Steps:

  • Heat oven to 350 degrees F.
  • Cook macaroni as directed on package. Meanwhile, melt butter in large saucepan on low heat. Stir in flour; cook 2 min. or until bubbly. Gradually stir in milk; cook on medium heat until mixture comes to boil, stirring constantly. Simmer on low heat 3 to 5 min. or until thickened. Add 1 1/2 cups cheese; cook and stir 5 min. or until melted.
  • Drain macaroni. Add to sauce with bacon; mix lightly. Spoon into 1 1/2 quart casserole; top with remaining cheese.
  • Bake 20 min. or until heated through.

This is a recipe we have been making for awhile now. The original recipe was from Tyler Florence. My family loves the white cheddar and bacon in the dish; it gives this macaroni and cheese a very unique, but comforting, flavor. This is most definitely not a 'light' recipe as we use extra sharp white cheddar and whole milk and always add extra bacon. It comes out bubbly and creamy and no one can wait to dig in.

1 lb elbow macaroni
4 cups milk (I recommend whole milk)
8 sprigs thyme (divided)
6 garlic cloves (divided)
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
6 cups white cheddar cheese (shredded & divided)
1/4 cup flat leaf parsley (chopped)
6 slices bacon (sliced into 1/4 inch pieces)
1 large onion (diced)

Steps:

  • Cook the elbow macaroni until al dente, 8 or 9 minutes, then drain and set aside.
  • Preheat oven to 400 degrees and spray 3-quart baking dish with non-stick cooking spray.
  • Heat milk with 3 sprigs of thyme and 4 cloves of crushed garlic in a small pan, do not boil the milk.
  • In a large skillet, melt the butter over medium high heat. Once melted, whisk in the flour and cook, stirring constantly for about 1 minute.
  • Remove the thyme sprigs and garlic cloves from the milk then whisk the milk into the butter and flour mixture.
  • Continue to cook until the mixture is smooth, whisking constantly. Once smooth, stir in 4-1/2 cups of the white cheddar cheese. Continue to cook and stir until the cheese is melted. Add salt and pepper to taste.
  • Add in the cooked macaroni and the chopped parsley. Stir to coat the macaroni and incorporate all ingredients then pour into the prepared baking dish and top with the remaining cheddar cheese. Bake for 30 minutes.
  • Meanwhile, in a saucepan, cook bacon until crispy. Then add the onion, the remaining two cloves of garlic (chopped) and the remaining thyme (leaves only this time). Cook until the onions are soft, about 5 minutes. Season with salt and pepper.
  • When the macaroni and cheese comes out of the oven, spread the bacon and onion mixture over the top, serve and enjoy.

2 oz. PHILADELPHIA Cream Cheese
2 oz. KRAFT Extra Sharp Cheddar Cheese, grated
2 oz. KRAFT Colby & Monterey Jack Cheese
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
3 Tbsp. KRAFT Grated Parmesan Cheese
1/2 cup dry bread crumbs
season to taste

Steps:

  • Preheat the oven to 350. Cook the macaroni according to the package directions; omitting salt. Drain and set aside.
  • While the pasta is cooking, melt 3 tablespoons of butter in a large skillet over medium heat. Whisk in the flour, and cook 2-3 minutes, or until slightly golden and bubbly.
  • Slowly add the milk, followed by the half and half, whisking constantly to prevent lumps. Let the mixture bubble and thicken, then slowly add the chicken broth while continuing to whisk. Let cook 3-5 minutes, until thickened. Stir in the pepper, and cream cheese, and cook until the cream cheese has melted.
  • Remove from heat and stir in the cheddar, colby jack, mozzarella, and 2 tablespoons of parmesan cheese. Whisk until the cheese has melted. Stir the cooked pasta into the cheese sauce, then add the crumbled bacon, reserving about two tablespoons. Spoon the pasta mixture into an 8 x 8 baking dish.
  • Melt the remaining 1 tablespoon of butter in a small bowl, and whisk together the melted butter, bread crumbs, and remaining 1 tablespoon of parmesan cheese. Sprinkle the bread crumb mixture over the pasta, and top with the remaining bacon pieces.
  • Bake 15 minutes, or until the bread crumbs are toasted and the cheese sauce is bubbly. Serve hot.

