  • Preheat oven to 350º.
  • Cook the broccoli until tender-crisp; drain very well.
  • Put in a greased 2-quart casserole.
  • Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon.
  • Bake for 20-30 minutes, until bubbly.

1 (14 ounce) frozen broccoli florets
1 egg, beaten
1/4 cup milk
1/4 cup onion, chopped
1/4 cup mayonnaise
1 1/2 cups cheddar cheese, shredded
1 (10 ounce) cream of mushroom soup
salt and pepper
1 1/2 cups Cheez-It crackers, crushed
1/2 cup butter, melted

Steps:

  • Boil florets for 3 minutes or until just tender.
  • Mix beaten egg, milk, onion, mayonnaise, cheese, mushroom soup, salt and pepper. Lightly fold in florets into this mixture.
  • Pour into a greased 3 quart casserole dish. Sprinkle crushed crackers on top and drizzle with melted butter.
  • Bake in a 325 degree oven for 30 minutes or until bubbly. Careful not to overbrown cracker crumbs.

1 jar low-fat American cheese
2 (10 ounce) boxes frozen chopped broccoli, partially thawed
1 1/2 cups instant rice
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9X13-inch baking dish with buttered flavored cooking spray.
  • Set aside.
  • Spray a medium skillet with butter flavored spray.
  • Saute celery and onion over medium heat until onion is clear.
  • Transfer onion and celery to a large mixing bowl.
  • Add soups and cheese.
  • Stir until well blended.

10 ounces frozen chopped broccoli
1 cup grated mild cheese
1 small onion, chopped
4 tablespoons of low sodium butter or 4 tablespoons no salted butter
3 1/2 cups cooked white rice

Steps:

  • melt butter in pan.
  • add chopped onions, saute until clear.
  • add brick of frozen chopped broccoli.
  • cover pan to help heat melt down/break up broccoli brick.
  • stir in can of soup.
  • stir in grated cheese.
  • once items above are well combined, add cooked white rice.
  • let simmer on low for 10 to 15 minutes.

1 cup sour cream
1 cup milk
1/2 cup shredded monterey jack cheese
1/4 cup seasoned dry bread crumb (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Place broccoli in greased shallow baking dish.
  • In medium bowl, whisk together salad dressing mix, sour cream, and milk.
  • Drizzle 3/4 cup dressing mixture over broccoli (reserve remaining dressing for another use).
  • Top with cheese.

8 cups fresh broccoli florets (about 1 pound)
1 Tablespoon butter
½ teaspoon onion powder
½ cup heavy cream
½ cup chicken broth
2 ounces cream cheese
1 cup cheddar cheese
½ cup gruyere or swiss
salt & pepper (to taste)
2 cups diced ham

Steps:

  • Preheat oven to 400°F.
  • Place broccoli in a large skillet with ½ cup water. Cover and simmer 4-6 minutes or until tender crisp. Drain well.
  • Meanwhile, melt butter in a medium skillet over medium heat. Add onion powder, cream, broth, and cream cheese. Cook until smooth and slightly thickened, about 5 minutes.
  • Remove from heat and stir in ¾ cup cheddar cheese and ¼ cup Swiss cheese until melted. Season with salt and pepper.
  • Toss broccoli and ham with the cheese sauce. Place in a greased 2 quart casserole dish and top with remaining cheese.
  • Bake 25-30 minutes, or until cheese is melted and bubbly.
