Ingredients

1 (20-ounce) can lychees in syrup
2 1/2 cups Lillet (orange wine), chilled
2 teaspoons rosewater
1 teaspoon bitters (recommended: Peychaud's)
Orange twists or slices

Steps:

Puree half of the lychees and all of the syrup in a blender until all lychees are liquefied. Strain through a fine mesh strainer, pressing down to get the most from the lychees into a clean pitcher; discard the fibrous solids. Add the Lillet, rosewater and bitters. Refrigerate to chill thoroughly, if needed.
Pour into chilled flutes, martini, or fun juice glasses, and garnish with an orange twist or slice. Drink.

1/4 cup sugar
1/4 cup water
1 cup drained canned lychees (15 to 20, from a 16- to 20-oz can)
2 tablespoons fresh lemon juice
6 oz (3/4 cup) vodka (preferably Skyy)
1 1/2 oz (3 tablespoons) Cointreau or other orange-flavored liqueur
Special Equipment
a cocktail shaker

Steps:

Heat sugar and water in a 1-quart saucepan over high heat, stirring, until sugar is dissolved, then pour into a heatproof bowl set in a large bowl of ice and cold water. Let stand, stirring occasionally, until syrup is cold, about 3 minutes.
Purée lychees with sugar syrup and lemon juice in a blender until smooth, then force through a fine-mesh sieve into a bowl, pressing hard on solids and then discarding them. Fill cocktail shaker halfway with ice cubes and add lychee purée, vodka, and Cointreau. Shake 15 seconds and strain into Martini glasses.

You can adjust this recipe depending on how many mocktails you'd like to make. If just making for a few people you can use half the can of lychees and juice, or if you're making for more then use the full can, but reserve some lychees for decoration. Add them and the remaining ingredients to a blender except for the lemon lime and bitters drink.
Use the pulse button on your blender to make it into a nice crushed ice consistency. If you like it a bit runnier that's fine too - adjust the amount of ice to your taste. You can't really go wrong. It's going to taste amazing anyway!
Pour the mixture into cocktail glasses - about 3/4 full. Then top up with the lemon lime and bitters drink. Decorate with reserved lychees and mint. Enjoy!
