1 recipe pastry for a single 9-inch pie crust
1 large fresh peach, sliced into 8 pieces
1 teaspoon white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Roll pie pastry onto a cutting board. Cut crust into eight 4-inch circles using a cookie cutter. Place 1 peach slice in the center of each circle. Fold circle in half to enclose each peach slice; seal edges together. Place mini pies on a baking sheet.
  • Mix cinnamon and sugar together in a small bowl; sprinkle over mini pies.
  • Bake in the preheated oven until crust is lightly browned, 10 to 13 minutes.

  • Using a mixing bowl, dissolve jello in boiling water.
  • Whisk in yogurt.
  • Fold in Cool Whip.
  • Pour into crust and refrigerate several hours or overnight.

1 1/2 cups crumbled low-fat honey graham crackers (about 40 - 2 3/8 X 1 1/8-inch rectangles)
1/4 cup peach preserves
1 (6 ounce) container raspberry low-fat yogurt
1 (8 ounce) container frozen light whipped dessert topping, thawed & divided
1 (6 ounce) container fresh raspberries
2 medium peaches
1 (6 ounce) container low-fat peach yogurt

Steps:

  • Preheat oven to 350°F Lightly spray a deep dish pie plate with cooking spray.
  • Finely crush graham crackers & place in a small bowl. Add preserves and mix well.
  • Press crumb mixture evenly in the bottom and up the sides of pie plate. Bake for 12 minutes. Cool completely.
  • Place raspberry yogurt in a bowl. Fold in 1 cup of the whipped topping and spread over bottom of crust. Reserving some raspberries for garnish, sprinkle remaining raspberries over yogurt mixture.
  • Peel 1 peach and remove pit. Chop coarsely.
  • Place peach yogurt in a bowl & fold in 1 cup of whipped topping & the chopped peach. Spread over raspberries.
  • Freeze until firm, about 6 hours or overnight,.
  • When ready to serve, let pie stand at room temp for 20 minutes.
  • Peel remaining peach, pit and slice into 16 thin pieces. Arrange over pie top in an overlapping pattern, leaving center open.
  • Pipe remaining whipped topping in the center and around edges of pie. Garnish with remaining raspberries.
  • Cut, serve and enjoy!
  • Note: Cook time does not include freezing time.

2 tablespoons brown sugar
2 tablespoons sugar
1/8 cup water
1/4 cup water
1 teaspoon cornstarch
1 cup jiffy mix baking mix, plus
1 tablespoon jiffy mix baking mix
1/4 cup fat-free half-and-half
1/4 cup skim milk
1/4 cup Egg Beaters egg substitute
1 teaspoon sugar

Steps:

  • cinnamon and sugar for shaking on top.
  • Combine 1/8 cup water, peaches, both sugars in saucepan.
  • Bring to high heat and then lower to simmer.
  • Simmer for 2 minutes.
  • Stir only to heat evenly.
  • Combine cornstarch in 1/4 cup cold water to dissolve.
  • Add to peach mixture.
  • Spray glass pie plate with Pam and pour mixture into it.
  • Mix all the topping ingredients and drop by spoonfuls on peach mixture.
  • Shake on cinnamon and sugar.
  • Bake at 400º for 15 minutes, Lower temp to 350º and bake 7-10 minutes longer.
  • Serve with Dream Whip topping (made with skim milk) or Fat Free Cool Whip.

pastry for double-crust pie (your own or Pillsbury pie crusts)
1/2 cup brown sugar
1/2 cup white sugar
1/4 cup cornstarch
3/4 teaspoon ginger
1/2 teaspoon cinnamon
1 1/4 teaspoons vanilla
5 peaches, peeled and sliced
2 tablespoons lemon juice

Steps:

  • Preheat oven to 400-degrees F.
  • Prepare pastry or use pre-packages pastry and put bottom crust in a 9-inch pie pan.
  • In a large skillet combine sugars, cornstarch, ginger, cinnamon and vanilla.
  • Fold in peaches and simmer for 5 minutes or until filling thickens slightly.
  • Remove from heat and stir in lemon juice.
  • Spoon filling into prepared pie pan.
  • Fit top crust on top of filling.
  • Crimp and seal edges.
  • Cut slits in dough on top of pie.
  • Place pie on baking sheet and cover loosely with foil.
  • Bake for 15 minutes, remove foil and bake for 45 more minutes or until crust is brown and filling is bubbly.

  • In a measuring cup, combine ice cubes and water to measure 1 cup.
  • Stir into Jello mixture til ice is melted.

1 (8 ounce) package Philadelphia Cream Cheese or 1 (8 ounce) package neufchatel cheese
1/2 cup granulated sugar
1/8 teaspoon salt
1 tablespoon milk
1/2 teaspoon vanilla
2 tablespoons cornstarch
1 tablespoon lemon juice
1 (10 ounce) package frozen sliced strawberries, thawed
1 (15 ounce) can sliced peaches

Steps:

  • With a handmixer, combine the cream cheese, 1/4 cup of the granulated sugar, salt, milk and vanilla.
  • Spread this mixture over the bottom of the pie crust.
  • In small saucepan mix the rest of the sugar with the cornstarch.
  • Add strawberries and lemon juice.
  • Cook until thick.
  • Cool.
  • Spoon half of this mixture over the cream cheese layer.
  • Place the sliced peaches over this.
  • Spoon the remainder of the strawberries over the peaches.
  • Chill in the refridgerater.

1/2 teaspoon salt
1/2 cup butter
2 tablespoons sour cream
3 egg yolks
1 cup sugar
2 tablespoons flour
1/3 cup sour cream
3 peaches, peeled and sliced

Steps:

  • Preheat oven to 425.
  • Put 1 1/4 cups flour, salt, butter and 2 tablespoons sour cream in bowl of food processor and blend until they form a ball. Pat into a buttered pie tin and bake 10 minutes.
  • Lower oven temp to 350.
  • In medium sized bowl, beat egg yolks slightly then combine with the sugar, 2 tablespoons flour and 1/3 cup sour cream.
  • Arrange the sliced peeled, sliced peaches into the baked pie crust. Pour egg yolk mixture over peaches. Cover with aluminum foil and bake 35 minutes.
  • Remove foil from pie and bake 10 minutes more, or until filling is set.

When looking for peach pie recipes, all were very very high in fat. This is not low fat, but lower fat then others I found. And it was very tasty too! Modified from something I found in my Joy of Cooking. I used a store bought cinnamon pie crust that I happened to have. I think trying a whole wheat pie crust with this could be very good. The amount of peaches given is simply an estimate. Fill your pie crust with peach slices. You could certainly choose to use all sugar instead of the 1/2 splenda.

1 egg
2 tablespoons flour
1/3 cup Splenda sugar substitute
1/3 cup sugar
3 -4 cups sliced peaches
