Now that I have my own espresso machine/milk steamer I can make those $4 drinks at home!!! This is one of mt favorites! Note: the white chocolate syrup in this recipe is the kind of syrup used to flavor coffee, while the regular chocolate is the same thing one would use for topping ice cream.

2 tablespoons white chocolate syrup
1 fluid ounce brewed espresso
1 tablespoon chocolate syrup (Hersheys)

Steps:

  • Steam milk until it reaches 145 degrees F.
  • Pour white chocolate syrup into bottom of a coffee mug, followed by freshly brewed espresso.
  • Pour in steamed milk.
  • Top with Hershey's syrup.
  • Stir.
  • Enjoy!

1-1/2 cups graham cracker crumbs
3 Tbsp. margarine or butter, melted
1 cup sugar, divided
1-1/2 cups cholesterol-free egg product, divided
1 container (24 oz.) 2% milkfat low fat cottage cheese
2 pkg. (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
1 Tbsp. unsweetened cocoa powder
2 tsp. MAXWELL HOUSE Instant Coffee
1 cup (about 1/3 of 8-oz. tub) thawed COOL WHIP LITE Whipped Topping

Steps:

  • Heat oven to 325ºF.
  • Combine graham crumbs, margarine and 1/4 cup sugar; press onto bottom and 2 inches up side of 9-inch springform pan.
  • Blend 1/2 cup egg product and cottage cheese in blender until smooth; spoon into large mixing bowl. Add Neufchatel, and remaining sugar and egg product; beat with mixer until blended.
  • Spoon 3/4 cup Neufchatel mixture into small bowl. Add cocoa powder and coffee; mix well.
  • Spoon 2 Neufchatel batters alternately into crust; swirl gently with knife.
  • Bake 1 hr. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim.
  • Refrigerate cheesecake 4 hrs.
  • Garnish with COOL WHIP before serving.

Essentially a walnut cake this is part vanilla and part mocha, this is one of the moistest bundt cakes I've ever tried. It's also a beautiful cake and the combination of flavours is just perfect. The recipe is from Dorie Greenspan's wonderful cookbook, "Baking: From My Home to Yours". This dense, buttery cake i a great keeper; wrapped well, it will keep at room temperature for up to five days or in the freezer, for up to 2 months. Serve plain or with a drizzle of hot fudge sauce.

2 1/4 cups all-purpose flour
1/2 cup finely ground walnuts
1 teaspoon baking powder
1 teaspoon salt
1 cup unsalted butter, at room temperature (8 oz)
2 tablespoons unsalted butter, at room temperature (1 oz)
3 ounces bittersweet chocolate, coarsely chopped
1/4 cup hot or cold coffee (can also use plain water)
1 teaspoon finely ground instant coffee or 1 teaspoon instant espresso powder
1 3/4 cups sugar
4 large eggs, preferably at room temperature
2 teaspoons pure vanilla extract
1 cup whole milk, at room temperature

Steps:

  • GETTING READY: Center a rack in the oven and preheat the oven to 350°F Butter a 9- to 10-inch (12-cup) Bundt pan, dust the inside with flour and tap out the excess. (If you've got a silicone Bundt pan, there's no need to butter or flour it.) Don't place the pan on a baking sheet - you want the oven's heat to circulate through the Bundt's inner tube.
  • Whisk together the flour, ground walnuts, baking powder, and salt.
  • Set a heatproof bowl over a saucepan of gently simmering water. Put 2 tbsp of the butter, cut into 4 pieces, into the bowl, along with the chocolate, coffee and instant coffee. Heat the mixture, stirring often, until the butter and chocolate are melted and everything is smooth and creamy - keep the heat low so that the butter and chocolate don't separate. Remove the bowl from the heat.
  • Working with a stand mixer, preferably with a paddle attachment or with a hand mixer in a large bowl, beat the remaining 2 sticks of butter and the sugar at medium speed for about 3 minutes - you'll have a thick paste; this won't be light and fluffy. Beat in the eggs one by one, beating well after each addition. The mixture should look smooth and satiny. Beat in the vanilla extract. Reduce the mixer speed to low and add the dry ingredients and the milk alternately, adding the dry mixture in 3 portions and the milk in 2 (begin and end with the dry ingredients).
  • Scrape a little less than half of the batter into the bowl with the melted chocolate and, using a rubber spatula, stir to blend thoroughly.
  • If you want to go for the gingko pattern, scrape all of the white batter into the pan and top with the chocolate. If you want a more marbled pattern, alternate spoonfuls of light and dark batter in the pan. When all the batter is in the pan, swirl a table knife sparingly through the batters to marble them.
  • Bake for 60 to 70 minutes, or until a thin knife inserted deep into the center of the cake comes out clean. Transfer the Bundt pan to a rack and let cool for 10 minutes before unmolding, then cool the cake completely on the rack.