1/2 cup butter
1/2 cup sifted flour
4 cups milk
2 -3 teaspoons hot sauce
16 ounces shredded sharp cheddar cheese

top evenly with shredded sharp cheddar cheese (My personal favourite)

Steps:

  • Cook macaroni according to box directions and set aside.
  • In a medium saucepan melt butter over low heat. Add flour and stir constantly until smooth.
  • Turn heat to medium and add milk stirring constantly until thick. (About 10 minutes).
  • Add hot sauce. Stir until mixed in evenly.
  • Add pasta, bacon and cheese. Mix until cheese melts, bacon is mixed in, and pasta is evenly coated.
  • Pour macaroni and cheese into a 9x13 baking dish and top according to taste.
  • Bake in preheated oven at 350 degrees for about 25-30 minutes. (If using parmesan cheese and breadcrumbs take it out when the top looks lightly browned. If using cheddar cheese topping take out when top becomes darkened, but not burnt.).

50g pine nuts
4 slices pancetta or bacon, chopped
400g macaroni or other short pasta
300ml pot double cream
200ml pot crème fraîche
200g gruyère or mature cheddar, grated
2 tsp Dijon mustard
green salad , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the pine nuts in a dry frying pan, gently toast for 2-3 mins, then tip onto a plate. In the same pan, add the pancetta or bacon and cook for a few mins until crisp.
  • Bring a large pan of salted water to the boil and cook the pasta following pack instructions until al dente. Drain, reserving a ladleful of the pasta cooking water for later.
  • Meanwhile, put the double cream, crème fraîche and half the cheese in a saucepan, stir together and gently warm through until the cheese has melted. Take off the heat, stir in the mustard and some seasoning to taste.
  • Tip the drained pasta into a large baking dish and stir in the cheese sauce, adding some of the pasta cooking water if it looks a little dry. Sprinkle the toasted pine nuts and cooked pancetta over the top, then scatter over the remaining cheese. Bake for 20 mins until the top is golden and bubbling, then serve with a salad, if you like.

1/2 cup onion, minced
1/2 lb bacon
3 tablespoons flour
1 1/2 cups milk

Steps:

  • Preheat the oven to 375 degrees F. Coat 2 baking dishes with the butter.
  • Place chopped bacon on a baking sheet and cook in oven until half cooked, about 10 minutes. Drain off excess grease, reserve bacon.
  • In a large pot of boiling, salted water, cook elbow macaroni until al dente, about 8 to 10 minutes. Strain, toss lightly in olive oil, reserve.

  • Place into buttered baking dishes. Top with remaining cheeses and place dishes on baking tray and place in the oven. Bake until golden brown, about 20 to 25 minutes. Let cool about 5 minutes, garnish with parsley and sage leaves and serve!

1 lb noodles, elbow, penne, farfalle
16 ounces , cheese. (I used jack and sharp cheddar)
1/2-1 lb of applewood smoked bacon, cooked but not too crispy & broken into bite size pieces
1 onion, pureed
cayenne pepper, salt & pepper to taste
frozen peas
1 cup heavy cream
3 -4 cups milk
2 cups crushed potato chips and seasoned bread crumbs, to cover
butter

Steps:

  • Cook bacon and set aside on paper towels to drain.
  • Cook noodles, al dente, drain and set aside.
  • For sauce: melt 3-4 tablesppons butter and whisk in equal amount of flour to form a paste.
  • Add the half cup or so of pureed, or finely chopped, onion and stir for minute or so to cook the onion.
  • Add the heavy cream and milk.
  • Cook until smooth.
  • Add the cheese, cubed or grated is fine, cook until melted and smooth.
  • Season with salt, pepper, and CAYENNE to taste.
  • Combine the sauce with drained noodles and stir in frozen peas.
  • Pour into baking dish and top with crushed mixture of chips and panko crumbs.
  • Cook for about 20 minutes at 400 and then top with a few pats of butter and continue cooking til bubbly and brown.

Chicken and Bacon Mac and Cheese image

When you need that cheesy creamy goodness of Mac and Cheese but want a little something extra, this version with chicken, bacon and tomato totally hits the spot!

