3 whole (6 split) chicken breasts, bone-in, skin-on
12 ounces Montrachet goat cheese, with garlic and herbs
Fresh basil leaves
Good olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees.
  • Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached.. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

Filet Mignon with Balsamic Syrup and Goat Cheese image

1 1/2 cups balsamic vinegar
3 tablespoons sugar
2 tablespoons butter
6 (5 to 6-ounce) filet mignon steaks (each about 1-inch thick)
Salt and freshly ground black pepper
2 ounces soft fresh goat cheese

Steps:

  • Boil the balsamic vinegar and sugar in a heavy small saucepan over medium-high heat until reduced to 1/3 cup, stirring occasionally, about 18 minutes.
  • Meanwhile, preheat the broiler. Melt the butter in a heavy large skillet over medium-high heat. Sprinkle the steaks with salt and pepper. Cook the steaks to desired doneness, about 3 minutes per side for medium-rare. Transfer the steaks to a baking sheet. Crumble the cheese over the steaks and broil just until the cheese melts, about 1 minute. Sprinkle with pepper.
  • Transfer the steaks to plates. Drizzle the balsamic sauce around the steaks and serve.

Balsamic Grilled Chicken Finger Sandwiches with Sundried Tomatoes and Herbed Goat Cheese Spread image

2 1/4 pounds boneless chicken breasts
1 cup balsamic vinegar
1/4 cup extra-virgin olive oil
2 cloves garlic, minced
Salt
Pepper
1 cup sundried tomatoes, soaked for 15 minutes in hot water
8 ounces creamy goat cheese
1/4 cup sour cream
2 tablespoons chopped fresh oregano leaves
2 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh thyme leaves
1 pound foccacia bread

Steps:

  • Combine the chicken breasts, vinegar, olive oil, and garlic. Season with salt and pepper. Marinate for at least 4 hours or overnight.
  • Preheat the grill.
  • Remove the chicken from the marinade. Place the chicken on the grill and grill for 4 minutes per side, or until the juices run clear. Remove the chicken from the grill and set aside.
  • In a food processor, combine the sundried tomatoes, goat cheese, sour cream, oregano, basil and thyme. Process until well blended. Season the cheese mixture with salt and pepper. Set aside.
  • Slice each chicken breast half in half. You should have 18 pieces that are each approximately 2 ounces. Cut focaccia into 18 (3-inch by 3-inch)squares. Cut each square in half horizontally. Spread the sundried tomato goat cheese spread on the bottom half of each piece of focaccia. Top the spread with a piece of chicken. Place the top piece of bread on top of the chicken. Serve at room temperature.

Found this in Cooking Light and surprise, everyone liked it (that's rare in our house). My DS uses plain cream cheese instead of the goat cheese but my DH & I like the slight tang of the goat cheese.

1/2 cup balsamic vinegar
1/4 cup red wine
2 teaspoons brown sugar
1 teaspoon soy sauce
3 (6 ounce) boneless skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
cooking spray
1 tablespoon olive oil
1 large red onion, sliced
1 (3 ounce) package goat cheese (we like Chavrie)
3 kaiser rolls
1 cup arugula, trimmed (optional)

Steps:

  • Combine the vinegar, soy sauce, red wine and brown sugar in a small saucepan over medium heat. Bring to a boil, stirring until the sugar disolves. Cook until reduced to 1/2 cup (about 12 minutes). Remove from heat and cool slightly.
  • While the vinegar cooks, spray a large non-stick skillet with non-stick cooking spray and heat on med-high heat. Sprinkle the chicken with the salt and pepper and brown to desired doneness, at least 4 minutes per side. Remove form the skillet and cover, keeping it warm. Add the olive oil to the skillet and spread around to coat the bottom well, add the onion and cook, stirring often to prevent burning, till brown or carmelized. Remove from heat.
  • Thinly slice the chicken. Spread a thin layer of cheese over the bottom of each roll, divide the chicken between each roll and top with the onion. Drizzle each with a small amount of the vinegar mixture(about 1 Tbsp.) and top with the arugula, if desired.

Warm Balsamic Vinegar Chicken Salad With Goat Cheese image

I was looking for a way to use my expensive Balsamic Vinegar and Goat cheese. Here it is! You can substitute any greens in this salad, it really seems to be the vinegar that makes the salad. I tried putting some raw mushrooms in this and it didn't go too well, I've also tried adding raw tomatoes to the end product of this salad as well as the cooked ones and that seems okay. If your kale is too bitter or weird add a smattering of salt or lemon juice. If you don't have white wine add whatever (decent) wine you have. You don't have to use fresh ground salt and pepper but I always do.

