1-3/4 cups sugar
1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
2 cups finely chopped peeled tart apples
1 cup chopped walnuts
1-1/4 cups whipped topping

Steps:

  • Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

1/3 cup butter, softened
1-2/3 cups sugar
2 large eggs
2 large egg whites
1/2 cup buttermilk
1/2 cup unsweetened applesauce
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking powder
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground allspice
2 cups grated peeled tart apples
1/2 cup chopped walnuts, toasted
1/2 cup miniature semisweet chocolate chips
1/2 teaspoon confectioners' sugar

Steps:

  • In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs, then egg whites, beating well after each addition. Beat in the buttermilk, applesauce and vanilla (mixture will appear curdled)., Combine the flour, cocoa, baking powder, cinnamon, baking soda, salt and allspice; stir into butter mixture just until blended. Stir in the apples, walnuts and chips., Transfer to a 10-in. fluted tube pan coated with cooking spray. Bake at 325° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Sprinkle with confectioners' sugar.

My mom gave me this recipe- I think she got it from magazine. It is really good and very easy and it never hangs around very long. It's good warm or cold, for dessert or even breakfast. Nuts can be added to make it even better. Splenda can easily be substituted for the sugar.

1 box yellow cake mix
1 (21 ounce) can apple pie filling
3 eggs
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 cup chopped nuts (if desired)

Steps:

  • Mix together first seven ingredients in mixer.
  • Mix 2 minutes at medium speed.
  • Fold in chopped nuts.
  • Coat bundt pan with cooking spray and flour.
  • Bake at 350 degrees 35-40 minutes.
  • Insert toothpick to check for doneness.
  • Cool 5 mins in pan, invert to plate.
  • Cool, dust with powered sugar.

This is my adopted recipe and I've made it now. It isn't like i think a cake is, it's more like a cobbler, It is very tasty and easy to make. I did use the food processor to mix Step 2. I made it in 8X12 inch dish but I think 8X8inch would be better, I baked for 33 minutes

4 apples, peeled and sliced
1/4 cup sugar
1/2 teaspoon cinnamon
1/2 cup sugar
2 tablespoons butter, softened or 2 tablespoons margarine
1 egg
1/4 teaspoon vanilla
1 cup flour
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 deg F.
  • Mix together 1/4 cup sugar and 1/2 t cinnamon.
  • Place a layer of apples in greased baking dish, sprinkle with half the sugar-cinnamon mixture, cover with remaining apples and cover with remaining sugar-cinnamon.
  • Cream 1/2 cup sugar and butter.
  • Add egg and vanilla and mix well.
  • Stir in flour and baking powder and spoon over apples, spreading it as best as you can.
  • Bake 30 minutes.
  • Best served warm, with vanilla ice cream.

TOPPING:
1/3 cup chopped walnuts
1/3 cup packed brown sugar
2 tablespoons sugar
1 teaspoon ground cinnamon
2 medium tart apples, peeled and thinly sliced

Steps:

  • In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking soda; add to creamed mixture alternately with sour cream, beating well after each addition (batter will be sticky). , In a small bowl, combine the walnuts, sugars and cinnamon. 200g butter , softened plus extra for greasing
200g dark muscovado sugar
3 eggs , beaten
1 tbsp black treacle
200g self-raising flour
2 tsp mixed spice
1 tsp baking powder
2 eating apples , grated (approx 100g each)
300g mixed sultanas and raisins

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter and line the bottom of a deep, round 20cm cake tin with greaseproof paper. Beat the first seven ingredients together in a large bowl (electric hand- beaters are best for this), until pale and thick. Using a large metal spoon, gently fold in the fruit until evenly combined.
  • Spoon the batter into the tin and bake for 50 mins-1 hr or until the cake is dark golden, springy to the touch and has shrunk away from the tin slightly. A skewer inserted into the centre will come out clean when it's ready. Cool completely before decorating. Will keep, wrapped in an airtight container or iced, for up to a week, or can be frozen un-iced for up to a month - defrost fully before decorating.
