QUINOA, OATMEAL, FRUIT AND NUT BREAD - ABM
Excellent toasted! I used leftover Recipe #414395 in this bread. It has apples, nuts and dried fruit. I also added additional fruit and nuts at the end of cycle of the bread machine. I used Back to Nature Nantucket Blend which has pistachios, almonds, cranberries, cherries, raisins. It is good! You can use whatever mixture you enjoy. If using sugar take note the dough won't be as sticky.

Steps:
- Place all ingredients except fruit and nuts in bread machine according to manufactures directions. Using 4 cups to start and adding the 5th if dough is too wet.
- Dough will be sticky.
- When dough cycle is done remove, punch down on a well floured surface and add fruit and nuts and shape it into ball. Or add the fruit and nuts at the cycle of fruit and nuts on the bread machine.
- Place on an two oiled loaf pans. Smooth side up folding the sides and tuck them underneath.
- Brush the top part very lightly with water and give a score a couple slices across the top.
- Let it rise to about double its size 45 minutes.
- Bake for 30 minutes at 400 degrees.
- Let bread cool completely before you slice it.
- Enjoy!

Steps:
- Place all the ingredients in the pan according to the order in the manufacturer's instructions. Set crust on dark and program for the Basic cycle; press start. (This recipe is not suitable for use with delay timer.).
- When the baking cycle is complete, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.
- To cook quinoa: rinse quinoa well to remove the bitter outer coating. Boil quinoa using one part of quinoa and two parts of water. (i.e. 1 cup quinoa plus 2 cups water; yields 3 1/2 cups boiled quinoa). Boiling time is 20 minute for white quinoa, dark quinoa takes a little longer.
QUINOA BREAD (VEGAN + GLUTEN-FREE)
Steps:
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Place the quinoa in a blender or food processor and whizz until you get a fine powder.
- Transfer into a large bowl.
- Place the oats in the blender or food processor and whizz until you get a fine powder.
- Add to the bowl.
- Add the baking powder, bicarbonate of soda and salt and mix well.
- Add the water and vinegar and mix again.
- Transfer the mixture to a loaf tin (I used a one-pound loaf tin) lined with greased baking paper.
- Scatter over seeds to decorate, if desired.
- Bake in the oven for around 30 minutes, until risen slightly and an inserted skewer comes out clean.
- Leave to cool on a wire rack before putting away to store.
- Keeps well in the fridge for up to a few days. If not eaten on the day it's made, it's best toasted before eating.

QUINOA BREAD RECIPE

- Preheat oven to 400 degrees F and grease 8" x 5" loaf tin with butter or coconut oil well.
- In a high-speed blender or food processor, grind quinoa for a few minutes until flour forms. Transfer to a large mixing bowl along with oat flour, baking soda, baking powder and salt; stir very well. Add butter or coconut oil and stir until it is incorporated with dry ingredients in small pieces.
- In a medium bowl, whisk milk, maple syrup and vinegar. Pour into a bowl with dry ingredients and mix well with spatula.
- Transfer to a prepared loaf tin, level and sprinkle with sesame seeds if desired. Bake for 60 minutes loosely covered with parchment paper for the first 30 minutes to prevent top from burning.
- Remove from the oven and let cool for about an hour. Then loosen the sides with a knife, flip the tin and give a few gentle pats on a bottom. Bread should slide out and cool off completely before slicing.

- Add all the ingredients for the dough to your bread machine in the order suggested by the manufacturer and process on the dough cycle.
- Remove the dough after the cycle ends and place on a lightly floured work surface.
- With a floured rolling pin, roll out the dough into an 8-by-12-inch rectangle.
- Cut into 2-inch squares.
- Place on a nonstick or greased tray, cover, and let rise in draftfree area about 30 minutes.
- Heat 1-inch of oil in a large saucepan or skillet until it reaches 365 degrees F on deep-frying thermometer.
- Fry 3 or fritters at a time 10 to 15 seconds on one side until golden.
- Carefully flip fritters and fry until lightly browned, 5 to 7 seconds.
- Drain on crumpled brown paper bags or on several layers of newspaper covered with a sheet of paper towel.
- Sprinkle confectioners' sugar over fritters.
- Serve warm.

Based on a recipe from Madge Rosenberg's book, The Best Bread Machine Cookbook Ever - Ethnic Breads. She says in its introduction, "Because it is so assertive, this chewy bread should be sliced thin to go with salty ham or strong cheese. For a traditional Danish open-faced sandwich (smorrebrod), spread with butter, then top with thinly sliced roast beef and a dollop of prepared horseradish thinned with sour cream. Measurements are for the large 1 ½ pound loaf; measurements for the small (1 pound) loaf are in parentheses.

- Fit the bread pan with the kneading paddle.
- Add milk, butter, honey, eggs and cider vinegar to the bread pan.
- Add all remaining ingredients, except yeast, to medium-sized bowl and stir together. Add to bread pan.
- Add yeast to bread pan and place in the Cuisinart Convection Bread Maker.
- Press Menu and select Gluten Free.
- Select Medium crust (or to taste).
- Select dough size.
- Press start to mix, knead, rise, and bake.
- Tip: For best results, while dough is kneading, scrape the sides of the bread pan with a rubber spatula to fully incorporate ingredients.
- When cycle is completed, remove bread from machine and transfer to wire rack to cool. Bread is easier to slice when cool.

The Andean countries of Bolivia, Peru and Ecuador supply the healthy gluten-free quinoa grain (although this recipe also calls for bread flour). This is a sweet, cake-y bread, but protein-rich and vitamin-rich as well. Serve on a platter with sliced mango, pineapple or berries. For best flavor, make sure your ground cloves are fresh. Makes a 1 1/2 pound loaf.
