CHICKEN AND BOWTIE PASTA WITH ASIAGO CREAM SAUCE



Chicken and Bowtie Pasta with Asiago Cream Sauce image

A tasty mix of chicken, garlic, mushrooms, prosciutto and pasta are complemented by a thin but flavorful Asiago cream sauce.

1 (16 ounce) package farfalle (bow tie) pasta
2 tablespoons vegetable oil
1 pound skinless, boneless chicken breast halves - cubed
2 ¼ cups heavy cream, divided
¼ cube chicken bouillon, crumbled
¾ cup grated Asiago cheese
½ tablespoon cornstarch
2 tablespoons butter
¼ cup chopped prosciutto
1 tablespoon chopped fresh garlic
¼ cup sliced mushrooms
½ tablespoon parsley flakes

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente. Drain, and set aside.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat. Cook and stir chicken cubes, reducing heat if necessary, until no longer pink in center and juices run clear. Set aside.
  • In a medium saucepan, bring 2 cups cream to a simmer, stirring often. Whisk in bouillon and cheese until well blended and bouillon has dissolved completely. Dissolve cornstarch in 2 tablespoons water, and whisk into mixture. Cook and stir 2 minutes more, then remove from heat and set aside.
  • Melt butter in a medium skillet over medium high heat. Stir in prosciutto, garlic, and mushrooms and cook until mushrooms are tender, about 3 minutes. Add chicken, reduce heat, and continue cooking until chicken is heated through. Return sauce to the stove and add remaining 1/4 cup cream and parsley flakes. Heat through.
  • To serve, place pasta in a large mixing or serving bowl. Add chicken and mushroom mixture and pour in cream sauce. Toss well, and serve.

1/8 teaspoon chicken base
1 1/4 cups asiago cheese
1 tablespoon cornstarch
2 ounces water
1/4 cup butter
1/2 cup red onion, diced
1/2 cup pancetta, chopped
1 tablespoon garlic, chopped
3/4 cup green onion, tops only
3/4 lb chicken, grilled and sliced
2 lbs farfalle pasta, cooked
8 ounces heavy cream (whipping cream)
1 tablespoon parsley, chopped

Steps:

  • To Make the Sauce: Heat cream to very hot and just bubbly (but not a boil).
  • Add chicken base and cheese.
  • Stir constantly with a wire whip and bring temperature back to just bubbly.
  • Dissolve cornstarch in the cold water and add to sauce.
  • Bring to a slow simmer to cook out starch.
  • Transfer sauce to a container, cover and refrigerate until needed.
  • To Make the Pasta Dish: Saute red onion in butter for a few seconds then add pancetta and garlic.
  • Add chicken, green onions and pasta.
  • Deglaze the pan with the cream.
  • Add asiago cream sauce.
  • Heat thoroughly.
  • Garnish with parsley and serve.

1/4 cup diced onion
1 teaspoon chopped garlic
2 tablespoons all-purpose flour
1 3/4 cups chicken broth
2 1/4 cups heavy cream
1 teaspoon salt
1 teaspoon black pepper
1 pinch cayenne pepper
1/4 cup white wine
1/4 cup shredded asiago cheese
1 ounce butter

Steps:

  • In a saucepan melt 2 ounces butter.
  • Add onions and chopped garlic.
  • Saute over medium heat for 5 minutes.
  • Add flour and mix thoroughly.
  • Cook for 4 minutes, then add the chicken broth, let thicken and add the cream and reduce for 20 minutes.
  • Add the salt, pepper and cayenne.
  • Whisk in white wine and let simmer for another 5 minutes.
  • Turn off the flame and whisk in the other 1 ounce of butter and asiago cheese.
  • Cool in refrigerator.

24 large shrimp (peeled and deveined)
3 cups sliced mushrooms (washed and sliced ( 1/4 inch thick)
1 1/2 tablespoons roasted pine nuts
6 cups fresh spinach leaves
6 cups cooked vermicelli
4 tablespoons butter
2 tablespoons fresh garlic (minced, up to 4)
lemon butter sauce
1 tablespoon shallot (minced)
1 tablespoon fresh garlic, minced
1/2 cup dry white wine
1 cup heavy cream
1/2 cup lemon juice (freshly squeezed)
1/8 teaspoon white pepper
1 lb lightly-salted butter (cut into, tablespoons)

Steps:

  • Preheat oven to 350 degrees. Wash spinach and remove stems before drying leaves between paper towels. Set aside. Spread pine nuts over bottom of sheet pan and place pan in oven on top rack. Roast until golden brown, approximately 2 to 4 minutes. Remove from oven and set aside.
  • Peel and devein shrimp. Set aside. Wash and slice fresh mushrooms. Set aside. Boil pasta in large pot of water to al dente stage according to directions on package. Set Aside.
  • Prepare lemon butter sauce: Melt 1 tablespoon butter in large skillet over medium-high heat. Sauté shallots and garlic until translucent. Add white wine and reduce slightly more than 1/2, whisking occasionally. Add cream and reduce by 1/2. Add lemon juice and reduce by 1/2. Add white pepper. Reduce heat to low. Add remaining butter 2 tablespoons at a time, whisking continuously after each addition to completely incorporate butter. Continue to simmer, whisking until sauce just coats spoon.
  • In large skillet over medium-high heat melt the 4 tablespoons of butter. Add garlic and sauté until garlic is translucent. Stir in mushrooms, shrimp, and pine nuts. Sauté several minutes or until shrimp are done and show color. Remove skillet from heat and gently stir in spinach. Place warm pasta on plate with shrimp mixture to the side. Pour lemon sauce over pasta, permitting a bit of sauce onto shrimp.

