Poulet Sauté Chasseur, or Hunter's Chicken, crisp sauteed chicken served with a hearty sauce with the distinct flavour of with tarragon. A woodsy, French country classic.

Salt and pepper to taste
6 large Roma tomatoes
4 chicken legs, thigh & back attached
2 tablespoons olive oil (divided)
1 sprig fresh thyme
4 whole peppercorns
2 sprigs parsley
1 sprig tarragon
1 bay leaf
6 ounce piece of salt pork, cut into lardon strips
1/4 cup butter (divided)
1/2 pound raw mushrooms, sliced
2 shallots, chopped fine
2 cloves garlic, chopped fine
2 tablespoons (ish) brandy
1 cup dry white wine
2 cups veal stock (substitute: beef stock)
2 teaspoons chopped tarragon
1 teaspoons chopped parsley
Optional: 1 tablespoon cornstarch, mixed with two tablespoons of water
Optional: parsley & tarragon for garnish

Steps:

  • Blanch, peel, de-seed and chop tomatoes; comcassé (in small, seedless half inch cubes). Reserve until needed.
  • In the traditional method, each piece of chicken contains only one bone. To achieve this, remove first the back and then the thigh bone; cutting them away cleanly to the top of the leg joint. (This will help accelerate your cooking time and make it easier to eat.) Fold over the skin and flesh of thigh to form a neat package (you can tie it if you want) and reserve. In a small pot, add one tablespoon of olive oil, over medium heat, until liquid and hot and then add remaining bones (thigh, back and any extra bits) and brown well before turning (about 6 minutes/side). This is a brown stock recipe, be sure to get lots of colour on those bones.
  • While bones are browning, cut mushrooms, shallots, garlic and herbs, reserve remains (ie: ends of mushrooms, shallots, even the skins off the tomatoes for flavour). Then drain off excess fat from now browned and cooked, bones. Cover with water and return to stove over medium low heat, add thyme, whole peppercorns, parsley, one sprig of tarragon, and the bay leaf to stock as it begins to simmer. Add also the remains of the shallots, mushrooms, tomatoes etc. to stock to give it lots of flavour, simmering over low heat for about 30 minutes to reduce bay about half, while you cook the rest of the dish.
  • In a large, deep sauté pan, sauté lardons over medium heat until golden brown then remove, drain, and de-grease the pan. Reserve cooked salt pork cubes at room temperature. Do not rinse your pan, that golden colour on the bottom of the pan is FLAVOUR. (If you want, you can use the pork fat instead of butter, but it's mighty salty.)
  • Season the prepared chicken pieces with salt and pepper, over medium heat add half the butter and remaining olive oil to the pan. Once the pan is to temperature, seer chicken until brown, about 15 minutes on each side, basting chicken with butter and juices from the bottom of the pan (20 minutes per side if you are cooking bone-in). Watch that the bottom of the pan does not burn, butter has a higher smoke point than oil. Remove the now golden-brown chicken to rest on a platter or dish, uncovered, in a warm spot.
  • Drain any excess chicken fat from your pan and add mushrooms, shallots and garlic to the now golden, hot pan and season with pepper only. Add remaining butter, and saute until golden. Deglaze pan with brandy, scraping all the brown bits off the bottom to dissolve. Add white wine and reduce over medium heat by about two thirds. (In the photos, you will notice that I removed the mushrooms to deglaze the pan, you don't have to.)
  • Take reduced chicken stock in second pot, and strain liquid directly into pan, add veal stock and tomatoes continue to simmer over medium high heat, uncovered, about two minutes. Add salt pork lardons and stir to combine, as sauce simmers, the lardons to soften, add chopped tarragon and parsley to the sauce and stir, cooking over medium-low heat about 4 minutes. (NOTE: if sauce is not thickened to your liking, add optional cornstarch slurry to hot sauce to thicken) Check seasoning level, adjust as needed and immediately return the chicken to the pan, on top of the sauce to warm, and steam to be sure the chicken is hot, three to five minutes.

1 chicken, about 3 pounds
1/2 pound fresh shiitake or domestic mushrooms
6 shallots
1/2 cup flour
Salt and freshly ground black pepper to taste
1/4 cup olive oil
2 teaspoons mushroom or regular soy sauce
1 teaspoon dried thyme
1 teaspoon dried marjoram leaves
1 teaspoon dried tarragon
1 cup dry vermouth
1 1/2 cups chicken stock
1/4 cup tomato paste
1 cup canned crushed tomatoes
1 bay leaf

Steps:

  • Have the butcher cut the chicken into eight serving pieces.
  • Wipe the mushrooms clean and thinly slice the caps, discarding any tough stems. Peel the shallots and slice them thinly. Set aside.
  • Combine the flour and salt and pepper to taste in a shallow dish and set aside. Preheat the oven to 350 degrees.
  • Heat the olive oil in a Dutch oven or large flameproof casserole over medium-high flame. Dredge half of the chicken pieces in the seasoned flour, shaking off the excess. Carefully place the pieces in hot oil in the pot. Cook until lightly browned on all sides. Transfer to a platter lined with paper towels and repeat with the remaining chicken pieces.
  • When all the chicken has been browned, add the shallots and shiitakes to the pan and sprinkle with thyme, marjoram and tarragon. Saute over medium-high heat, stirring constantly, until the vegetables are wilted, about two to three minutes. Add the vermouth and cook until reduced by about half.
  • Return the chicken parts to the pan. Stir in chicken stock, tomato paste, tomato puree and bay leaf. Season with coarsely ground pepper and bring to a boil. Transfer the Dutch oven to the oven and cook for 25 to 30 minutes, until the chicken is done.

