3 tablespoons brandy
Pastry for single-crust pie (9 inches)
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1-1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon white pepper
5 cups sliced peeled tart apples
2 tablespoons lemon juice
TOPPING:
1/2 cup all-purpose flour
1/2 cup sugar
6 tablespoons cold butter, cubed
3/4 cup grated aged (dry) Jack or Gouda cheese
1/4 cup blanched almonds
Vanilla ice cream

Steps:

  • In a small bowl, combine raisins and brandy; cover and let stand at room temperature overnight., Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. In a large bowl, combine the brown sugar, flour, cinnamon, nutmeg and pepper. Add the apples, lemon juice and raisin mixture; toss to coat. Transfer to pastry., Combine flour and sugar in a food processor. Add butter; cover and pulse until coarse crumbs form. Add cheese and almonds; pulse just until combined. Sprinkle over filling., Bake at 375° for 50-60 minutes or until apples are tender and topping is golden brown. Cover edges with foil during the last 30 minutes to prevent overbrowning if necessary. Serve warm with ice cream.

1 tablespoon lemon juice
¾ cup white sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place sliced apples in a large bowl; sprinkle with lemon juice, if desired. In a small bowl, mix together white sugar, 2 tablespoons flour, cinnamon, and nutmeg. Sprinkle mixture over apples and toss until apple slices are evenly coated. Stir in raisins and walnuts (optional). Transfer mixture into pastry shell.
  • In a small bowl ,mix together 1/2 cup flour and brown sugar. Cut in butter or margarine until mixture is crumbly. Sprinkle mixture over apple filling. Cover top loosely with aluminum foil.

3 pounds baking apples, such as Golden Delicious, Cortland or Mutsu
2/3 cup packed light brown sugar
4 tablespoons unsalted butter

1/4 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg

Steps:

  • For the dough: Pulse the flour, granulated sugar and salt in a food processor until combined. Add the butter and pulse until the mixture resembles yellow cornmeal mixed with pea-sized bits of butter. Add the egg mixture and pulse until the dough just comes together. (If the dough is very dry, add up to 1 extra tablespoon cold water.) Remove the dough, gently pat it into a round, wrap it in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour and up to 2 days.
  • For the filling: Meanwhile, put the lemon juice in a medium bowl. Peel and core the apples; cut each in half, and cut each half into 4 wedges. Add the apples and brown sugar to the bowl with the lemon juice, and toss.
  • Melt the butter over medium-high heat in a large skillet. Add the sugared apples and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.
  • Strain the apples in a colander set over a medium bowl to catch all the juices. Shake the colander to extract as much liquid as possible. Return the juice to the skillet and simmer over medium heat until it has thickened and lightly caramelized, about 10 minutes.
  • Toss the apples with the thickened juice, cinnamon, salt, cloves, ginger and nutmeg in a medium bowl. Set aside to cool completely. (The cooled filling can be refrigerated for up to 2 days or frozen for up to 6 months.)
  • For the streusel topping: Whisk the flour, sugar and salt together in a medium bowl. Add the butter and rub it into the flour mixture with your fingers until it has been absorbed. Mix in the almonds.
  • To assemble and bake the pie: Position a rack in the lower third of the oven and place a baking sheet on it. Preheat the oven to 375 degrees F. On a lightly floured work surface, roll the dough into a 12-inch circle. Layer it between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.
  • Ease the dough round into a 9-inch pie pan. Fold and crimp the edges as desired. Add the filling, and spread it out to make an even layer. Squeeze handfuls of the streusel topping, and drop clumps of it on top of the filling to completely cover it.
  • Bake the pie on the preheated baking sheet until the crust and streusel are golden brown, about 1 hour. Let it cool on a cooling rack for at least 3 hours before serving. (The pie keeps well, covered, at room temperature for 24 hours or refrigerated for up to 4 days.)

1 cup all-purpose flour
½ cup packed brown sugar
½ cup white sugar

7 Granny Smith apples - peeled, cored and sliced

½ cup white sugar
3 tablespoons all-purpose flour

  • Place rack in lowest position in oven. Heat oven to 450 degrees F ( 230 degrees C).

  • Place pie on cookie sheet in oven to catch juice droppings. Bake for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and bake for 45 minutes to one hour; bake until center of pie has no resistance. If top starts to get too dark, cover with piece of foil. Cool on wire rack before serving.

