1/4 cup cooking oil
3/4 cup granulated sugar
3/4 cup mashed strawberry
1/2 cup mashed banana
1 1/2 cups all-purpose flour
1/4 cup whole wheat flour
1/2 cup rolled oats
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, beat eggs until frothy.
  • Mix in oil, sugar, mashed strawberries and mashed bananas.
  • In a separate bowl, combine flours, oats, baking powder, baking soda and salt.
  • Stir to mix thoroughly.
  • Add to wet ingredients.
  • Stir until moistened.
  • Turn into a greased 9x5x3-inch loaf pan.
  • Bake for 50- 60 minutes or until toothpick inserted in centre comes out clean.
  • Cool for 10 minutes then remove loaf from pan to cool completely on rack.
  • Wrap well and allow flavour to blend for at least one day.

4 bananas, very ripe
2 cups fresh strawberries
2 cups flour
1 cup whole wheat flour
1/2 cup sugar
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 large eggs
1/2 cup unsweetened applesauce
2 tablespoons canola oil
2 teaspoons vanilla extract
1/2 cup walnuts, chopped

Steps:

  • Mash bananas in large bowl. Add hulled strawberries and mash as well.
  • Combine with eggs, applesauce, oil, vanilla and sugar. Combine dry ingredients in a separate bowl, add to banana strawberry mixture. Mix in chopped walnuts last.
  • Spoon batter into 2 standard sized loaf pans, or three medium-sized pans which have been lightly sprayed with non-stick cooking spray.
  • Bake in 350 degree oven for 50-60 minutes or until toothpick stuck in center of pans comes out clean.

Steps:

  • Preheat oven to 180 c/ gas mark 4 and line a loaf tin of baking paper
  • In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
  • Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
  • Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
  • Enjoy!!

¼ cup margarine, softened
2 eggs
1 cup mashed bananas
¼ cup water
1 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
  • In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
  • Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
  • Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

This is an excellent cake/bread recipe with very little fat. Notice there is no butter or oil, just bananas. I cut down to 2 larger bananas but it was a little dry so I did actually add just a little canola oil, but I definitely wouldn't have if I had used all 4 bananas. Also, I subbed in blueberries (frozen unthawed) for the raspberries because it's what I had. I stirred them in towards the end of the gentle mixing with a silicon spatula so they wouldn't get mashed up.

1/4 cup butter, melted and cooled
1 teaspoon vanilla extract
1-1/4 cups coarsely chopped fresh or frozen unsweetened strawberries

Steps:

  • In a small bowl, combine the first four ingredients. In another bowl, whisk the eggs, yogurt, butter and vanilla. Stir into the dry ingredients just until moistened.
