MACARONI WITH MUSHROOM SAUCE
A very easy and quick recipe for all you mushroom lovers. I sometime add a 3.8 oz can of sliced black olives (drained) just for a change. I usually serve with crusty bread and a salad and a glass of wine. Enjoy!

Steps:
- Melt butter in large skillet; add olive oil.
- Add mushrooms, garlic and red pepper flakes;saute over medium heat for 10 minutes.
- Add broth, wine, balsamic vinegar and bouillon cube to the mushroom mixture; increase heat to high cooking for 10 minutes more.
- Remove from heat and stir in parsley and salt.
- While sauce is cooking, cook macaroni as directed on package; drain well and return macaroni to pot.
- Add mushroom sauce to macaroni and stir well; add cheese and toss to mix.

MACARONI LOAF WITH MUSHROOM SAUCE
Ultimate comfort food! The one hour bake time gives you plenty of opportunity to put together the delicious mushroom sauce and whatever other sides you're serving.

- Prepare the loaf: Preheat oven to 350F,. Grease a 5x9 inch loaf pan - set aside
- Cook macaroni according to package directions. Drain. Gently combine all ingredients and pour into the prepared pan.
- Place loaf pan in pan of water inside oven. Bake 1 hour or until a knife inserted in the center of the loaf come out clean.
- Meanwhile, For the Sauce: Heat oil and butter in a large skillet. Add mushrooms and cook until golden brown. This will take about 5 minutes. During the last minute, add the garlic and a pinch of salt.
- Add the wine and stir to deglaze the pan, stirring up all the brown bits from the bottom of the pan. Cook until most of the wine evaporates.
- Add broth, cream and parmesan cheese. Stir and bring to a simmer. Simmer for 3-4 minutes until slightly thickened. Stir in the thyme. Taste and adjust seasoning if needed.
CREAMY MUSHROOM MACARONI

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
- In medium saucepan over medium heat, combine butter, milk, mushroom soup and processed cheese. Stir until cheese is melted and mixture is smooth. Stir in cooked pasta. Pour into 2 quart baking dish and bake 20 minutes or until top is golden brown. Let stand 10 minutes and serve.

PASTA LOAF WITH MEAT SAUCE
This is really good basic recipe. Sometimes, I like to add in some garlic and chopped green chilies to the loaf or use Pepper Jack cheese. You can pretty much spice this up to your taste.

Steps:
- In large bowl, combine macaroni, bread crumbs, cheese and pimiento.
- In separate bowl, beat eggs.
- Add half-n-half, butter, onion, salt and pepper.
- Beat until well combined.
- Combine egg mixture with macaroni mixture, mixing lightly but thoroughly.
- Turn into a greast 9 x 5 inch loaf pan, smoothing top.
- Set pan in shallow pan with water.
- Bake at 350 for 1 hour or until set.
- Meanwhile, prepare meat sauce by sauteeing meat and onion in skillet until browned.
- Drain off fat.
- Add all remaining ingredients.
- Stir until well blended and heat through.
- Thin with more milk, if desired.
- Remove macaroni loaf from pan onto serving platter.
- Cut into slices.
- Serve with meat sauce.

MACARONI CHEESE WITH MUSHROOMS

Steps:
- Fill a large sauté pan with boiling water. Tip in the macaroni and cook according to the pack instructions. (It may take slightly longer than suggested). Meanwhile, trim, wash and slice the leeks, quarter the mushrooms and roughly chop the tomatoes.
- Drain the pasta and keep warm. Heat the oil in the pan. Add the leeks and mushrooms and fry for 4-6 mins until the leeks are tender. Toss in the tomatoes at the last minute. Season with salt if you want to and black pepper. Stir in the macaroni and let it warm through, then crumble the cheese over.
