisk together egg yolks, sugar, cornstarch and salt. Whisk a small amount of hot milk mixture into egg yolk mixture; return all to pan, whisking constantly. , Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Stir in butter and vanilla. Cool 15 minutes, stirring occasionally., Line bottom of a 3-qt. trifle or other glass bowl with half of the vanilla wafers; cover with half the banana slices followed by half the pudding. Repeat layers. Press plastic wrap onto surface of pudding; refrigerate until cold. Just before serving, remove plastic and top with whipped topping. If desired, serve with caramel syrup.

Mama's Banana Bread is wonderful for breakfast (try it toasted) with sweet cream butter, midday with coffee, or a late night snack. It's so easy to make, don't wait for the holidays....have it for the family all year long!!

8 ounces butter (2 sticks)
2 cups sugar
2 large eggs
2 cups mashed bananas (about 6 medium bananas)
1/4 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, sift together flour, salt, and baking soda. Set aside.
  • Melt butter. In a large mixing bowl, with hand mixer, beat butter and sugar together until well blended. Add eggs, ONE AT A TIME, mixing well after each egg. Add mashed bananas and vanilla extract. Mix together.
  • Fold in the flour mixture and walnuts. Blend until all the flour is moist.
  • Grease two 9x5x3-inch loaf pans. Divide batter equally between the 2 pans.
  • Bake 1 hour or until center of loaf is firm and toothpick inserted comes out clean.

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

1/2 cup all-purpose flour
3/4 cup oil
3/4 teaspoon baking soda
3 tablespoons buttermilk
1/4 teaspoon salt
3 large bananas, mashed (about 1 cup)
1 cup white sugar
1/2 cup chopped pecans
2 eggs, lightly beaten
1 teaspoon cinnamon
1 teaspoon baking powder

Steps:

  • Preheat oven to 325°F.
  • Grease and flour an 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan; set aside.
  • Sift together flour, soda, baking powder, cinnamon and salt.
  • Add sugar, oil and buttermilk; stir to blend.
  • Fold in bananas and nuts.
  • Pour into prepared dish.
  • Bake 1 hour 10 minutes.
  • Makes one 2-lb loaf.
  • *I also add a powdered sugar glaze over the top to make a prettier presentation.
  • Just a tad bit of water, maybe 2 TBSP, mixed with about 3/4 cup of powdered sugar.

This recipe was one of my favorites passed down from my mother. Whether on a rainy day with a hot cup of warm cocoa, or waking up to eat for breakfast, this bread is an instant classic!

1 3/4 c flour
2/3 c sugar
1/2 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1/2 c butter, softened
2 eggs, beaten
1 c mashed bananas (2 medium ripe bananas)
1/2 c pecans or walnuts, chopped (optional)

Steps:

  • 1. Preheat oven to 350*. Grease and flour 9x5 loaf pan. In large bowl, use a whisk and mix all dry ingredients.
  • 2. With a pastry blender, cut in shortening until mixture resembles course crumbs. With a fork, stir in mashed bananas & eggs until blended. (Also add nuts here if desired).
  • 3. Spread batter evenly in pan. Bake 55 minutes to 1 hour until toothpick inserted in center comes out clean.

BRILLIANT BANANA LOAF

A cross between banana bread and a drizzle cake, this easy banana loaf recipe is a quick bake that can be frozen. It's great for using up overripe bananas, too.

140g butter, softened, plus extra for the tin
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed
50g icing sugar
handful dried banana chips, for decoration

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • Butter a 2lb loaf tin and line the base and sides with baking parchment.
  • Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
  • Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
  • Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
  • Cool in the tin for 10 mins, then remove to a wire rack.
  • Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
  • Drizzle the icing across the top of the cake and decorate with a handful of banana chips.

1 cup sugar
1/8-1/4 cup cornstarch
2 cups whole milk
5 large eggs, separated
1/4 cup butter
1 teaspoon vanilla flavoring
11 ounces vanilla wafers
6 bananas, ripe
1/2 cup sugar (for meringue)
1/2 teaspoon cream of tartar

Steps:

  • Preheat oven to 400 degrees. Combine sugar & cornstarch (use 1/8 cup cornstarch for thinner pudding or 1/4 cup for thicker pudding) with a whisk or by sifting together. Whisk in milk. Add butter & microwave for 2 minutes. Whisk.
  • Beat egg yolks with whisk. Add 1/4 cup of hot milk mixture to egg yolks to temper, then add egg yolk mixture to milk mixture. Whisk well, and microwave for 2 minutes. Whisk, & repeat until mixture is thickened. Whisk in vanilla flavoring.
  • Layer 1/3 to 1/2 of the vanilla wafers in the bottom of a 3 quart bowl. Slice 3 bananas on top of the wafers. Repeat the layers.
  • Pour the thickened pudding mixture over the last layer of bananas.
  • For the meringue, beat the egg whites & cream of tartar on high until soft peaks form. Slowly beat in the sugar. Beat on high until stiff peaks form (mixture stays on beater when lifted out of bowl).
  • Spread the meringue on top of the pudding mixture. Bake for about 10 minutes, or until brown. Remove from oven & let cool. Refrigerate.