10 1/2 cups brown veal stock or brown chicken stock, enriched with browned trimmings
3 ounces carrots, medium chop
3 ounces onions, medium chop
2 tablespoons tomato paste
1 Bouquet Garni (thyme, parsley stems, peppercorns, bay leaf, all wrapped in cheesecloth)
9 ounces sliced mushrooms
1 shallot, small dice
2 ounces cognac
2 ounces white wine
20 ounces enriched stock
1 tablespoon tomato concasse
3 ounces unsalted butter
Salt and pepper to taste
1 tablespoon finely chopped tarragon
1 tablespoon finely chopped chervil

Steps:

  • Preheat the oven to 375 degrees. Quarter the chickens. Be careful to leave the breasts covered with skin. Be sure the oyster is left attached to the leg. Remove the thighbone and carefully cut off the drumsticks. Reserve until needed. In a large heavy bottomed stock pot, brown the bones and trimmings from the chickens with the chopped carrots and onions. Pour off the excess fat and moisten with the chicken or veal stock. Add the tomato paste and the bouquet garni. This produces an enriched stock for the sauce. Cook at a low simmer for 40 to 45 minutes, then strain and skim off any excess fat. Next gather all ingredients for the sauce, and measure out the wine and cognac. To assemble the dish, season the chicken with salt and pepper. In a large saute pan heat clarified butter and brown the chicken skin side down. When the chicken is browned, remove it from the pan and into a 375 degree oven. Remove excess fat from the pan, return the pan to the heat and saute the mushroom slices. After 2 minutes add the chopped shallots and saute for a couple of minutes longer. Remove the pan from the heat and add the Cognac. Return the pan to the heat and ignite the Cognac. When the flames have died down add the white wine. Reduce by half. Strain the reinforced stock and skim off any fat that has floated to the top. Add the stock to the mushroom mixture and continue reducing. Add the tomato concasse. When the sauce begins to thicken and coats the back of a spoon, swirl in the butter. Once the butter is incorporated and the chopped chervil and tarragon to taste. To assemble the dish, remove the chicken pieces from the oven. Remove the breastbone from the chicken breast. The advantage to removing the breastbone after cooking is that it helps the breast keep its shape and remain moist during cooking. Since breast tend to cook more quickly than thighs, removing the thighbone and leaving the breastbone intact during cooking ensures that the two are done at the same time. Place 1 piece of white meat and 1 piece of dark on a clean plate and cover with the sauce. Garnish with chopped chervil and tarragon and serve immediately.

This French bistro classic is easy to make at home and fabulous with creamy mash or crusty bread

1 tsp olive oil
25g butter
4 chicken legs
1 onion, chopped
2 garlic cloves, crushed
200g pack small button or chestnut mushrooms
225ml red wine
2 tbsp tomato purée
2 thyme sprigs
500ml chicken stock

Steps:

  • Heat 1 tsp olive oil and half of the 25g butter in a large lidded casserole.
  • Season 4 chicken legs, then fry for about 5 mins on each side until golden brown. Remove and set aside.
  • Melt the remaining butter in the pan. Add 1 chopped onion, then fry for about 5 mins until soft.
  • Add 2 crushed garlic cloves, cook for about 1 min, add 200g small button or chestnut mushrooms, cook for 2 mins, then add 225ml red wine.
  • Stir in 2 tbsp tomato purée, let the liquid bubble and reduce for about 5 mins, then stir in 2 thyme sprigs and pour over 500ml chicken stock.
  • Slip the chicken legs back into the pan, then cover and simmer on a low heat for about 1 hr until the chicken is very tender.
  • Remove the chicken legs from the pan and keep warm. Rapidly boil down the sauce for 10 mins or so until it is syrupy and the flavour has concentrated.
  • Put the chicken legs back into the sauce and serve.

8 rashers streaky bacon, chopped into large pieces
4 chicken breasts, cut into large chunks
200g pack baby button mushroom
1 tbsp plain flour
400g tin chopped tomato with garlic
1 beef stock cube
dash Worcestershire sauce
handful of parsley, chopped

Steps:

  • Heat a shallow saucepan and sizzle the bacon for about 2 mins until starting to brown. Throw in the chicken, then fry for 3-4 mins until it has changed colour. Turn up the heat and throw in the mushrooms. Cook for a few mins, stir in the flour, then cook until a paste forms.
  • Tip in the tomatoes, stir, then crumble in the stock cube. Bubble everything for 10 mins, splash in the Worcestershire sauce, stir through the parsley, then serve with mash or boiled rice.
