Melt In Your Mouth Turkey Tenderloins image

This simple turkey recipe is easy to put together, yet is moist, succulent and melts in your mouth.

Number Of Ingredients 6

2 Turkey Tenderloins ( 1 1/2-2 lbs. Package)
Salt and Pepper
2 Tsp. Garlic Powder
Butter, melted
2 Sprigs of Fresh Rosemary
Cooking Spray

Steps:

  • Preheat your oven 400°F.
  • Spray baking dish with cooking spray. Place turkey tenderloins in baking dish.
  • Coat the turkey tenderloin completely in butter on both sides. The turkey will absorb the oils from the butter while cooking and you want your tenderloin to be moist. So, don't be shy with coating the turkey breasts well.
  • Sprinkle both sides with salt, pepper and garlic powder.
  • Place rosemary on top of each turkey tenderloin. Roast for about 45 minutes or until a cooking thermometer registers 161°F. Allow the turkey breast tenderloins to rest for 10-15 minutes before slicing and serving.

1 (64 fluid ounce) bottle apple juice
4 oranges, halved
7 stalks celery, cut into large chunks
3 onions, cut into large chunks
6 sprigs fresh rosemary
6 sprigs fresh thyme
4 bay leaves
2 fresh sage leaves
½ cup kosher salt
¼ cup poultry seasoning
2 tablespoons ground black pepper

Steps:

  • Combine chicken broth and apple juice in a food-safe container large enough to hold your turkey and the brine ingredients. Squeeze juice from orange halves and drop spent orange halves into the broth mixture; add celery, onion, rosemary, thyme, bay leaves, and sage leaves to the mixture. Stir salt, poultry seasoning, and black pepper into the liquid to dissolve.

  • In a non-reactive container (like a clean bucket, big stock pot or a food grade plastic container) dissolve the salt and the sugar in 2 gallons of water. Add the rest of the brine ingredients. Mix to dissolve the sugar.
  • In a heavy saucepan place the turkey neck and giblets (the liver should only be added during the last 15 minutes of cooking). Add the chopped onion, carrots, celery and bay leaf. Pour water and broth over and bring to a boil over medium-high heat. Lower the heat to medium low and simmer for about 45 minutes to 1 hour or until reduced to about 4 cups. If using, add the turkey liver during the last 15 minutes of cooking. Strain the stock and reserve.
  • After the first hour of roasting, remove the turkey from the oven and carefully flip the bird, breast side up. Baste the turkey with chicken or turkey broth/stock (about 1/4 - 1/2 cup) and return to the oven.

  • When ready to cook your bird, remove it from the brine and wash it with cold water. Season and cook as you usually would.
