My Mum's recipe from Lancashire, UK. I have taken over the yearly family tradition for making mincemeat. You will want to make this early- to mid-November to allow it to ferment and the flavors to mingle in time for Christmas.

1 pound suet
1 pound brown sugar
1 pound sultana raisins
1 pound dark raisins
1 pound dried currants
4 ounces candied mixed fruit peel
4 ounces chopped almonds
¼ cup ground allspice
3 tablespoons ground nutmeg
1 tablespoon salt
3 pounds apples, grated

Steps:

  • Melt suet in a saucepan over medium-low heat; strain liquid through a fine-mesh strainer into a bowl and discard solids. Refrigerate liquid until again solid.
  • Grate solid suet, measure 12 ounces of grated suet into a bowl, and set aside.
  • Stir brown sugar, sultana raisins, dark raisins, currants, fruit peel, almonds, allspice, nutmeg, and salt together in a large bowl; add grated suet and stir. Fold grated apple through the mixture.
  • Cover bowl loosely with aluminum foil and allow it to sit at room temperature, stirring once daily, until fermented, 3 to 5 days. Refrigerate until needed.

Try making your mincemeat well in advance of Christmas to give the flavours maximum time to mature

Yield Makes about 2kg (4 x 500ml jars)

Number Of Ingredients 9

250g raisins
375g currants
100ml brandy
zest of 1 lemon, juice of ½
300g shredded suet
250g dark brown sugar
85g chopped mixed peel
½ small nutmeg, grated
1 large Bramley apple, peeled and grated

Steps:

  • Soak the raisins and currants in the brandy and lemon juice for 1 hr until plumped up, then drain and set the brandy aside. Mix all the ingredients together in the order given, then pour in the brandy when everything else is well mixed. Spoon and press into sterilised jars, to exclude any air (the easiest way to sterilise jars is to run them through a dishwasher on its hottest setting). Cover and leave for at least a fortnight. Will keep in the fridge for up to 6 months.

This is another old recipe pulled from Betty's recipe box. I don't think any of us do mincemeat this way any more, but I didn't even known this was how it use to be made. Once again sometimes on these old recipes measurements aren't exact but I'll put it down how it was written. This was Betty's mothers recipe her name was Nettie Barlow. Betty is in her late 80's so that tells how old this is.

1 large hogs head boiled and salted
1 pound(s) hamburger (boiled and salted)
1 1/2 box(es) cinnamon (10 ounce size)
1 box(es) allspice, ground or cloves
2 quart(s) apples (chopped and raw)
1 pound(s) dried peaches (boiled and save juice)
4 pound(s) raisins or 2 packages (boiled and save juice)
2 quart(s) vinegar (or less) to taste
1 pound(s) brown sugar
4 cup(s) white sugar

Steps:

  • Add all ingredients together including all the juices, let come to a good boil and then can while hot.

MAMA'S MINCE CAKE

Mom didn't cook much, I remember going to Jack in the Box for Christmas Eve dinner. She did have a recipe for this mince cake for the holidays. My sisters and I love it, and I took it to work once and caught a doctor licking the glaze off the plate. It's a nice way to eat mincemeat.

1 box packaged spice cake mix
5 large eggs
1 jar(s) large, not sure what size, cross and blackwell mincemeat with rum and brandy
1 box powdered sugar
1 Tbsp white christmas ( half rum half brandy mix for holidays also good in egg nog )
oil as called for on cake mix box
half the amount of water called for on the cake mix box

Steps:

  • 1. Preheat to 350, grease and flour or spray with baking spray a bundt cake pan.
  • 2. Pour cake mix in bowl. Add half the water the recipe calls for. Add eggs and mincemeat. Add oil as called for in the recipe.
  • 3. BAke for 45 minutes to an hour or until cake pick comes out clean and cake edges separte from sides.
  • 4. Mix powderd sugar with 1 tablespoon White Christmas, sorry I don't really know the correct amounts, but add liquor or sugar until it's a glaze suitable for a bundt cake, and a doctor to lick it off the plate.

Mincemeat is a traditional English treat that is usually used as filling for mince pies during Christmas, but it tastes great mixed with vanilla ice cream, as well. This recipe uses butter instead of the traditional suet, which makes this mincemeat suitable for vegetarians. Store in the refrigerator for up to 6 weeks.

1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 large green apple, peeled and finely chopped
1 ¼ cups sultana raisins
1 ⅛ cups white sugar
½ cup dried currants
½ cup raisins
½ cup butter
½ cup chopped almonds
1 ½ tablespoons grated orange zest
½ teaspoon ground cinnamon
1 cup brandy

Steps:

  • Combine cinnamon, cloves, ginger, nutmeg, and allspice in a bowl. Reserve 1 heaped teaspoon for the mincemeat. Store the rest in a small jar for a later use.
  • Inspect two 12-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until mincemeat is ready. Wash new, unused lids and rings in warm soapy water.
  • Combine apple, sultanas, sugar, currants, raisins, and butter in a saucepan. Cook over low heat and stir gently until butter has melted. Stir in chopped almonds, orange zest, 1 teaspoon of mixed spice, and cinnamon. Bring mixture to a simmer and cook, stirring occasionally, 5 to 10 minutes.
  • Remove from heat and set mincemeat aside to cool down for 30 minutes. Stir in brandy. Spoon into sterilized jars.

Make homemade mincemeat for your Christmas bakes. It's a lot easier than you might think, and the recipe can be scaled up or down. This works well as a gift, too

Number Of Ingredients 11

150g currants
150g sultanas
100g raisins
75g mixed peel
1 lemon, zested and juiced
75g suet (check it's vegetarian and gluten-free, if needed)
1 small cooking apple, peeled, cored and finely chopped
1½ tsp mixed spice
1 tsp ground cinnamon
200g dark muscovado sugar
100ml brandy

Steps:

  • Put all the ingredients, except the brandy, in a large saucepan. Cook over a low heat for 10 mins, stirring occasionally, until the sugar and suet have completely dissolved.
  • Remove from the heat and leave to cool to room temperature before stirring in the brandy. The mincemeat may look loose at this stage, but it will continue to thicken. You can encase it in pastry as soon as it's cooled. Alternatively, spoon the warm mincemeat into a large sterilised jar or several smaller ones (see tip, below). Will keep in a cool, dry place for up to six months.
