MAMA'S PASTA FAGIOLI
Mama has made this recipe for years using no units of measure. Since she is 91 I sat her down and we came up with this recipe that is very close to her no measure version. It's the best!!!!!

Steps:
- Cook bacon until brown and crisp.
- Remove bacon from pan.
- Saute oil, onion and garlic until browned.
- Add chicken stock and tomatoes and bring to a boil.
- Lower heat to simmer.
- While simmering, add beans and spices.
- Simmer another 3-4 minutes.
- Add cooked pasta, cheese and bacon.
- Serve with more cheese prinkled on top.
- Wonderful served with Beer Bread#73440.
- Started both the pasta fagioli and bread at 4 o'clock and had dinner by 6.

Steps:
- Heat the oil in a 12-inch skillet over medium heat. Cook the celery, carrots, onion and garlic until they're tender.
- Stir the broth, Italian seasoning and tomatoes in the skillet. Heat to a boil. Reduce the heat to low and cook for 15 minutes or until the vegetables are tender-crisp.
- Add the pasta and beans and cook for 5 minutes.
- Place half of the broth mixture into a blender or food processor. Cover and blend until smooth. Pour the pureed mixture into the skillet. Cook over medium heat until the mixture is hot.

- In a saucepan, saute onion and garlic in butter and oil. Add broth; bring to a boil. Add pasta; reduce heat. Simmer, uncovered, for 10 minutes or until pasta is tender. Add the beans, tomatoes, spinach and salt. Cook 5 minutes longer or until heated through. Serve with Parmesan cheese.

My mom's pasta e fagioli is one of my all-time favorite comfort foods. It was part of the regular dinner rotation at home because it was a great way to use up any open boxes of pasta. We would have rigatoni, ziti, penne, shells, corkscrews-anything that would pick up the sauce and the beans. What made it extra special and mysterious was that my mother would sort the beans the night before-how impressive to have something for dinner that required two days' worth of work! The dish has evolved over the years as the ingredients available in America have changed. Pancetta would be traditional, but I always remember it with a streak of "lean," as salt pork was called in central Virginia, where I grew up. -Vince Camillo, Food Stylist

- The night before serving, sort through the beans and discard any small, cracked or shriveled ones. Place the beans in a pot or jar large enough to cover them with water by at least 3 inches. Leave the beans in a cool place or in the refrigerator overnight to rehydrate.
- The next day, strain the beans through a colander (discard the water). Add the beans to a medium saucepan with enough water to cover by at least 2 inches, about from the tip of your finger to your knuckle. Turn the heat to medium-high, bring the liquid to a boil, then return to a simmer and cook, stirring occasionally and skimming off any foam that rises to the top, until the beans are tender, 50 minutes to 1 hour. Add additional water when necessary to keep the beans submerged. When the beans are done, turn off the heat, add 1 1/2 teaspoons salt and stir to incorporate; set aside.
- Put the salt pork in a medium pot over medium heat and cook, stirring occasionally, until crispy, about 12 minutes. Remove the salt pork and discard. Pour off all but 2 tablespoons of the fat. Add the tomato paste to the pot, and cook until it darkens, about 2 minutes. Add 2 cups of the cooking water from the beans, and simmer for 10 minutes. Strain the beans, add them to the pot and cook just long enough to heat them through, about 5 minutes.
- Meanwhile, bring a large pot of generously salted water to a rolling boil, and cook the pasta according to the package directions for al dente. Add as many pasta shapes as you wish, as long as their cooking times are within 2 minutes of one another (according to the package directions). Drain, reserving 2 cups of the cooking water. Add the pasta back to the pot, add the beans with their liquid and the reserved pasta water and stir in 2 to 3 teaspoons of pepper. Ladle the soup into serving bowls, and grate the Pecorino Romano over the top if using.
PASTA E FAGIOLI
Steps:
- In a large heavy pot, heat olive oil over medium high heat. Stir in onion and cook for 2 minutes. Stir in garlic, celery, and carrots and cook for 3 minutes. Add dried basil, oregano, and red pepper flakes and toss to coat. Stir in tomatoes and stock and bring to a boil. Reduce heat and simmer for 30 minutes. If necessary add an additional cup of stock or water and stir in beans and tiny pasta. Simmer for 6-8 minutes or until pasta is tender. Stir in parsley and serve hot with grated Parmesan and ground black pepper.

