EASY CHICKEN AND POTATOES

Steps:
- Preheat oven to 400°F.
- Drizzle 1 tablespoon olive oil over the chicken thighs and season with lemon pepper seasoning.
- In a medium bowl, combine potatoes, carrots, onion, garlic, remaining olive oil, and salt & pepper to taste. Toss well.
- Place vegetables on a non-stick or parchment-lined baking sheet. Nestle chicken pieces in between the vegetables.
- Roast 45-50 minutes or until potatoes are tender and chicken reaches 165°F.
- Remove chicken from the pan and use a spatula to stir vegetables in the juices on the pan.
- Serve immediately.

- dredge each chicken breast in the flour that has been seasoned with 1/2 teaspoon of seasoned salt, shake off excess flour. dip in the beaten egg or brush with the egg. sprinkle 1/8 cup of Simply Potatoes Shredded Hash Browns on each breast, turn each breast over, sprinkle 1/4 cup of Simply Potatoes Shredded Hash Browns on each breast. Place the breast on a non-skid baking sheet. Place the pan of chicken in a preheated(350F) oven. Bake until internal tempature reaches 165F and the potatoes are nicely browned. Serve.

- Heat oven to 350 degrees. Saute chicken tenders in a little olive oil until lightly browned. Mix soup and sour cream together.Spread potatoes evenly in 8 to 10 inch casserole dish. Nestle chicken tenders down in potatoes. Pour soup mixture on chicken and spread evenly so that it will seep down into potatoes. Bake 30 mins, or until bubbly. Last 5 mins sprinkle cheese on top. Enjoy.

- 1. Start by cooking the chicken breasts until fully cooked through.
- 2. While chicken is cooking, add teriyaki sauce onto both sides of all chicken breasts. Use as much sauce as desired. (Recommended amount: About 3-4 teaspoons per side).
- 3. Add chopped garlic into pan and simmer for 1-2 minutes.
- 4. After garlic cooks for a few minutes, add one can of campbells cream of mushroom soup. Let simmer for 5-10 minutes, or until start of boiling.
- 5. Once soup starts to boil, immediately remove pan from hot stove and let sit. After stove cools, replace pan and keep warm on simmer/low heat.
- 6. Follow instructions on the simply potato original recipe bag. Once potatoes are fully cooked, dish out desired amount per person, and top with desired amount of chicken breasts. Top chicken and potatoes with the soup mixture, and enjoy.

ONE-PAN ROAST CHICKEN & POTATOES

- Heat oven to 190C/170C fan/gas 5. Stuff the chicken cavity with 2 lemon halves, 2 rosemary sprigs, 4 onion quarters and some seasoning. Put the chicken into a large roasting tray.
- Crush 3 garlic cloves, then add to a small bowl with the thyme leaves and olive oil, mix, then rub this all over the chicken with some seasoning.
- Arrange the potatoes around the chicken with the rest of the lemons and onions, rosemary and whole garlic cloves, and lemon thyme. Cook in the oven for 1 hr 20 mins, turning the potatoes in the pan once or twice. To check if the chicken is cooked, pierce the thigh with a skewer and the juices should run clear.
- Remove the chicken from the tray and place on a serving dish or board to rest for 15-20 mins. As you lift the chicken, let any juices pour back into the tray. Increase oven temperature to 200C/ 180C fan/gas 6 and cook the potatoes for a further 10-15 mins or until tender.
- If you want gravy, use a slotted spoon to remove the potatoes from the tray to a serving bowl, then use a potato masher to mash all the juices, lemons, herbs and garlic together in the roasting tray, adding a splash of water if it's too pulpy. Push this mix through a sieve, taste the gravy and add some more seasoning if you need to. Bring everything into the garden so everyone can help themselves.

5-Ingredient Fix Contest Entry. I came up with this idea when I had leftovers in the fridge and wanted to make something simple and comforting. We are gluten free and eat potatoes quite often. You can use regular Cambells type or a gluten free condensed cream of mushroom soup like Pacific Naturals. Its a great tasty dish at room temperature or hot and makes great leftovers.
