I was trying to find something nutritious but yummy, and then I came up with this oatmeal cookie recipe that you can have at breakfast, lunch, dinner, or for a snack.

1 ½ teaspoons shortening (such as Crisco®), or as needed
3 cups rolled oats
1 cup white sugar
1 cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¼ cup butter, melted and cooled
2 eggs
3 tablespoons milk
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 2 cookie sheets with shortening.
  • Stir oats, sugar, flour, baking soda, and salt in a medium bowl until combined.
  • Place butter, eggs, milk, and vanilla in a large bowl; mix well. Add the oat mixture to the butter mixture; stir until incorporated. Roll the dough into walnut-sized balls and place 2 inches apart on the prepared baking sheets.
  • Bake in the preheated oven until edges are golden, about 9 minutes.

I have not tried these cookies. I'm posting this for safe keeping. I found this recipe in The Breakfast Book.

3/4 cup vegetable shortening
1 cup brown sugar
1/3 cup granulated sugar
1/4 cup strong coffee
1 egg
2 1/2 cups rolled oats
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups all-bran cereal

Steps:

  • Preheat the oven to 350. Don't grease the baking sheets.
  • Put the shortening, sugars, coffee, and egg in a mixing bowl and beat until smooth and blended. Add the oats, flour, salt, and baking soda. Stir very well so the dough is well mixed.
  • Spread the All Bran cereal out on a piece of waxed paper. This is a sticky dough, so wet your fingers with cold water before pinching off about 2 tablespoons of dough at a time and rolling it in the All Bran. Don't worry if you can't get a heavy coating of cereal on each piece of dough; if just a little of the All Bran sticks, it will give a nice texture to the cookies.
  • Place the dough pieces about 1 1/2-inches apart on the baking sheets. Bake 12-15 minutes. Remove from the oven and cool on racks.

A hand held "bowl" of yummy oatmeal on the go! All the boys love the chocolate chip version best, but Mom loves the cranberries. Much healthier than commercially prepared breakfasts. Swim team loves them too! To ensure Gluten Free use GF guaranteed oats.

6 cups rolled oats
2 teaspoons baking soda
1/2 cup brown sugar
4 tablespoons vegetable oil
3 tablespoons unsweetened cocoa
4 teaspoons vanilla extract
1 cup flax seed meal
1 teaspoon cinnamon, heaping
1/2 teaspoon nutmeg
1 cup semi-sweet chocolate chips
2 1/4 cups milk, dairy free if needed
1 cup dried cranberries (omit cocoa powder and chocolate chips)

Steps:

  • 1) Add all dry ingredients to large mixing bowl, stir until well combined.
  • 2) Add Chocolate Chips and stir again until thoroughly distributed.
  • 3) Add in oil, vanilla, and milk, stirring to thoroughly moisten all ingredients.
  • 5) Let rest for aprox. half an hour while preheating oven to 350 degrees F.
  • 6) line baking sheets with parchment (or grease).
  • 7) Scoop dough with large ice cream/cookie scoop and drop onto prepared baking sheet. Flatten each cookie.
  • 8) bake for about 25-30 minutes or until firm. Allow to cool on the baking sheet for 5 minutes before removing to a flat surface to cool completely.
  • Note: Prep time does not include dough "rest".
