GRANDMA'S LAYERED CUSTARD PUMPKIN PIE RECIPE
This non-traditional pumpkin pie is flavored with only 2-3 tablespoons of pumpkin puree. As the pie bakes, it magically turns into three distinct custard-like layers.

Steps:
- Whip the egg whites until stiff and set aside.
- Combine pumpkin, flour, egg yolks, sugar, salt, and spices. Blend milk into this mixture adjusting the amount according to the size of the pie pan you are using. 1 c. is plenty for an 8-inch pie but you may need more for a 9-inch pie plate.
- Mix in egg whites carefully. The mixture should be thoroughly blended but no more. (I use a hand mixer.)
- Pour into a partially baked pie shell. Bake at 350˚F for 40-50 minutes. The pie should be set with the slightest jiggle when done. The top should be a deep golden brown. If cooked too long, the filling will pull away from the crust as it cools.
- Allow the pie to cool and refrigerate before serving. If the layers are distinct when you slice it, you did it right!

MOM'S SPICED PUMPKIN PIE
This is a spicier version of pumpkin pie. This recipe has been in our family for over 50 years and is always much enjoyed at holiday meals. The fresher your spices, the better this will taste! Serve with whipped topping, if desired.

- Preheat oven to 450 degrees F (230 degrees C).
- In a bowl, mix the eggs, evaporated milk and pumpkin. In a separate bowl, mix the sugar, flour, salt, ginger, cinnamon, allspice and cloves. Stir into the pumpkin mixture. Pour into the pie crust.
- Bake in the preheated oven 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking 45 minutes, until a knife inserted in the center of the pie comes out clean. Cool on a metal rack.

Steps:
- Preheat oven to 160C/320F and line the base and sides of a 20x20cm/8x8inch square tin.
- Whisk the egg whites with the cream of tartar until stiff. Scoop out and place in a clean bowl.
- Using the same mixing bowl, whisk the egg yolk and brown sugar until paler in colour.
- Add the vanilla, cinnamon, nutmeg and pumpkin and whisk for 30 seconds until combined.
- Add the melted butter and whisk for 1 minute.
- Add flour and mix on slow to incorporate.
- Then add the evaporated milk in slowly to the mixture mixing.
- Add the egg whites in three lots folding in after each addition so that there are no white streaks or clouds of white.
- Pour into the prepared tin and bake for 60-70 minutes (until the centre of the cake is no longer wobbling). Cool completely. Serve with icing sugar on top.
