Having to live the "low sodium" lifestyle can be boring and flavorless until you discover zingy items like this barbecue sauce. I found this on a low sodium recipe site and I've made it even lower in sodium by changing a few of the ingredients.

1 cup no-salt-added ketchup
1 cup no-salt-added tomato sauce
2/3 cup brown sugar
2/3 cup apple cider vinegar
1/4 cup molasses
2 teaspoons liquid smoke
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon cinnamon
1/2 teaspoon black pepper

Steps:

  • Mix together all ingredients in large saucepan over medium heat.
  • Once the mixture is hot, reduce heat and simmer for 20 minutes, stirring occasionally.
  • Refrigerate any sauce not being immediately used.

This is a very flavorful bq sauce that has approximately 250 mg of sodium for the entire 3 cups!!! Most store bought sauces have over 400mg of sodium per 1-2 Tablespoons. This recipe was upgrade on 9/24/11 (For lower sugar use apple cider vinegar instead of balsamic vinegar)

BASIC SAUCE
1 15 oz. bottle of catsup (zero sodium)
1 8 oz can tomato sauce, no salt added (20 mg sodium)
1 Tbsp brown sugar
1/2 c molasses....160 mg sodium
1 1/2 tsp mesquite or hickory liquid smoke....10mg sodium
1 tsp bold & spicy mustard....60 mg sodium
1 tsp black pepper
1/2 tsp cumin
1 tsp onion granules or powder
2 tsp garlic granules or powder
2 tsp balsamicvinegar (use apple cider vinegar for lower sugar)
1 tsp sraricha hot sauce or chipotle chili powder
BUTTERY HONEY SAUCE
2 c basic sauce
1 stick unsalted butter
1/4 c honey
SOUTHWEST FLAVORS SAUCE
2 c basic sauce
1 Tbsp southwest spice rub-zero sodium
1 tsp smoked paprika
1 tsp chipotle chili powder for added heat if desired
SPICY MAPLE HONEY SAUCE
1 c basic sauce
1/2 c real maple syrup
1/2 c honey
1 tsp chipotle chili powder (no sodium)
1/4-1/2 c finely chopped pecans, opt

Steps:

  • 1. Pour ketchup into med. sauce pan, add all ingredients. Simmer for about 30 min.
  • 2. For BUTTERY HONEY sauce: Melt a stick of butter in small sauce pan, once melted add 2 c. of this low sodium BBQ sauce and 1/4 c. of honey. Stir and heat for about 5 min.
  • 3. For SOUTHWEST sauce: Mix ingredients together and simmer for 5 min.
  • 4. For SPICY MAPLE HONEY sauce: Mix ingredients together, simmer for 5 min. Add pecans when sauce cools.

LOW SODIUM PORK RIBS



Low Sodium Pork Ribs image

Low Sodium Pork Ribs with Sauce is succulent with meat falling off the bone. Smokey dry rubbed, slow cooked meat with Lo-So BBQ sauce.

1 rack Loin or Country-Style Pork Ribs
1/2 cup brown sugar
2 Tbsp paprika
1 Tbsp smoked paprika
1 Tbsp black pepper
1 Tbsp chili powder
1 Tbsp garlic powder
1 Tbsp onion powder
2 tsp dry mustard
1 tsp cayenne

Steps:

  • Add all of the ingredients to a bowl and whisk until combined. Rub generously into ribs or roasts and refrigerate for at least 3 hours or up to 48 hours.
  • Store the rub in an airtight container for up to 6 months.
  • Remove silver skin, rinse and then pat ribs dry with a paper towel.
  • Pat on my low sodium dry rub mixture on both sides (recipe below is for two racks of ribs).
  • Wrap ribs in foil with a tablespoon of water and a dash or two of liquid smoke. Place foil wrapped ribs on a baking tray. Wrap each rib rack individually if more than one.
  • Bake at 350°F for 2 1/2 hours. Then for the last half hour of cooking, slather with my BBQ sauce recipe. Use a brush or spoon to spread it evenly over the tops, leaving foil open and place back in oven for remaining time. I usually do this once more about 15 minutes later.
  • Broil for an additional 2-5 minutes if you want to get a crispier top and a little charring on the edges.

One 28-ounce can no-salt-added whole plum tomatoes (pureed)

Steps:

  • Combine the Worcestershire, vinegar, agave, onion powder, paprika, chili powder, garlic salt, liquid smoke, hot sauce, mustard, black pepper, garlic powder, cayenne and tomatoes in a medium sauce pot and bring to boil. Reduce the heat and simmer uncovered, stirring occasionally, until desired thickness is reached, 30 minutes to 1 hour.
