6 tablespoons butter
1/2 cup confectioners' sugar
2 large egg yolks
1 egg, beaten (divide into two equal parts, save half for recipe, discard remaining half or save for another use)
2 cups all-purpose flour
1/8 teaspoon vanilla
1 beaten egg white

Steps:

  • Cream butter and sugar in a mixer with paddle. Slowly add egg yolks, beaten egg half, and vanilla. Add flour and mix until just combined. Wrap in plastic wrap and chill at least 2 hours. Remove from refrigerator, unwrap and roll on a floured surface into a 3/8-inch thick circle. Drape into an 11 or 12-inch tart pan and press into corners. Line pastry with parchment paper and fill with dried beans or pie weights and bake at 350 degrees for 20 minutes until light brown. While still warm, remove weights and parchment paper and brush slightly with a beaten egg white, taking care not to use too much and to only brush the inside of the shell. Let tart shell rest at room temperature until ready to fill.;

This is the recipe we used in making the Onion Tarts that I loved so much. I have never had any luck with pastry dough in the past but this one was pretty easy. The key is not to work it too much. The less you touch it, the better it will be. The instructions may seem long, but I am trying to be a thorough as possible. The tarts can be frozen and baked frozen, they do not need to thaw.

2 cups all-purpose flour
1 cup butter, chilled and cut into 1/2-inch cubes
1/2 teaspoon salt
6 -8 tablespoons ice water

Steps:

  • Place the flour, butter, and salt in a food processor fitted with a steel blade.
  • Pulse about 24 times, then open the machine and lift a nadful of crumbs. The largest pieces of butter should be the size of raw grains of rice or barley, if larger, pulse again.
  • When the butter pieces are the correct size, transfer the mixture to a large mixing bowl.
  • Sprinkle 6 Tbs of ice water onto the dough. Spread the fingers of one hand, and using your rigid fingertips as if they were a large fork, stir the dough quickly and briefly until the liquid is incorporated.
  • Squeeze a handful of the dough in your palm; the dough should have just enough moisture to stay together.
  • Break the piece in half; if it seems dry and crumbly, cautiously add more water a few tsp at a time until you can squeeze it into a ball that will not brumble when broken apart.
  • The dough is easiest to work with immediately if your kitchen is reasonably cool, the butter was cold and you used ice water. If your kitchen is very warm, wrap the dough in plastic wrap and refrigerate for about 15 minute.
  • Turn the pastry dough out on a lightly floured board and divide it inot quarters for small 7-inch tart shells or in half for large 10-inch shells.
  • Shape 1 piece of dough into a disk and dust the top lightly with flour.
  • Begin to roll out the dough, using quick but gentle strokes with the pin. Start with the pin in the middle of the round and roll to the top, then the bottom.
  • Rotate the dough 1/4 turn each time you roll to be sure the dough is not sticking and use additional flour as necessary.
  • When the round is larger than 9 inches for a small tart or 12 inches for a large tart and about 1/8-inch thick.
  • Trim the edges of the rounds if you want, but the edge is hand formed so it really doesn't matter all that much.
  • Fold 1/2-inch edge of dough all around to form a decorative rim.
  • Begin by folding a 1-inch long section over by 1/2 inch, then overlap the fold by half and roll another piece of dough over, pinching it firmly in place. Continue to roll and pinch, and a twisted rop pattern will form.
  • Roll out the remaining dough in the same way, and crimp edges in the same manner.
  • Transfer the pastry shells to baking sheets lined with parchment paper and poke the interior of the shells all over with the tines of a fork.
  • Refrigerate the pastry for at least 30 min or up to 24 hours. They can be frozen on the baking sheets, and when frozen, stack them inside freezer bags. Bake the shells without thawing.
  • Prebaking:Preheat the oven to 375ºF.
  • Brush the rims of the tarts with an egg wash.
  • Bake 1 baking sheet at a time for 15 min, then reduce the heat to 350ºF and continue to bake until they are an even golden brown, 8-12 min longer.
  • Lift a shell with a spatula and check that the underside is evenly brown. If the tart shells puff up during baking, press down the center of the pastry with the back of a large spoon.
  • Let cool on the baking sheet.

1 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1/4 cup solid vegetable shortening
4 to 6 tablespoons ice water

Steps:

  • Sift flour and salt together into a medium bowl. Add shortening, and mix in with fingertips until the mixture resembles cornmeal. Add just enough ice water to form a dough. Gather into a ball, wrap in plastic, and place in refrigerator for a few minutes before rolling out.

  • Lightly flour your work surface (and rolling pin). Using as little flour as possible, roll out a half recipe of pâte brisée or pâte sucrée, rotating it 90 degrees every few minutes. Repeat until the dough is 1/8 inch thick. Brush off excess flour.
  • Gently fold the dough into quarters. Center the dough in the tart pan; unfold, letting the extra pastry droop over the sides. Alternatively, drape the rolled dough over the rolling pin for transfer into the pan.
  • Lift the overhanging dough, and tuck it into the side and corners of the pan. Gently press the pastry snug against the bottom edges of the pan with a knuckle. This extra dough makes it easier to form a decorative edge.
  • When the shell is completely tucked in place, firmly roll your rolling pin over the top of the tart pan, using the pan's sharp edges to trim off the excess dough. Refrigerate for 10 minutes before proceeding to step 5.
  • Working around the circumference of the pan, firmly press the dough into the fluting, gently pinching dough between forefinger and thumb and supporting the pan with the other hand as you go.
  • The crust will release steam when it's baked that can cause the pastry to bubble and buckle. Prevent this damage by docking (poking holes into the pastry with the tines of a fork to create steam vents). Refrigerate the dough for 1 hour, or wrap it and freeze for future use for up to 1 month.
  • Cut a square of parchment paper several inches larger than the tart shell, and place it into the chilled shell. Fill it with pie weights or dried beans (which should be stored in the freezer between uses to prevent them from becoming rancid). Bake in a 400° F oven for 15 minutes.
  • Then remove the parchment and weights to allow the bottom of the shell to bake until golden brown, 12 to 15 minutes more. Keep an eye on the edges: If they start to become too dark, cover them with foil.

