SOUTHERN FRIED POTATOES RECIPE
Easy Southern Fried Potatoes are best when cooked in a cast iron skillet. Follow our step-by-step, photo illustrated recipe to make them.

Steps:
- Wash and dry potatoes. Peel if desired.
- Slice the potatoes into ¼ inch thick slices.
- Place a skillet over Medium heat on your stove top.
- When skillet is hot, add the oil and the bacon grease.
- When the oil is hot, carefully add the potatoes.
- Add black pepper to taste, as desired.
- Stir potatoes to coat in oil.
- Cover the skillet and let potatoes cook 10 minutes, stirring once halfway through.
- Slice the onion.
- Add the onion to the potatoes.
- Cover again. Cook 5 more minutes. Remove lid.
- Cook uncovered for about 5 more minutes to let potatoes slightly brown.
- Add salt to taste.
- Remove from skillet and place in a serving bowl.
- Enjoy!
SOUTHERN FRIED POTATOES
Steps:
- Wash, peel, and slice the potatoes into 1/8-inch rounds.
- Heat a large cast iron or nonstick skillet over medium-high heat. Add the oil and heat until it starts to ripple. Add the potatoes evenly and sprinkle the onions over the top. Cover and cook about 8 minutes. Remove the lid and add the salt and pepper. Flip the potatoes and continue to cook for about 10 more minutes, flipping once or twice more, or until golden brown and tender. Drain on paper towels if desired. Serve immediately.
COUNTRY FRIED POTATOES

SOUTHERN FRIED POTATOES AND ONIONS RECIPE
Fried Potatoes and onions are a simple side dish that is very tasty. The potatoes are creamy but a bit crispy and cook to a beautiful golden brown.

Steps:
- Add vegetable oil and real butter to a 10 or 12-inch skillet over medium-high heat.
- As soon as the butter melts add the potatoes and top with chopped onions, and salt, and pepper. I add about a teaspoon each.
- Cover with a lid and cook for 10-minutes.
- Remove cover after 10 minutes.
- Flip the potatoes to cook a bit on the other side with the lid off. They should be fork tender.
- Keep cooking until you get golden brown that makes you happy then remove from heat.
- Adjust seasoning and serve!

MAMA'S COUNTRY FRIED POTATOES

- 1. Heat oil in large cast iron skillet. Mix potatoes, onion, garlic, green & red bell peppers & parsley if using in a large bowl. Rinse under cold water.
- 2. Carefully add mixture to hot oil. Season with salt and pepper. Lower heat , and stir to make sure it is not sticking first, then cover with lid. Cook for at least 15 to 20 minutes, stirring occassionally to prevent sticking or burning on bottom.
- 3. If it begins to stick add about 1/4 cup of water and stir. Cover & continue to cook until potatoes are done. When fully cooked sprinkle shredded cheese over top. Cover with lid and allow cheese to melt. Serve while still hot.
- 4. Please Note: You can garnish the top with chopped parsley, chopped chive, and even add eggs while they are in the skillet, cover with the lid and allow them to cook before serving. If you really like cheese, you can add more if desired. Yes the recipe is in my cookbook.
MOM'S FRIED POTATOES
Folks around here still say that my mom made the best fried potatoes around. I have to agree and once she showed me how to make them, I never forgot, nor do I ever mess with her recipe much. And this particular recipe will give NEW CHEFS a jump start on this, often hazardous, endeavor. These potatoes are flavorful, about 1/3 of them turn out brown and crisp, and, they're never soggy. I hope you enjoy them as much as I have for 50 years.

- Peel, and then slice the potatoes twice the thickness of a quarter.
- In a large bowl, place the potatoes and the sliced onions in plenty of cold tap water as to cover them -- allow them to soak for an hour.
- In a large no-stick skillet (or a well-seasoned cast iron skillet), add the shortening and allow it to get hot over medium-high heat.
- Drain the potatoes/onion and pat them dry some with paper towels. Drips of water will cause the hot oil to pop out on you. Carefully add the potatoes/onions to the hot shortening, spreading them out in the skillet.
- DO NOT TURN OR STIR THE POTATOES FOR THE NEXT 10-12 MINUTES! Go ahead and add the seasonings after putting the potatoes in the skillet. Fry mostly covered for the first 10-12 minutes but just crack the lid off to the side a bit as to allow steam to escape.
- After the time has elapsed, use a spatula to peek at the bottom layer and if they are brown and crispy, go ahead and turn the potatoes ONE TIME. Finish frying UNCOVERED for about 10 more minutes.
- Transfer them to a serving plate that has a couple of paper towels on it.
- Serve with hot biscuits and/or brown soup beans. These potatoes are also great with fried eggs.
- NOTE: I make sandwiches out of leftover potatoes that have been in the fridge.

COUNTRY FRIED POTATOES WITH HATCH CHILES

- Place Hatch chiles directly on the grates of a gas stove over medium heat. Cook, flipping with tongs occasionally, until blackened and charred, about 5 minutes. Place in a sealed plastic bag and allow to cool, 7 to 8 minutes. Peel off charred skins, remove seeds, and slice chiles.
- Slice potato using a mandoline.
- Heat oil in a large skillet over medium-high heat until shimmering. Add potato slices and fry undisturbed until starting to brown and soften, 8 to 12 minutes. Add onion slices and chiles. Season with seasoned salt and black pepper. Stir to combine. Cook until onions are translucent and potatoes are fully softened and browned on the second side, 5 to 8 minutes.