Steps:

  • Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. 3/4 teaspoon ground cinnamon or apple pie spice
1/4 teaspoon salt
2 1/4 cups all-purpose flour

1 1/2 sticks (12 tablespoons) cold unsalted butter, cut into pieces

  • Make the filling: Toss the apples with the granulated sugar and lemon juice in a bowl. Melt the butter in a large skillet over medium-high heat.   • For the Filling: In a large heatproof bowl, toss together apples, granulated sugar (use 1 cup if your apples are very tart), salt, vinegar, and spices. Let stand at room temperature, stirring occasionally, for at least 3 hours, or refrigerate (covered) up to 24 hours.
  • Stir flour into macerated apple mixture, then set a colander over another bowl and drain, reserving liquid. Transfer liquid to a small saucepan; return apples to bowl. Bring liquid to a boil over medium-high heat, whisking constantly, until thickened to the consistency of loose pudding, 1 to 2 minutes. Stir back into apple mixture.

1 teaspoon cinnamon
1/4 teaspoon nutmeg (my addition)
3/4 cup flour

9 inches unbaked pastry shells

Steps:

  • Preheat oven to 350 degrees F.
  • Prick pastry shell several times with a fork.
  • Place sliced apples in unbaked pastry shell.
  • Combine 1/2 c of the sugar w/ cinnamon and nutmeg; sprinkle over apples.
  • Combine remaining 1/2 cup sugar with flour; cut in butter until crumbly.
  • Sprinkle crumb mixture over apples.

  • CRUST.

  • With a pastry blender or two knifes cut in the cold shortening until it looks like crumbs.

  • Add more water if needed.
  • Gently gather dough together into a ball and wrap in plastic wrap.
  • Chill in refrigerator for at least 30 minutes.
  • Roll dough and place into a 9 inch pie plate.
  • PIE FILLING:.
  • Mix apples, 1/3 cup sugar, flour, cinnamon and nutmeg together in a bowl then place in unbaked pie crust. (Note: Lately I sometimes I add an egg wash to the crust to make it more crispy but the pie is equally as good without).
  • TOPPING:.

BASIC PIE CRUST:
2-1/2 cups flour (white all-purpose)
Dash of salt
1/2 cup butter, chilled
1/2 cup shortening
Ice water (fill 1 cup but use only enough to moisten dough)
APPLE FILLING:
7 to 8 large Granny Smith apples, peeled (depending on size of apple & size of pie dish, have about 3 lbs. available)
3/4 cup sugar
4 tablespoons flour
Dash of salt
1 to 2 teaspoons cinnamon (depending on how much you like)
1 tablespoon butter (put dollop on top before covering with top crust)
1 beaten egg (you won't use all of it, just enough to brush on pie before baking)

Steps:

  • In a deep bowl, work the butter and shortening into the flour and salt with your hands until you see marble-sized lumps form. Think mixed nuts, but no bigger than almonds. Add ice water a little at a time, sort of "fluffing" the flour. Keep your movements light, as if you are tossing dressing into a salad with your hands. When the dough feels moistened enough, do a "squeeze test" and when it holds together you're done. Do not overwork the dough! It takes very little time and you'll be tempted to keep touching it, but don't! Now divide the dough in half, form each half into a disk shape and roll flat and thin to fit your pie dish. Sprinkle flour under and on top of your dough, and keep rolling surface and pin free from gunk to keep dough from sticking. Trim excess crust to about 1 inch from the dish edge with a scissors., Slice half of the apples directly into the pie, arranging to remove extra space between slices. Cover with half of your other ingredients (sugar, flour, cinnamon, salt), then slice the remaining apples and cover with second half of ingredients. Add dollop of butter on top, cover with top crust, seal and crimp edges, then brush with beaten egg (this gives the pie a nice golden brown shine; be careful not to let egg pool in crevices.) Use a knife to poke vent holes in the top (get creative here with a pattern), then bake at 425 degrees for 15-20 minutes. Turn oven down to 375 degrees and bake for another 30-40 minutes until juice bubbles. Keep an eye on it as it bakes. If it gets too brown, turn down the temperature. To be sure it's done, poke with a knife to make sure apples have softened. Do not overbake or apples will turn mushy.

1 cup white sugar, divided
2 tablespoons all-purpose flour
6 cups thinly sliced peeled apples
2 cups water
3 -4 tablespoons lemon juice, bottled is fine
1 pie crust
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground mace
1/2 cup butter, softened

Steps:

  • Preheat the oven to 375.
  • In a large bowl, (at least 8 cups) combine 2 cups water and the lemon juice, as you cut up the apples put them in the water. This will keep them from browning. When you are finished cutting them up, drain off all the water.
  • Combine 1/2 cup of the sugar, and the 2 tablespoons of flour. add to the apples.
  • Grease a pie tin. Line it with the pie crust. Fill with the apple/flour mixture.
  • In separate bowl combine remaining 1/2 cup sugar, the 1/2 cup flour, cinnamon, ginger, and mace. Cut in butter until crumbly. Pat onto the top of the apples. Cover the edge of the pie with foil.
  • Bake for 30 minute then remove foil. Bake 30 minute more or until topping is golden.
  • Enjoy this decadent delight!