1 3/4 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes
1/4 cup cold vegetable shortening
3 to 5 tablespoons ice water
Special equipment: a pastry or bench scraper; an 11- by 1-inch fluted round tart pan with a removable bottom; pie weights or raw rice

Steps:

  • Blend together flour, sugar, salt, butter, and shortening with your fingertips or a pastry blender (or pulse in a food processor) just until most of mixture resembles coarse meal with small (roughly pea-size) butter lumps. Drizzle evenly with 3 tablespoons ice water and gently stir with a fork (or pulse in food processor) until incorporated.
  • Squeeze a small handful: If it doesn't hold together, add more ice water, 1 tablespoon at a time, stirring (or pulsing) until just incorporated, then test again. (If you overwork mixture, pastry will be tough.)
  • Turn out mixture onto a lightly floured surface and divide into 6 portions. With heel of your hand, smear each portion once or twice in a forward motion. Gather dough together with scraper and press into a ball, then flatten into a 6-inch disk. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
  • Roll out dough with a floured rolling pin into a 13-inch round on a lightly floured surface and fit into tart pan. Trim excess dough, leaving a 1/2-inch overhang, then fold overhang inward and press against side of pan to reinforce edge. Lightly prick bottom and sides with a fork. Chill 30 minutes.
  • Preheat oven to 375°F.
  • Line tart shell with foil or parchment paper and fill with pie weights. Bake in middle of oven until pastry is pale golden along rim, 20 minutes. Carefully remove foil and weights and bake until pale golden all over, 10 minutes more. Cool in pan on a rack.

While Dorie Greenspan uses this dough for savories, it's really an all-purpose recipe that produces a not-too-rich, slightly crisp crust that is as happy holding pastry cream for a strawberry tart as it is encasing a creamy cheese filling for a quiche. This is a good dough to use anytime you see a recipe calling for pâte brisée. Be prepared: The dough should chill for at least 3 hours.

6 tablespoons (3/4 stick) very cold (or frozen) unsalted butter, cut into bits
1 large egg
1 teaspoon ice water

Steps:

  • To make the dough in a food processor: Put the flour, sugar and salt in the processor and whir a few times to blend. Scatter the bits of butter over the flour and pulse several times, until the butter is coarsely mixed into the flour. Beat the egg with the ice water and pour it into the bowl in 3 small additions, whirring after each one. (Don't overdo it - the dough shouldn't form a ball or ride on the blade.) You'll have a moist, malleable dough that will hold together when pinched. Turn the dough out onto a work surface, gather it into a ball (if the dough doesn't come together easily, push it, a few spoonfuls at a time, under the heel of your hand or knead it lightly), and flatten it into a disk.
  • To make the dough by hand: Put the flour, sugar, and salt in a large bowl. Drop in the bits of butter and, using your hands or a pastry blender, work the butter into the flour until it is evenly distributed. You'll have large and small butter bits, and that's fine - uniformity isn't a virtue here. Beat the egg and water together, drizzle over the dough, and, using a fork, toss the dough until it is evenly moistened. Reach into the bowl and, using your fingertips, mix and knead the dough until it comes together. Turn it out onto a work surface, gather it into a ball (if the dough doesn't come together easily, push it, a few spoonfuls at a time, under the heel of your hand or knead it some more), and flatten it into a disk.
  • Chill the dough for at least 3 hours. (The dough can be refrigerated for up to 5 days.)
  • When you're ready to make the tart shell, butter a 9- to 9 1/2-inch fluted tart pan with a removable bottom (butter it even if it's nonstick).
  • To roll out the dough: I like to roll out the dough between sheets of wax paper or plastic wrap or in a lightly floured rolling cover, but you can roll it out on a lightly floured work surface. If you're working between sheets of paper or plastic wrap, lift the paper or plastic often so that it doesn't roll into the dough, and turn the dough over frequently. If you're just rolling on the counter, make sure to lift and turn the dough and reflour the counter often. The rolled-out dough should be about ¼ inch thick and at least 12 inches in diameter.
  • Transfer the dough to the tart pan, easing it into the pan without stretching it. (What you stretch now will shrink in the oven later.) Press the dough against the bottom and up the sides of the pan. If you'd like to reinforce the sides of the crust, you can fold some of the excess dough over, so that you have a double thickness around the sides. Using the back of a table knife, trim the dough even with the top of the pan. Prick the base of the crust in several places with a fork.
  • Chill - or freeze - the dough for at least 1 hour before baking.
  • Center a rack in the oven and preheat the oven to 400 degrees. Press a piece of buttered foil (or use nonstick foil) against the crust's surface. If you'd like, you can fill the covered crust with rice or dried beans (which will be inedible after this but can be used for baking for months to come) to keep the dough flat, but this isn't really necessary if the crust is well chilled. Line a baking sheet with a silicone baking mat or parchment paper and put the tart pan on the sheet.
  • To partially bake the crust: Bake for 20 minutes, then very carefully remove the foil (with the rice or beans). Return the crust to the oven and bake for another 3 to 5 minutes, or until it is lightly golden. Transfer the baking sheet to a cooling rack and allow the crust to cool before you fill it.
  • To fully bake the crust: Bake for an additional 10 minutes, or until it is an even golden brown. Transfer the baking sheet to a cooling rack and allow the crust to cool before you fill it.
