2 slices slightly stale whole wheat bread
1 pound lean ground lamb
1 egg
2 tablespoons chopped fresh parsley
2 cloves garlic
1 teaspoon ground cumin
1 teaspoon dried mint
½ teaspoon ground allspice
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon olive oil

Steps:

  • Tear up bread slices into the bowl of a food processor; process into fine crumbs. Add ground lamb and egg; process until blended. Add parsley, garlic, cumin, mint, allspice, salt, and pepper; process until evenly combined.
  • Roll lamb mixture into small meatballs.
  • Heat olive oil in a large skillet over medium heat. Cook meatballs in batches, turning occasionally, until browned on all sides, 4 to 5 minutes per batch. Transfer to a paper towel-lined plate using a slotted spoon.

1/2 lb all white meat lean ground turkey
1/2 yellow onion (finely chopped)
1/4 cup parsley (finely chopped)
2 garlic cloves
1/2 teaspoon oregano
1 egg
1/2 cup dried Italian seasoned breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
olive oil (for browning meatballs, not in mixture)

Steps:

  • Beat egg in large bowl.
  • Add all remaining ingredients.
  • Mush together well using your hands.
  • Form into 1/2 inch balls.
  • Heat small amount of olive oil (about 1 tsp to keep this recipe low-fat) in skillet.
  • Put half the balls into the skillet and cook until browned evenly on outside.
  • Remove and add remaining balls.

1 tbsp rapeseed oil
1 onion , finely chopped
2 carrots , finely diced
2 celery sticks, finely diced
2 garlic cloves , thinly sliced
1 fennel bulb , halved and thinly sliced, fronds reserved
500g carton tomato passata
500ml reduced-salt chicken stock
2 tbsp chopped parsley
broccoli and potatoes or pasta and salad , to serve
400g pack lean turkey breast mince
4 tbsp porridge oat
1 tsp fennel seed , crushed
1 garlic clove , crushed
spray of oil

Steps:

  • Heat the oil in a large non-stick frying pan with a lid, then tip in the onion, carrots, celery, garlic and fennel, and stir well. Cover the pan and cook over a medium heat for 8 mins, stirring every now and then. Pour in the passata and stock, cover and leave to simmer for 20 mins.
  • Meanwhile, tip the mince into a large bowl. Add the oats, fennel seeds and leaves, the garlic and plenty of black pepper, and mix in with your hands. Lightly shape into 25 meatballs about the size of a walnut. Spray or rub a non-stick pan with a little oil and gently cook the meatballs until they take on a little colour. Give the sauce a stir, then add the meatballs and parsley. Cover and cook for 10 mins until they are cooked through and the veg in the sauce is tender. Serve with broccoli and baby potatoes in their skins, or pasta and salad.

1 lb ground turkey (use white and dark meat)
1/4 cup fat-free evaporated milk (can use low-fat milk or fat-free milk)
1 -2 tablespoon minced fresh garlic
1/2-3/4 cup dry breadcrumbs (more if needed or use crushed cracker crumbs)
1/4 cup grated parmesan cheese (can use up to 1/2-cup)
2 green onions, finely chopped (can use a small yellow onion)
1/4 cup finely chopped fresh parsley
1 large egg, slightly beaten
1/2 teaspoon seasoning salt
1/2 teaspoon black pepper (or to taste)

Steps:

  • In a bowl mix all ingredients together (starting with 1/2 cup bread crumbs).
  • Mix and add in more bread crumbs if needed to hold together.
  • Shape into desired size balls.
  • Fry or oven-bake until completely cooked through.

500 g turkey mincemeat
1 large egg
20 g shredded parmesan cheese
30 g wholemeal breadcrumbs
50 g pesto sauce (Olive, Mixed Peppers and Sundried Tomato)
1 pinch salt and pepper

Steps:

  • Pre heat oven to 180c and lightly spray an oven tray with olive oil.
  • In a large mixing bowl add all the ingredients together, season with salt and pepper and mix until bound all together.
  • Roll the turkey mix into small balls and place on the oiled tray you should get 24 meatballs all up.
  • Bake for 20 to 25 minutes until starting to colour.
  • Add meatballs to your favourite pasta or on rice. They are nice with a tomato based sauce or a creamy garlic sauce like alfredo.
  • TIP - You can use any type of bread crumbs like gluten free, panko or just plan. Also you could use a plain sundried tomato pesto instead of the olive and mixed pepper.

1 cup dry bread crumbs
1/2 cup KRAFT Grated Parmesan Cheese
2 eggs, beaten
1 Tbsp. each ground cumin, onion powder and paprika
1/4 cup each chopped fresh mint and fresh parsley, divided
1/2 cup plain low-fat yogurt
1/2 cup ATHENOS Traditional Crumbled Feta Cheese

Steps:

  • Heat oven to 400°F.
  • Mix meat, bread crumbs, Parmesan, eggs, dry seasonings and half the chopped fresh herbs just until blended.
  • Shape into 48 meatballs, each about 1 inch in diameter.
  • Place on foil-covered rimmed baking sheets sprayed with cooking spray.
  • Bake 13 to 15 min. or until done (160ºF). Meanwhile, mix yogurt, feta cheese and remaining fresh herbs until blended.
  • Serve meatballs with the yogurt mixture.
