MAKE-AHEAD MUFFIN MIX
A make-ahead muffin mix that you can keep on hand and use to make amazing make-ahead muffins!

Steps:
- Place all ingredients in a VERY large bowl, and stir gently until combined. Store in an airtight container in a cool, dry location.
- Preheat oven to 400F degrees. Spray two muffin tins with non-stick spray, or prepare with paper liners.
- In large bowl, beat 4 eggs. Add 3 teaspoons vanilla, 2 cups water and 3/4 cup vegetable or canola oil.
- Stir in 5 1/2 cups of dry muffin mix, just until moistened. Gently add in any mix-ins (see notes or find the full list at grouprecipes.com).
- Spoon into prepared muffin tins, making sure to fill each muffin cup to the top. Optional: Add topping(s).
- Bake at 400F for 18-20 minutes until tops are golden brown and toothpick inserted into muffin comes out clean.

MAKE-AHEAD HOMEMADE OATMEAL MUFFIN MIX
Steps:
- In an extra large bowl, stir together the flour, sugar, salt, and baking powder until they're equally incorporated.
- Using your preferred method, cut in the shortening until the mix is the consistency of corn meal.
- Stir in the oats until they've evenly incorporated and spread throughout the mix.
- Seal in an airtight container. This mix is shelf stable and will keep perfectly fine on pantry shelves.

- Preheat oven to 425 degrees F (220 degrees C). Grease muffin cups or line with paper muffin liners.
- In a small bowl, combine milk and oats; let soak for 15 minutes.
- In a separate bowl, beat together egg and oil; stir in oatmeal mixture. In a third bowl, sift together flour, sugar, baking powder and salt. Stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups until cups are 2/3 full.
- Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.

- Grease 12 muffin cups.
- Whisk eggs, brown sugar, vegetable oil, and milk together in a bowl until smooth.