3/4 lb boneless skinless chicken breast, cut into bite size pieces
2 ounces crumbled goat cheese
2 blanched kale leaves (or boiled and cooled)
1/4 cup blanched spinach (or boiled and cooked, you can also use thawed frozen spinach or raw spinach)
1/4 cup crushed or diced, fresh or canned tomato (if using fresh use one small tomato and also add two tablespoons of chicken broth at the same time y)
2 tablespoons chopped walla walla onions (or other sweet)
1 large garlic clove, crushed or finely chopped (you can also use coarsely chopped roasted garlic in place of the raw but use twice as much)
1/4 cup balsamic vinegar
1 tablespoon olive oil
1 teaspoon fresh ground pepper
1 pinch sea salt
3 tablespoons white wine
1/4 cup chicken broth

Steps:

  • Heat Olive oil on low - medium heat for about two minutes, before shimmering add onions, cook about one minute and add garlic, chicken, pepper and salt. Cook until chicken is mostly done then add wine, vinegar and chicken broth, cook three or four minutes until everything is well mixed and heated, add tomatoes (if using fresh tomatoes add them and broth). Heat through and turn up heat to just above medium, simmer lightly five to ten minutes.
  • Add about two tablespoons of balsamic vinegar to the lettuces and kale (and spinach if using fresh) and mix thoroughly.
  • Assemble Lettuce mixture, cooked spinach, goat cheese and balsamic chicken mixture from pan in bowls and enjoy!
  • cooking times are approximately I have no idea how long this took me.

2-3 tbsp olive oil
5 cloves garlic, minced
11 ounces goat cheese
1/2 cup plus 1 tbsp balsamic vinegar
14 fresh basil leaves julienned plus extra for garnish
salt & ground pepper
4 boneless, skinless chicken breasts
1 tbsp butter

Steps:

  • Preheat oven to 400 degrees. Heat 1 tbsp olive oil in a saute pan, add garlic & saute for 1 minute until golden. Remove from heat & place garlic and remaining oil in a mixing bowl. Add goat cheese, 1 tbsp balsamic vinegar & basil to garlic. Mash together with a fork & set aside. Heat a large saute pan on med. high. Sprinkle chicken with salt & pepper. Add 2 tbsp olive oil and chicken to the pan. Cook for 4 -5 min on each side until golden brown. Remove from heat & save pan for the sauce. Put chicken in a casserole dish. Generously spread goat cheese mixture over each breast dividing equally. Place casserole in oven for about 8-10 min while you prepare the sauce, Place pan on med. high heat and when hot add 1/2cup balsamic vinegar. Scrape bits off the bottom of pan and reduce sauce for about 1 minute until thick & syrupy. Turn off heat & add butter, stirring until combined. Remove chicken from oven and check if cooked through. Goat cheese should be melted and soft. Drizzle balsamic syrup over the breasts & garnish with a basil leaf & serve.

1/4 lb bacon, cut into 1/2 inch pieces
1 small onion, thinly sliced
2 garlic cloves, minced
1 (14 1/2 ounce) can crushed tomatoes
1 (14 1/2 ounce) can diced tomatoes
1 -2 tablespoon dried oregano
1 -2 tablespoon dried basil
2 -3 tablespoons dried parsley flakes
1/4 cup balsamic vinegar
1 tablespoon sugar
4 ounces goat cheese, crumbled
4 boneless skinless chicken breasts

Steps:

  • Preheat the oven to 350°F.
  • Cook the bacon until some of the fat is rendered and add the onions. Cook until the bacon is crispy and the onions are just caramelized. Add the garlic and cook for another 30 seconds to 1 minute.
  • Remove the pan from the burner. Add the cans of tomatoes, the oregano, basil, parsley, balsamic vinegar, and sugar to the bacon, onions, and garlic. Mix to blend well. (Sauce can be prepared ahead of time and saved in the refrigerator).
  • Put the chicken in a glass baking dish. Pour the sauce over the chicken.
  • Bake for 30 minutes.
  • Sprinkle the goat cheese over the chicken and bake for another 30 minutes.
  • Serve over pasta with the sauce.