1 1/2 tbsp olive oil
1 large onion (peeled and chopped)
3 chicken breasts (chopped into bite size chunks)
½ tsp salt
½ tsp pepper
3 cloves garlic (peeled and minced)
2 tbsp tomato puree (paste if you're in USA)
400 g tin of chopped tomatoes
1 tsp granulated sugar
1 litre hot chicken or vegetable stock
300 g elbow macaroni
90 ml double (heavy cream)
100 g grated cheddar cheese
100 g grated mozzarella cheese
8 rashers cooked (chopped streaky bacon)
3 tbsp panko breadcrumbs
1 tbsp freshly chopped parsley to serve (optional)

Steps:

  • Heat the oil in a large frying pan and add the onion. Cook on a medium heat for 5 minutes, until the onion starts to soften.
  • Add the chicken, then cook for 5 - 6 minutes until the chicken is sealed.
  • Add the salt, pepper, garlic and tomato puree. Stir everything together so that the tomato paste coats the chicken.
  • Add in the tinned tomatoes, sugar and stock. Stir and bring to the boil, then add in the macaroni.
  • Stir together, bring back to a gentle simmer and place a lid on. Simmer for 13-15 minutes, checking and stirring a couple of times during cooking, until the macaroni is cooked.
  • Once the macaroni is cooked, stir in the cream and sprinkle on half of each of the cheeses, followed by all of the bacon.
  • Stir together. Mix the remaining cheese with the panko and sprinkle on top.
  • Place under the grill (broiler) for 5-6 minutes until golden brown.
  • Sprinkle on the chopped parsley and serve!

1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

1 box (about 1 pound/454 g) of penne pasta, cooked and drained
1 lb(s) (454 g) of bacon, chopped
1 cup (250 ml) of water
4 clove of garlic, peeled and chopped
⅔ cup (160 ml) of flour
5 cup (1 ¼ L) of milk
1 lb(s) (454 G) of cheddar, shredded
2 Tbsp (30 ml) of Dijon mustard
2 Tbsp (30 ml) of paprika
1 tsp (5 ml) of hot sauce
1 Tbsp (15 ml) of Worcestershire sauce
A sprinkle of salt and lots of freshly ground pepper
4 slices of whole grain bread, torn into large pieces
olive oil to drizzle

Steps:

  • Preheat your oven to 350F (180C).
  • Toss the chopped bacon and water into a thick-bottomed stockpot over medium-high heat. By adding water you allow the bacon to gradually release its fat and brown evenly without burning. Continue cooking until the water evaporates and the bacon crisps nicely.
  • Remove the bacon from the pan and set aside, but leave the fat. Add the garlic and stir for several minutes to release its flavor. Add the flour and stir with a wooden spoon until it forms a smooth paste or roux. Cook for a few minutes more to toast the roux and allow it to develop a bit more flavor.
  • Add the milk and switch to a whisk for stirring. Whisk until the sauce is smooth again and continue cooking, and whisking, for about 5 minutes or so, until the sauce is quite thick.
  • Stir in the cheese, Dijon, paprika, hot sauce and Worcestershire. Season with salt and pepper.
  • Toss in the pasta and the reserved bacon, coat them well with the sauce and turn it all into a 9- X 13-inch (3.5 L) casserole or baking dish.
  • Toss the bread with a splash or two of olive oil, then sprinkle it over the cheese mixture. Bake until it is heated through and the bread is toasty brown, about 30 minutes or so.
  • If your house is anything like mine, they've already smelled the bacon and are lined up, waiting to share!
  • Freestyle Twist: Bacon is dandy but feel free to add your own twist by switching it for grilled chicken, lobster or ham! Toss in some peas or any other vegetable you have on hand add color and flavor to your personalized mac n' cheese.