7 tablespoons unsalted butter, divided
1/4 cup flour
1 1/2 cups milk
1 tablespoon Worcestershire sauce
2 teaspoons dry mustard
1/4 teaspoon salt
1/8 teaspoon ground red pepper
1/8 teaspoon hot red pepper sauce
1/2 lb asiago cheese, grated
6 ounces parmesan cheese, grated
4 ounces sharp white cheddar cheese, shredded
1/2 cup parsley
1/3 cup fresh chives
1 cup panko breadcrumbs, toasted

Steps:

  • Heat oven to 350 degrees F.
  • Heat a large pot os salted wter to a boil over high heat.
  • Cook pasta until al dente, 10-12 minutes.
  • Drain; cool.
  • Place in a large bowl.
  • Melt 5 T of the butter in a medium saucepan over medium low heat.
  • Add flour; cook, stirring, 3 minutes.
  • Whisk in milk; raise heat to high.
  • Heat to a boil, reduce heat to medium.
  • Cook, stirring occasionally, until thickened, 6 minutes.
  • Add Worcestershire sauce, mustard, salt red pepper and hot pepper sauce.
  • Pour sauce over pasta;mix.
  • Add Asiago, 4 ounces of th Parmesan cheese, cheddar, parsley and chives; toss to mix.
  • Pour into a buttered 2 1/2 quart baking dish.
  • Mix bread crumbs with remaining Parmesan cheese in small bowl.
  • Melt remaining 2 T butter in small saucepan; pour over bread crumbs.
  • Toss to mix; sprinkle over pasta.
  • Bake until crumbs are lightly browned and sauce is bubbling, 40-50 minutes.

2 cups heavy cream
1 cube chicken bouillon
1 tablespoon Asiago Cheese
1 tablespoon cornstarch, mixed with equal parts water
1 cup chopped sun-dried tomatoes
1 (16 ounce) package bow tie pasta
¾ cup bacon
¼ cup butter
1 cup diced red onion
2 cloves garlic, chopped
1 cup chopped green onion
1 pound grilled skinless, boneless chicken breast, diced
1 cup heavy cream
2 tablespoons chopped fresh parsley

Steps:

  • In a large saucepan over medium heat, cook 2 cups cream until just bubbling. Watch carefully, to ensure that it doesn't boil over. Stir in bouillon and Asiago cheese. Stir with a whisk until dissolved. Add cornstarch mixture, and simmer until sauce is thickened, stirring constantly. Mix in the sun-dried tomatoes. Set aside, or cover and refrigerate for later use.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

Stir in green onions, chicken and 1 cup cream. Cook, stirring, until cream is heated through. Add Asiago cream sauce, and heat through. The sauce is the key to this recipe....HEAVY CREAM, PARMESAN CHEESE, WINE, etc. with CHICKEN & SHRIMP, cooking the penne pasta is the easy part. This recipe makes an ample amount, and too tricky for me to attempt to scale it down. I am posting it to take advantage of Recipezaar's calculations to reduce a recipe. I'm not sure how much this recipe feeds, but I am going to guess at 8-10 servings.

1 teaspoon Dijon mustard
1 teaspoon dill
1 teaspoon chopped rosemary
1 cup marsala wine
1/4 teaspoon cayenne pepper

1 ounce pancetta or 1 ounce bacon
18 shrimp, peeled and deveined
12 ounces grilled chicken breasts, sliced
16 -24 ounces penne pasta, cooked
3 teaspoons chopped pimiento
6 ounces butter
1 teaspoon chopped shallot
1 pinch salt and pepper
1 cup parmesan cheese
1/2 teaspoon paprika
6 sprigs fresh rosemary

Steps:

  • For Gratinata Sauce: Saute butter, garlic, and rosemary until garlic begins to brown.
  • Add Marsala wine and reduce by one-third.
  • Add remaining ingredients, reduce by half of the original volume.
  • Set aside.
  • For Penne Rustica: Saute pancetta until it begins to brown.
  • Add butter, shallots, and shrimp.
  • Cook until shrimp are evenly pink but still translucent.
  • Add chicken, salt, pepper, and mix thoroughly.
  • Add gratinata sauce and 1/2 cup parmesan cheese.
  • Simmer until sauce thickens.
  • In a large bowl, combine shrimp& chicken mixture with the cooked pasta.
  • Pour into a large casserole dish or roaster.
  • Top with remaining cheese, pimientos and sprinkle with paprika.
  • Bake at 475 degrees for 10 to 15 minutes.
  • Remove and garnish with fresh rosemary sprig.
