MAKE-AHEAD GARLIC TOAST
I love this because I always have leftover bread and it goes to waste most of the time. The best part is that you can pull out as many pieces as you want and bake them straight from the freezer!

Steps:
- Mix butter, Parmesan cheese, parsley, and garlic powder in a bowl. Arrange Italian bread on a large baking sheet and spread each slice with garlic butter mixture. Place baking sheet in freezer and freeze until bread solid, about 1 hour. Transfer bread to a resealable plastic freezer bag until ready to use.
- Preheat oven to 425 degrees F (220 degrees C). Arrange desired number of slices, butter-side up, on a baking sheet.
- Bake in preheated oven until bread is toasted and butter is melted, 5 to 7 minutes.

MAKE AHEAD GARLIC TOAST OMAC
This makes a delicious garlic toast that I make for my family about once a week with spaghetti or a simlar dish. My family of 4 never uses even half a loaf of french bread to make garlic toast, but it is a must have for italian dinners in our house so I came up with this recipe to reduce waste and save me some time. You can't even tell it has been frozen.

Steps:
- Slice French bread into slices about 3/4" thick. I usually get about 24 slices per loaf.
- If needed soften butter in microwave on low power for 30 - 60 seconds until it is soft enough to mix the seasonings into and spread easily.
- Add remaining ingredients and stir well.
- Spread a little more than 1 tsp of mixture onto each slice of bread.
- Flash freeze the slices layed out flat on cookie sheets in your freezer. (This is important if you freeze them in a stack they are very hard to seperate later.).
- Stack into groups as your family would eat with one meal and wrap in saran wrap. I usually make a package of 6.
- When ready to use bake right from freezer at 350 degrees for 4 - 8 minutes depending on how crispy you like your toast.
- *For an extra sinful garlic toast sprinkle with mozzarella cheese before baking.

GARLIC TOASTS

- Preheat the oven to 400 degrees F.
- Slice the baguette diagonally into 1/4-inch-thick slices. Depending on the size of the baguette, you should get 20 to 25 slices.
- Lay the slices in one layer on a baking sheet, brush each with olive oil, and sprinkle generously with salt and pepper. Bake the toasts for 15 to 20 minutes, until they are browned and crisp. As soon as they are cool enough to handle, rub one side of the toasts with the cut side of the garlic. Serve at room temperature.
AMY'S GRANDMA'S STUFFED CABBAGE HOLOPTCHIS (OMAC)
My friend gave me this recipe this morning and I have it simmering now! It sounded like my Grandmother's style. I used the frozen cabbage method for the leaves so I'll give the recipe that way. You need to put them in the freezer over night. If not, you could boil the leaves gently for a few minutes and then let the cabbage cool before handling and taking off the leaves. I added 1 undiluted can of tomato soup (even though that's not a listed ingredient) to my sauce mixture because I wanted a bit more "sauce." I also added some garlic powder shakes to the meat mixture. This could easily be halved but the recipe makes enough for 2 dinners for a family of 4 so I would eat half and freeze half for another day since stuffed cabbage freezes well. I used the Splenda brown sugar. It tastes just like my Grandma's did! My DH loved it. My kids weren't into the cabbage part!

- If you have the cabbage heads frozen, just put under running luke warm water and peel them off and dry them with paper towels.
- Mix the meat ingredients in a bowl with your hands until well blended.
- Place the leaves on a flat surface, I used a large cutting board and place a "meatball" amount in a leaf.
- Roll it until just covered and then fold in the sides and finish rolling and place in a large pot, seam side down.
- Continue until all is used up.
- Place the sliced onions on top of the cabbage rolls in the pot.
- In a bowl (I rinsed the bowl that had the meat mixture and used that) mix all the sauce ingredients and pour over the onions.
- Bring the pot to a boil and then lower the heat, cover and simmer for an hour and a half.

LEMON MARINADE FOR CHICKEN (OMAC)
This quick and easy recipe is perfect for OMAC users. I found this recipe in one of my favorite cookbooks from Vancouver author/chef/and fireman, David Veljacic. There is a nice balance of flavors between the lemon juice, olive oil and brown sugar. This recipe reminds me of a long lost recipe my DM used to make....so it does bring back childhood memories of days gone by! This is a family favorite.....I hope it becomes one of your!!!

- Combine the lemon juice, olive oil, brown sugar, oregano, black pepper and garlic powder.
- Add the meat and let marinate for several hours.
- To freeze: Place in a large freezer bag, removing any air. Lay the chicken flat and place on a cookie sheet flat in the freezer. (by using this method of freezing, you can stack each package neatly).
- To thaw; place the chicken in the fridge overnight ~ or ~ for a quick thaw, place the chicken in the sink, using tempid water and let thaw for about 25 - 30 minutes. Once thawed, either use immediately or put back in the fridge until ready to use.

Steps:
- Botton Layer: Combine macaroni, eggs and cheese. Spread over bottom of greased 13 x 9 ~ or ~ two 8 x 8 casserole dishes. Set aside.
- Filling: In a large skillet, cook beef, mushrooms and onion until tender and browned. Drain fat. Stir in tomato sauce and seasonings. Simmer, uncovered while preparing topping.
- Top Layer: In a large saucepan, melt butter. Stir in flour, salt and nutmeg. Add milk; cook and stir until thickened and bubbly. Add a bit of the milk mixture to the eggs, stir quickly, then return to the saucepan. Cook over low heat for 1 minute longer.
- To assemble: Spread meat filling over macaroni. Spread top layer over the filling. Sprinkle with parmesan cheese.
- Preheat oven to 350. Cook the casserole for 35 - 40 minutes or until heated through.