1 tablespoon EVOO
12 ounces smoky bacon (12 slices), chopped
1 1/2 pounds ground beef sirloin
Coarse black pepper
1 onion, finely chopped
1/2 cup beef stock
3 tablespoons Worcestershire sauce
6 tablespoons butter
5 tablespoons flour
3 cups milk
4 cups shredded yellow Cheddar
1/3 cup organic ketchup, plus some for garnish
1/3 cup yellow mustard, plus some for garnish
2 tablespoons pickle relish, plus some for garnish
1 tablespoon hot sauce
Chopped iceberg lettuce
Diced tomatoes
Chopped raw white or red onions
Bread and butter pickle chips

Steps:

  • Bring a large pot of water to a boil for the pasta. Salt the water and cook the pasta shy of al dente, 5 to 6 minutes.
  • While the water comes to a boil, heat the EVOO in a Dutch oven or deep skillet over medium-high heat. Add the bacon and crisp. Remove the bacon with a slotted spoon and remove some of the drippings, leaving a thin layer. Add the beef, brown and crumble, but leave a few larger pieces. Season with salt and pepper. Once the beef has caramelized, add the onions and cook to tender. Add the stock and Worcestershire, then reduce the heat to low.
  • In a saucepot over medium to medium-high heat, melt the butter. Whisk in the flour, cook 1 minute. Whisk in the milk and season with salt and pepper. Thicken to coat the back of a spoon. Stir in the cheese. When the cheese has melted into the sauce, stir in the mustard, ketchup, relish and hot sauce. Combine the pasta with the sauce and fold in the meat. Place in a large casserole dish. Cool and store for a make-ahead meal.
  • To serve, preheat the oven to 375 degrees F. Bring the casserole to room temp then bake until brown and bubbly on top and golden at edges, 45 to 50 minutes.

Extra-virgin olive oil
6 slices bacon, cut crosswise into 1/2-inch pieces
3 tablespoons unsalted butter
1 onion, cut into 1/4 inch dice
Kosher salt
1/2 cup all-purpose flour
1 quart whole milk, plus more as needed
1/4 cup Dijon mustard
Tabasco or other hot sauce
1 pound medium shells or other short pasta
2 cups grated Cheddar cheese (about 8 ounces)
2 cups grated fontina cheese (about 8 ounces)
1 cup grated Parmesan cheese (about 4 ounces)

Steps:

  • Drizzle a bit of olive oil in a large saucepan. Add the bacon and set the pan over medium heat; cook, stirring occasionally, until brown and crisp, 8 to 10 minutes. Remove from the pan and drain on paper towels. Do not discard the bacon fat: Reserve that deliciousness!
  • Add the butter and onion to the pan with the bacon fat; season with salt and cook until the onion is soft and aromatic, 4 to 6 minutes. Add the flour and cook, stirring frequently, until the mixture looks like wet sand, about 3 minutes.
  • Slowly whisk in the milk, mustard and a few shakes of Tabasco. Season with salt and bring to a boil, then reduce the heat to low. Simmer until the mixture is slightly thicker than heavy cream, 6 to 8 more minutes.
  • Meanwhile, bring a large pot of well-salted water to a boil. Add the pasta and cook 1 minute less than the instructions on the package suggest. Taste it: It should be toothsome, with just a little nugget of hard pasta still in the center-this is al dente. Drain the pasta.
  • Add the Cheddar, fontina and Parmesan to the milk mixture and whisk to combine. Taste and adjust the seasoning, if needed, adding a little more milk if the mixture seems too thick. Stir in the cooked bacon and pasta. The mixture should be very creamy and flavorful. Serve immediately. (If making ahead, transfer to a baking dish or ramekins, then reheat in a 375 degree oven.)

Steps:

  • Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain.
  • Melt 2 tablespoons butter in large pot over medium-high heat. Add mushrooms and onion; sauté until vegetables are tender, about 5 minutes. Stir in flour, mustard, salt, and pepper; cook 1 minute. Gradually whisk in milk. Cook until sauce is smooth and slightly thickened, whisking constantly, about 3 minutes. Remove from heat. Add cheese and parsley; stir until cheese melts. Mix in pasta.
  • Sauté bacon in medium skillet over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towels to drain. Mix half of bacon into pasta and transfer to prepared dish. Sprinkle with remaining bacon.
  • Melt remaining 2 tablespoons butter in small saucepan over medium heat. Add breadcrumbs; sauté until beginning to brown, about 3 minutes. Sprinkle breadcrumbs over pasta. Bake until pasta is heated through and golden brown, about 20 minutes.
