MALTED BUTTERSCOTCH BARS - STEPH
These melt-in-your mouth bars were served at a function I recently attended. The malted milk powder adds a tasty twist to these bars. A great accompaniment to a cup of coffee or cold glass of milk!

Steps:
- 1. 350 degree oven. Coat a 9x 13" pan with cooking spray.
- 2. In medium bowl, sift together flour, malted milk powder, baking powder, and salt. In a large bowl, add melted shortening to sugar. Add eggs; mix well. Add milk, vanilla, nuts, and flour mixture. Mix well and pour into prepared baking dish.
- 3. Bake 25 - 30 minutes. Mark into bars while hot. Remove from pan when cool. Note: Add 1 cup butterscotch chips for a truly rich flavor. DELISH!

Steps:
- Preheat the oven to fan 160C/conventional 180C/gas 4. Melt the butter in a small bowl and leave to cool. Butter a shallow tin about 20 x 24cm. In another bowl, beat the eggs. Melt the butter, then add to eggs with the sugar and vanilla. Tip in the flour and stir in with the chocolate and three-quarters of the nuts. Don't over-beat.
- Spread the mixture in the tin, scatter over the rest of the nuts and bake for 25-30 minutes, then cut into 12 bars. Dust with icing sugar.

The first time I made this I ate the whole pan. The second time I made this I ate the whole pan. The third time I made this I told my friends to keep me away from the darn pan and they ate the whole thing. Now we are all really fat and I need 3 new baking pans... =)

Steps:
- Preheat oven to 350°F.
- Grease a 9x13 pan with butter.
- Combine flour, soda, salt and cinnamon.
- In a large mixing bowl cream butter, then add sugar and mix until fluffy.
- Add eggs and vanilla and beat well.
- Gradually add flour mixture.
- Stir in oatmeal and the butterscotch chips.
- Spread in prepared pan and bake for 22 to 28 minutes.
- If they seem to be getting to brown on the edges, and are still quite gooey in the center lower the oven temp to 325°F for the last 10 minutes or so.

- Preheat oven to 350 degrees F.
- Line a 15 x 10-inch baking sheet with parchment paper.
- Combine all crust ingredients, and press into bottom of the pan.
- Bake for 10-12 minutes (do not over bake).
- Remove from oven then sprinkle the peanuts evenly over crust.
- In a saucepan combine the topping ingredients; bring to a boil then cook for about 2 minutes until smooth (stirring constantly).
- Pour the hot mixture over the nuts, and return to oven.
- Bake for 15 minutes or until until golden.
- Cool completely before cutting into bars.

- In a large bowl, cream the shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, oats and baking soda; gradually add to the creamed mixture. Stir in chips and pecans. Reserve 2 cups. - Preheat oven to 350 degrees. Line an 8×8 or 9×9 pan with parchment paper (use a little butter to help it stick).
- Cut the unsalted butter into chunks and heat in a small saucepan pan over medium heat. When the butter begins to foam, then subside, watch carefully; as soon as the solids begin to brown and fragrant, remove pan from heat.
- In the bowl of a stand mixer, combine the hot brown butter with the sugars and beat until well-mixed, 2-3 minutes. Scrape down the sides and bottom of the bowl. Add the vanilla and both eggs and beat until the mixture is light and fluffy, another 2-3 minutes. On the lowest speed, add the flour mixture until all traces of flour are incorporated. Beat another 30 seconds or so. The batter will be very thick, almost like cookie dough; do not be alarmed.