2 1/4 cups chocolate wafer crumbs
2 1/2 tablespoons water
1 tablespoon vegetable oil
1 1/2 cups smooth light ricotta cheese
4 ounces light cream cheese, softened
1 1/4 cups granulated sugar
3/4 cup low-fat sour cream
2 eggs
2 tablespoons flour
2 teaspoons instant coffee, dissolved in
1 tablespoon hot water
2 tablespoons semi-sweet chocolate chips
2 teaspoons water

Steps:

  • Preheat oven to 350°F Spray a 9-inch springform pan with cooking spray.
  • To make crust: in a bowl, stir together all crust ingredients. Press onto bottom and partway up side of prepared pan.
  • To make filling: in a food processor, purée all filling ingredients until smooth. Pour into crust.
  • To make marble: in a small microwave-safe bowl, heat chocolate with water on high in the microwave for 20 seconds. Stir until smooth. Drizzle over cheesecake; using a knife, marble the batter.
  • Bake in centre of oven for 40 to 45 minutes or just until centre of cheesecake is still slightly loose. Cool on a wire rack to room temperate. Refrigerate for 2 hours or until chilled.

1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
2 cups heavy cream, whipped
2 tablespoons instant coffee granules
1 tablespoon hot water
1/2 cup chocolate syrup

Steps:

  • In a bowl, combine crumbs and butter. Press firmly onto bottom and 11?2 inches up sides of foil-lined 5x9-inch loaf pan. Beat cream cheese in large mixing bowl until light and fluffy. Add milk and vanilla; mix well. Fold in whipped cream. Spoon half into another bowl and set aside. Dissolve coffee in hot water; fold into remaining cream cheese mixture, then fold in chocolate syrup. Spoon half chocolate mixture over crust, then half reserved cream cheese mixture. Repeat layers. Cut through layers with a knife to swirl chocolate (pan will be full). Cover and freeze 5-6 hours or overnight. To serve, lift out of pan, remove foil, and cut into slices. Fun Fact: Crush cookies or crackers in a food processor, not too many at a time, for evenly fine crumbs. Rather have no cleanup? Put cookies or crackers in a zipper bag, seal air out, and roll with a rolling pin.

1 teaspoon baking powder
5 egg whites
1 dash salt
1 1/4 cups graham cracker crumbs
4 ounces sweet baking chocolate, grated

2 teaspoons vanilla extract, divided
2 teaspoons instant coffee granules
1/2 teaspoon water
1 cup whipping cream
1/4 cup powdered sugar, sifted
2 ounces sweet baking chocolate, grated

Steps:

  • Combine 1 cup sugar and baking powder in a small bowl. Stir well and set aside.
  • Beat egg whites and salt at a high speed of an electric mixer until foamy. Gradually add the reserved sugar mixture, 1 tbsp at a time, beating until stif peaks form and the sugar dissloves (2 to 4 minutes). Gently fold in graham cracker crumbs, 4 ounces of grated chocolate, pecans, and 1 tsp vanilla. Spoon into a buttered 10-inch pie plate. Bake at 350 degrees for 35 minutes or until lightly browned. Cool completely on a wire rack.
  • Combine the remaining 1 tsp vanilla, coffee granules and water, stirring until the coffee granules dissolve. Combine coffee misture, whipping cream, and powdered sugar in a large mixing bowl. Cover and chill at least 2 hours.
  • Beat the whipping cream mixture until stiff peaks form; spoon into the center of the pie. Spread evenly, leaving a 1 inch border around the edge of the pie. Sprinkle with 2 oz grated chocolate. Cover and chill 1 hour.

  • In a medium size bowl, beat the cream cheese and butter together until light and fluffy. Add the sugar into this gradually and beat until the sugar is well incorporated.

  • Directions For Brownies:
  • Preheat oven to 350°F
  • Lightly butter an 8-inch square nonstick baking pan.
  • In a heavy, small sauce pan, heat together the baking chocolate and butter over low heat until the mixture is smooth.
  • Remove the pan from the heat and cool slightly.
  • In a large bowl, beat together the eggs and sugar until they are slightly thickened. This should take 2 minutes.
  • Mix in the flour, baking powder and salt then add the chocolate-butter mixture and the vanilla and almond extracts.
  • Stir in chocolate chips and macadamia nuts. Pour about 1 1/4 cups of the chocolate batter in the prepared pan then use a rubber spatula to spread the cream cheese mixture over chocolate batter.
  • Take a large spoon and gently place the remaining chocolate batter over top of cream cheese mixture.
  • Using the pointed tip of a knife, gently make swirls by making large S shapes for a marbled design through the batter.
  • Bake for 30 minutes or until tester toothpick inserted into center comes out with only a few moist crumbs attached. Remove the pan from the oven, place on a rack, and allow to cool.
  • When cool to the touch, take a sharp knife and cut them into squares.
