Two 8-ounce blocks cream cheese, softened
1/4 cup jarred pesto
2 burrito-size spinach tortillas
2 burrito-size whole wheat tortillas
2 burrito-size jalapeno-Cheddar tortillas
1 cup spinach leaves, chopped
One 6-ounce jar marinated artichoke hearts, chopped
1/4 cup sliced green olives
1/4 cup sliced sun-dried tomatoes
4 slices Swiss cheese
8 large slices pepperoni
8 large slices salami
8 large slices spicy capicola
4 slices pepper jack cheese
1 cup arugula
6 mini sweet peppers, slice thin
1/2 cup chopped hot cherry peppers

Steps:

  • For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
  • For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. Refrigerate the rolled tortillas for at least 2 hours and up to 12 hours.
  • Unwrap and slice each tortilla into 1-inch segments/pinwheels. Arrange on a platter and serve.

These Vegan Pinwheels are the ultimate party food appetizers! Loaded with a mock 'chicken bacon' cheese-y creamy ranch filling, veggies, seeds. These easy tortilla roll-ups will become your new favourite appetizer recipe. Quick & easy to make, easy to transport. Perfect for picnics, parties, game days and holidays! Serve cold.

1/3 cup of my 5 Minute Vegan Ranch dressing (LINK HERE)*
1/3 cup vegan cream cheese, I used Daiya for this recipe
227 grams vegan chicken pieces, chopped small, I used Tofurky lightly seasoned plant based chick'n*
1 (227 g) can of water chestnuts, drained, rinsed and chopped small
1/4 cup red onion, diced
1/4 cup red pepper, diced
1 celery stalk, diced
1/3 cup imitation bacon bits, or your favourite vegan bacon bits
3 large burrito size flour tortillas (use gluten free tortillas if needed)
1/3 cup or so sunflower seeds, I buy mine roasted and salted
1/3 cup or so dried cranberries, chopped (optional but tasty)

Steps:

  • First make my 5 minute vegan ranch dressing and chill until needed.
  • Prep all your veggies and vegan chicken. Chop them small. Add to a large mixing bowl along with the ranch dressing and cream cheese. Mix well. Taste for seasonings add salt and pepper if needed.
  • Spread an even layer of the filling on a flour tortilla. Sprinkle with some sunflower seeds and dried cranberries. Roll up TIGHTLY! (A little will spill out the sides that's normal) Repeat with remaining 2 tortillas.
  • Cover with plastic wrap and chill the unsliced rolls in fridge for 1 hour up to 5 hours. Slice into one inch or so pinwheels using a serrated knife. Enjoy! Makes approximately 24-30 pieces, 8-10 per log.
  • You can serve these vegan appies as is or leave out the cranberries and enjoy with a side of salsa! Either way it's a win win! Lovely for your kids lunch box, next picnic, super bowl party or your holiday Christmas platter!

1/3 cup finely chopped onion
1 tablespoon butter
3 cups cubed day-old bread
1/4 teaspoon celery salt
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
1 large egg, lightly beaten
10 bacon strips

Steps:

  • In a small skillet, saute onion in butter until tender. In a large bowl, combine the bread cubes, celery salt, garlic powder, salt, pepper and onion mixture; toss to mix evenly. Add egg; toss to coat bread cubes. Roll into ten 1-1/4-in. balls. Wrap a bacon strip around each ball. Secure with a toothpick. Repeat with remaining ingredients., In a large skillet, cook bacon roll-ups on all sides over medium heat for 18 minutes or until bacon is crisp and a thermometer inserted into stuffing reads at least 160°. Drain on paper towels.

16 ready-to-serve fully cooked bacon strips, warmed if desired
8 flour tortillas (8 inches), room temperature
4 cups chopped lettuce
2 cups chopped tomatoes (3 small tomatoes)
2 cups shredded cheddar cheese
1/2 cup ranch salad dressing

Steps:

  • Place 2 bacon strips across the center of each tortilla. Top with lettuce, tomatoes and cheese; drizzle with salad dressing. Fold 1 side of the tortilla over filling and roll up.

1/2 pound bacon (approximately 10 slices)
8 ounces cream cheese, softened
2 scallions, thinly sliced
Freshly ground black pepper
5 slices white bread
Toothpicks

Steps:

  • Slice bacon in half to form twenty strips. In a small bowl combine softened cream cheese with sliced scallions and pepper. Remove crusts from bread. Line up 4 slices of bacon, slightly overlapping to form a square. Using a rolling pin, flatten the bread. Place the bread slice on top of the bacon. Spread the bread with the cream cheese mixture. Roll up bread and bacon as you would a rug. Secure with 4-5 toothpicks about an inch apart. Assemble remaining roll ups and place on baking sheet. Freeze until firm. Slice rollups into 4-5 pieces each secured with toothpick. Either refrigerate or freeze until ready for use. Preheat oven to 425 degrees. Place roll-ups on broiler pan so that fat collects in bottom pan. Bake until crisp, about 20-30 minutes.

2 packages cream cheese, softened
1 package ranch dressing mix
Freshly ground black pepper
5 flour tortillas
1/2 cup finely diced green bell peppers
1/2 cup finely diced red bell peppers
2 green onions, sliced

Steps:

  • Mix the cream cheese, ranch dressing mix and the black pepper together thoroughly.
  • Spread the mixture on the tortillas, and then sprinkle over the diced bell peppers and green onions. Roll up tightly, wrap in plastic wrap and refrigerate until party time (for at least 1 hour).
  • Slice into small wheels and serve.

Two 8-ounce packages cream cheese, softened
4 ounces jarred salsa (hot)
4 green onions, finely sliced
4 large flour tortillas
10 slices bacon, cut into small pieces and cooked till crisp
16 thin slices deli ham

Steps:

  • In a medium bowl, mix together the cream cheese, salsa and onions until fully combined. Spread the tortillas with the mixture, leaving a 1/2-inch edge. Top each with bacon and ham, then roll into tight cylinders and wrap in plastic wrap. Refrigerate for at least one hour. Remove from fridge, discard the plastic wrap and cut each roll into 1-inch pieces, discarding the uneven ends (or eating them while preparing, like I did!). Each roll should yield eight pieces. If you like, before cutting, stick toothpicks in the rolls at 1-inch intervals; it makes serving a snap.

Make this vegan 'bacon' from strips of aubergine and a selection of spices. Take note: it's highly addictive - you'll want to add 'faken' to everything

1½ tbsp olive oil
1 tbsp soy sauce
1 tbsp vegan Worcestershire sauce (we used Henderson's Relish)
½ tbsp maple syrup
1 tsp smoked paprika
big pinch ground cumin
½ large aubergine , cut in half lengthways, then cut into long strips about 3mm thick (use a mandoline if you have one)

Steps:

  • Heat oven to 120C/100C fan/gas 1 and line two roasting trays with baking parchment.
  • Mix together the oil, soy sauce, Worcestershire sauce, maple syrup, smoked paprika and ground cumin. Lay the aubergine slices on the roasting trays and brush both sides with the spice mixture.
  • Roast for 45-50 mins until partially crisp- they'll crisp up more when cool.
