1/2 lb onion, chopped
4 cloves garlic, minced
1/4 lb shredded carrot
1/2 lb small mushroom, cleaned and sliced
1 lb ground sirloin
1 teaspoon dried oregano
1/2 teaspoon crushed dried thyme
1/2 teaspoon ground cumin
1/4 teaspoon fresh ground pepper
1 tablespoon all-purpose flour
8 fluid ounces low sodium beef broth
1/3 cup dry red wine
2 tablespoons no-added-salt tomato paste
vegetable oil cooking spray
1 lb russet potato, peeled and cut into chunks
3 -4 tablespoons skim milk
1/2 teaspoon salt (optional)
1 -2 tablespoon minced pickled jalapeno pepper, to taste
1 tablespoon minced fresh cilantro
1 1/2 tablespoons minced scallions
1/4 teaspoon paprika
3 tablespoons shredded monterey jack cheese

Steps:

  • In a large nonstick skillet, sauté the onion, garlic, carrot, and mushrooms over medium heat, stirring occasionally, until the vegetables are wilted and pan liquids are absorbed, about 6 minutes.
  • Crumble in the ground sirloin and continue to cook, stirring occasionally, until the beef is well browned, about 5 minutes.
  • Drain off any excess fat.
  • Add the oregano, thyme, cumin, and pepper.
  • Sprinkle the flour over the beef mixture and stir.
  • Add the beef broth, wine, and tomato paste.
  • Stir until well combined.
  • Line a 2-quart casserole with a piece of heavy-duty aluminum foil large enough to completely enclose the casserole.
  • Lightly spray the foil inside the casserole with cooking spray.
  • Transfer the meat mixture to the prepared casserole.
  • Set aside while you prepare the topping.
  • Place the potatoes in a pot of boiling water to cover.
  • Reduce the heat and simmer until tender when pierced with a fork, about 15 to 20 minutes; drain.
  • Mash the potatoes, adding sufficient skim milk until the potatoes are fluffy.
  • Stir in the salt (if using), minced jalapeño chiles, cilantro, and scallion.
  • Spoon the potato mixture onto the top of the meat mixture, making swirls with the back of a spoon.
  • Sprinkle with paprika and cheese.
  • Cover the casserole and freeze until solid.
  • Lift the food out of the casserole (the foil will adhere), wrap securely in the foil, then slip the package into a self-sealing plastic freezer bag or overwrap in additional foil or freezer paper.
  • Label with the casserole name and the date.
  • Use within 3 months.
  • When ready to bake, unwrap the casserole and place back in the casserole dish to bake.
  • Defrost completely.
  • Then bake at 375°F for 40 to 45 minutes, until golden and bubbly.
  • (Since the casserole will be full, it may bubble over, so place a sheet of aluminum foil under the casserole to catch any drips.) Serve hot.

SOUTHWEST CRESCENT PIE

Quick and easy. I usually have these ingredients on hand so on busy days, this is one of the fast dinners that I throw together. It's adaptable and still comes out well. If I don't have the mexicorn, I use frozen corn. I use any type of canned beans that I have in the pantry. You can chop a few jalapenos to make it hotter if that's what you like. We top each serving with chopped tomatoes, onions and sour cream.

1 lb ground beef
1 (15 ounce) can ranch style beans, rinsed and drained
1 (10 ounce) can diced tomatoes and green chilies, undrained
1/2 cup canned Mexican-style corn, drained
1/2 cup water
1 beef bouillon cube
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1 (8 ounce) package refrigerated crescent dinner rolls
1/2 cup shredded monterey jack pepper cheese

Steps:

  • Heat oven to 375 degrees. Brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into 3/4 inch crumbles. Drain and return to skillet.
  • Stir in beans, tomatoes, corn, cumin, garlic, water and bullion cube. Bring to a boil. Cook about 10 minutes or until most of the liquid has evaporated, stirring occasionally.
  • Meanwhile separate crescent roll dough into 8 triangles. Line 9-inch pie plate with dough triangles, placing narrow tips toward center. Firmly press edges of dough together to form crust. Bake in 375 degree oven 10 minutes. Remove from oven.
  • Spoon beef mixture into crust. Sprinkle with cheese. Bake 8 to 10 minutes or until edges of crust are golden brown and cheese is melted.

12 ounces egg noodles, cooked to package directions
1/2 cup milk
1 egg
1 lb lean ground beef
1 onion, chopped
1/2 green pepper, chopped
1/2 red peppers or 1/2 yellow pepper, chopped
2 teaspoons chopped garlic
2 teaspoons chili powder
1/2 teaspoon cumin
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon fresh ground pepper
2 1/2 cups tomato sauce
1 cup shredded monterey jack pepper cheese
1 cup shredded sharp cheddar cheese

Steps:

  • Combine cooked noodles, milk and egg in bowl; mix well.
  • Add noodle mixture to a 13x9 baking pan that has been sprayed with cooking spray such as Pam.
  • Brown ground beef with onion, peppers and garlic;drain.
  • Add seasonings.
  • Stir in tomato sauce and cook till heated.
  • Spread over the noodles and top with the cheeses.
  • Bake at 425 for 10-15 minutes until bubbly and cheese melts.
  • Let stand for a few minutes before serving.

This is from our Church cookbook, it's very simple and so yummy! Something different when you don't know what to do with ground beef. Serve it with mashed potatoes or French Fries and the kids will love it. This is the kid friendly version, you can spice it up with some chiles or hot pepper sauce if you want to. We like it as is served with HP sauce.

1 unbaked 9-inch pie crust, chilled
1/2 lb ground beef
1 medium onion, finely chopped
3 tablespoons flour
1 teaspoon salt

1 cup grated sharp cheddar cheese
1 1/2 cups milk
2 eggs
1 tablespoon Worcestershire sauce
1 minced garlic clove (optional)

Steps:

  • Brown ground beef with onion and garlic, drain fat off well.
  • Stir flour, salt and pepper over browned beef.
  • Spread mixture in pie shell.
  • Spread cheeses over this.
  • Whisk milk, eggs and worcestershire sauce together and carefully pour over ground beef and cheddar.
  • Bake at 400 degrees F for 35-40 minutes.

I can never leave a recipe as it is .Always looking for some way to improve or make a different recipe. I don't know how you can improve Frito Pie but this comes close. The secret is the layering.

2 (16 1/4 ounce) Frito corn chips
2 (15 ounce) chili (without beans)
1 (16 ounce) Velveeta cheese
1 (10 ounce) Rotel Tomatoes
1 large onion, chopped
8 ounces mild cheddar cheese
4 1/4 ounces green chilies

Steps:

  • Heat the two 15 ounce cans of chili and set aside for layering
  • Microwave the velveeta cheese with the RoTel diced tomatoes & green chilies.
  • Line a 9x12 baking pan with one bag of fritoes.
  • Pour half of the chili over fritoes
  • Pour half of Velveeta cheese and RoTel mixture on fritoes.
  • Layer half of the onions on top of cheese.
  • Layer second bag of fritoes on top of first layer.
  • Pour remaining chili for next layer.
  • Add remaining Velveeta cheese and RoTel mixture.
  • Layer remaining onions.
  • Top with the 8 ounces of mild cheddar cheese.
  • Green chilies will top it off.
  • Bake at 350 degrees for 35 to 40 minutes. (Should be bubbly hot).
