CINNAMON SUGAR COFFEE CAKE COOKIES
Light, cakey, and delicious. Perfect combination of cinnamon and sugar, but with healthier ingredients to make them guilt free! Great with coffee or a big cup of hot cocoa.

Steps:
- Place sugar and butter in a bowl; beat with mixer until well blended. Add oil, vanilla, and egg; beat until blended.
- Add white and wheat flour, baking powder, baking soda, salt, milk, and cinnamon to mixture; stir until completely combinded. Chill in refrigerator for 45 minutes (or freezer for 15, just enough to cool).
- Preheat oven to 375.
- Combine 1/4 cup sugar (or 1/8 cup Splenda) and 1 teaspoon cinnamon in a small bowl or plate. Shape dough into 1 inch balls, makes about 1 dozen. Roll balls in cinnamon sugar mixture. Place 2 inches apart on ungreased baking sheet, slightly flattened balls. Bake at 375 for 12 minutes, allow to cool.

- Peel apples and chop into chunks.
- Mix flour, butter, and brown sugar.
- Stir in nuts.
- Separate mixture into two parts.
- Spread half in bottom of 9 inch round pan.
- In another bowl beat sour cream, vanilla, and egg just until smooth.
- Add to other half of first mixture.
- Gently stir in apples no more than 2 cups.
- Bake 1 hour to 1 hour and 20 minutes or until inserted toothpick comes out dry.

- Stir together flour and brown sugar in a large bowl.
- Cut 3/4 cup butter into flour mixture with a pastry blender or 2 forks until crumbly. Press 2 3/4 cups crumb mixture evenly on the bottom of a lightly greased 13- x 9-inch pan.
- Stir together sour cream, egg, and baking soda; add to remaining crumb mixture, stirring just until dry ingredients are moistened.
- Stir together granulated sugar and cinnamon.
- Pour sour cream mixture over crumb crust in pan; sprinkle evenly with cinnamon mixture and pecans.
- Bake at 350° for 25 to 30 minutes or until a wooden pick inserted into center comes out clean.

- Grease a 10-in. fluted tube pan and lightly sprinkle with flour; set aside., In a large bowl, cream the butter and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Combine the evaporated milk, water, extracts and food coloring if desired; add to the creamed mixture alternately with flour, beating well after each addition., Pour into prepared pan. Bake at 350° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