- Drain the beans and bring to the boil in a pan of salted water. Cook for 10 mins, drain, rinse and put in a slow cooker with the onions, carrots and celery.
- Stir in the olive oil, garlic, stock, tomatoes, half a can of water and the miso. Tie the herbs together with kitchen string and add these as well. Season. Cover and cook on low for 6-8 hrs, until the beans are cooked through and all of the veg is really tender.
- Remove and discard the herbs and stir in the pasta. Cover and cook on high for another 30 mins. Add the cavolo nero stalks and leaves and cook for a final 30-40 mins, or until the pasta is cooked through and the greens are tender. Serve scattered with the cheese and drizzled with a little more olive oil, if you like.

- In a heavy saucepan cook the bacon over moderate heat, stirring, until it is crisp, pour off all but 1 tablespoon of the fat, and in the remaining fat cook the onion and the garlic, stirring, until the onion is softened. Add the celery, the carrot, and the broth and simmer the mixture, covered, for 5 minutes. In a bowl mash 1/3 cup of the beans, stir them into the bacon mixture with the remaining whole beans and the tomatoes, and simmer the mixture, covered, stirring occasionally, for 5 minutes. Stir in the tubetti, simmer the soup, covered, for 10 minutes, or until the pasta is al dente, and if desired thin the soup with water. Let the soup stand off the heat, covered, for 5 minutes, stir in the parsley, and serve the soup in bowls sprinkled with the Parmesan.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Heat olive oil in a large saucepan over medium-high heat; saute carrot, celery, and onion until softened, 5 to 10 minutes. Add garlic and saute until fragrant, 1 to 2 minutes. - Cook pasta in a large pot of salted boiling water according to package instructions. Reserve 1/2 cup pasta water, then drain. Meanwhile, finely chop onion, and tear pale inner leaves of escarole to yield 4 cups (reserving the rest for another use).
- Heat oil in a large straight-sided skillet over medium-high. Add onion and garlic, season with salt and pepper, and cook, stirring, until onion is translucent, about 3 minutes. Add tomato paste; cook 1 minute. Add beans and their liquid, broth, and 1/4 cup pasta water (or a bit more, if you prefer your pasta creamier); simmer until slightly reduced, 3 to 4 minutes.
- Stir in pasta, cheese, and 3 cups escarole; season to taste. Drizzle remaining 1 cup escarole with oil; season to taste. Serve pasta topped with dressed escarole, drizzled with oil and sprinkled with more cheese.
LOW-FAT PASTA E FAGIOLI

- Place beans in a small stockpot, cover with cold water, and let soak overnight. Drain beans; set aside. Dry stockpot.
- Melt butter in stockpot over medium-low heat. Add celery, onion, and 1 1/4 teaspoons garlic; saute until translucent. Add beans, 1 tablespoon rosemary, stock, potato, tomatoes, pepper, and 3 1/2 cups water. Raise heat to high; bring soup to a boil. Reduce heat to medium low; simmer until beans are tender, about 1 1/4 hours. Fifteen minutes before soup is done, stir in salt.
- Meanwhile, bring a stock pot of cold, salted water to a boil over a high heat. Add pasta and cook until slightly underdone, 5 to 6 minutes; set aside. Pass soup through a food mill, holding back one-third of whole beans. Return soup and beans to the stockpot along with the pasta. Keep warm over low heat.
- Chop remaining 1/4 teaspoon garlic and tablespoon rosemary with basil, parsley, and sage until finely minced. Stir into soup, and divide among six soup bowls. Sprinkle each bowl with 1 tablespoon Parmesan; serve immediately.
