APPLE BREAD
I am lucky enough to live in a small community whose school district still allows us to send home-baked goods with our children. My daughter is in 7th grade now, but her classmates still beg her to have her mom send this special treat. It's a beautiful quick bread your family, friends, and all the neighbor children will love.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Prepare 2 loaf pans (8 1/2x4 1/2-inch loaf pans) with cooking spray.
- Mix flour, baking soda, salt, walnuts, and apples in a large bowl. Whisk oil, sugar, eggs, and cinnamon together in a small bowl; add to flour mixture and mix until just moistened. Evenly divide mixture between prepared loaf pans.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

AWESOME APPLE BREAD
This bread is so moist and flavorful that my kids even eat the ends, which for most quick breads I usually have to throw away. At Christmas, I make the mini loaves and give as gifts to my neighbors. The oil can be replaced with 1 cup of unsweetened applesauce. Still flavorful but not quite as moist. If possible, don't skip the walnuts, they really add to it.

Steps:
- Combine and set aside the oil, eggs, sugar, and vanilla.
- Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually.
- Add apples and nuts.
- Bake in 2 regular loaf pans or 3 foil loaf pans for 1 1/2 hours at 300 degrees.
- Cool 10 minutes in the pan.
- Sprinkle with sugar, if desired.
- Note: I bake it at 325 degrees for about 70 minutes.

DEBBIE'S AMAZING APPLE BREAD
I was given this recipe years ago by my friend Debbie. I've had it written down on a torn piece of paper for years and decided today that this recipe needs to be on AllRecipes. It is a moist, sweet, and delicious bread with a crispy crust. By far my favorite bread recipe!

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Beat eggs, sugar, vegetable oil, and vanilla extract in a mixing bowl; add apples.
- Mix flour, salt, baking powder, and cinnamon in a separate bowl; add to apple mixture and stir just until evenly combined into a thick batter. Pour batter into the prepared loaf pan.
- Bake in the preheated oven for 45 minutes. Cover loaf pan with aluminum foil; continue baking until a toothpick inserted into the center comes out clean, about 15 minutes more. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

- Grease and flour three 7-1/2x3-1/2x2-inch or two 8x4x2-inch baking pans. Set aside. In a medium bowl combine flour, soda, salt, cinnamon, and baking powder; set aside.
- In a large bowl combine eggs, apples, sugar, oil, and vanilla. Stir in flour mixture just until moistened. Pour batter into prepared pans. Bake in a 325 degree F oven for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool on wire racks. Wrap and store overnight before slicing. Makes 30 servings.
- Note: Golden Delicious, Rome, Granny Smith, Jonathan, or Newtown Pippin apples are a good choice for this bread.

- In a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. In a large bowl, beat cream cheese until smooth; beat in pudding. This recipe came from a children's book that someone at the school that I worked at copied for all the staff. It came with a small story of how an Italian woman in the author's parish would make many of these loaves to give out to the children to celebrate St. Joseph's Day. The bread is very moist and delicious.
