CUSTARD BUTTERCREAM
Custard buttercream (German buttercream) is a very rich buttercream icing made with the addition of custard. You can change it up by adding different flavors or liquor. This is my basic time-tested recipe for decorating cakes and cupcakes. Makes enough buttercream for one 3 to 4 layer cake or 24 cupcakes.

Steps:
- Beat egg with a fork in a small, heavy saucepan. Mix in sugar and milk. Heat on medium-low heat, whisking constantly, until it just starts to boil. Continue beating rapidly until mixture thickens to a thin custard consistency. Remove from heat and cool completely, about 1 hour.
- Beat butter in a bowl with an electric mixer until light and creamy, about 5 minutes. Add cooled custard, 1 to 2 tablespoons at a time, beating well after each addition. Beat in rum and vanilla extract. Keep beating until buttercream is very light and fluffy.

RICH CUSTARD BUTTER CAKE
Not your average butter cake! Custard powder added makes this rich enough to be decadent, but it is so easy to prepare. An old family favourite.

Steps:
- Preheat your oven to 170 degrees Celcius.
- Grease and line a 20cmx20cm square cake tin.
- Place all the ingredients into a large bowl.
- Beat on high for 2-3 minutes until combined and the mixture is thick and a light creamy colour.
- Pour into prepared tin and bake for 1 hour.

SIMPLE CUSTARD
This is my own alteration of a few different recipes. Not too rich or too sweet as many egg custards can be. Can be served warm immediately or cold.

Steps:
- Cook and stir milk, vanilla extract, and butter in a saucepan over medium heat until simmering. Remove mixture from heat before it comes to a boil.
- Whisk eggs, sugar, and cornstarch together in a bowl until sugar dissolves.
- Set saucepan back over low heat. Pour in egg mixture slowly, whisking constantly, until custard thickens enough to coat the bottom of a spoon, 5 to 10 minutes.

BREAD AND BUTTER PUDDING
Transform a stale loaf into a comforting bread and butter pudding. This traditional British dessert is layered with a rich vanilla custard, dried fruit and lemon zest

Steps:
- Heat oven to 180C/160C/gas 4. To make the custard, heat the milk, cream and vanilla pod with its scraped out seeds (if using) together in a saucepan to just below boiling point. Meanwhile whisk the eggs and yolk with the caster sugar in a jug. Slowly pour the warm milk mixture, including the vanilla pod, over the eggs, stirring constantly until smooth. Stir in the vanilla extract now if using.
- Lightly butter an ovenproof dish approximately 20cm x 25cm x 5cm. Cut the crusts from the bread slices, then butter both sides of the bread and cut into triangles. Lay half of the bread slices in the bottom of the dish so that they are slightly overlapping. Mix the dried fruit with the lemon zest and sprinkle half of the mix over the bread. Layer the rest of the bread on top then sprinkle over the remaining fruit.
- Remove the vanilla pod from the custard then pour the custard over the pudding. Leave to soak for at least 30 mins, or longer in the fridge, if you like. Sprinkle over the demerara and bake for 35-40 mins until golden brown and puffed up.

- In a large bowl, combine the cake mix, butter and 3 eggs; beat until smooth. Spread into a greased 13x9-in. baking pan. , Set aside 2 tablespoons confectioners' sugar for topping. In a large bowl, beat the cream cheese, vanilla and remaining confectioners' sugar until smooth. Beat in remaining eggs. Pour over batter. WESTERN HOMESTEAD OLD FASHIONED BUTTER CAKE
Old fashioned buttery thin crust on the outside of this tube pan cake. There is no salt or milk. Powdered sugar is the key to this cake and you can use butter, margarine or butter flavored Crisco. I use a combination of butter and butter flavored Crisco. No icing necessary. Serve with fruit, whipped cream or whipped jello or any combination. Recipe found in the walls of our homestead built in 1907 tacked along side of Lithuanian newspapers which were used for insulation. I have updated recipe ie. butter flavored Crisco and Pam. They pounded the sugar to become powder with mortar and pestle.

- In mixing bowl, add 1 pound of butter or a combination of butter and margarine or butter and butter flavored Crisco to equal 1 pound.
- Mix on low speed until soft and blended.
- Add powdered sugar in one/third amounts, beating each one/third until all is mixed and fluffy.
- Then add one egg at a time. Beat one minute for each egg.
- Add vanilla extract.
- Mix.
- Preheat oven to 300°F.
- Spray Pam in a tube or angel food cake pan.
- Note: You can use butter or margarine also.
- Add flour, 1/4 cup to 1/2 cup at a time and mix on low speed until blended.
- Pour batter evenly in pan.
- Bake 1 1/2 hour in oven. High altitude, cook 5 to 10 minutes more.
- Turn over tube pan over plate. I guarantee this cake will fall right out on the plate. Serve warm or cool. This is a no fail cake. Do not open the oven door.
WILLIAMS-SONOMA'S BROWN BUTTER CAKE
I used this recipe to make my snowman cake this year. Added May 23: I've finally made this without using my snowman cake pan, and have added the instructions below the original recipe.

Steps:
- Have all the ingredients at room temperature.
- In a saucepan over medium heat, melt the butter, then cook until the solids separate and settle on the pan bottom, 3 to 5 minutes.
- Continue to cook until the solids brown and are almost burnt, 18 to 20 minutes more.
- Pour the brown butter into a bowl, leaving the solids in the pan (discard the solids).
- Let the butter cool at room temperature until firm.
- The brown butter can be prepared up to 2 days in advance; cover and refrigerate until ready to use.
- Bring to room temperature before using.
- Position a rack in the lower third of an oven and preheat to 325°F
- Brush the pan with unsalted vegetable shortening and lightly flour.
- Tap out excess flour.
- Over a sheet of waxed paper, sift together the flour, baking powder and salt.
- In a small bowl, combine the milk and vanilla.
- Set aside.
- In the bowl of an electric mixer fitted with the flat beater, beat the brown butter on medium speed until creamy and smooth, 1 to 2 minutes.
- Add the granulated sugar and brown sugar and continue beating until light and fluffy, about 5 minutes, stopping the mixer occasionally to scrape down the sides of the bowl.
- Add the eggs one at a time, beating well after each addition.
- Reduce the speed to low and add the flour mixture in three additions, alternating with the milk mixture and beginning and ending with the flour.
- Beat each addition just until incorporated, stopping the mixer occasionally to scrape down the sides of the bowl.
- Spoon the batter into the prepared pan, dividing it evenly between the two halves. Bake until the center of the cake springs back when touched and a toothpick inserted into the center comes out clean, 55 to 60 minutes.
- Transfer the pan to a wire rack and let the cake cool in the pan for 15 minutes.
- Tap the pan gently on a work surface to loosen the cake.
- Set the rack over the top of the cake, invert the pan onto the rack and lift off the pan.
- Let the cake cool completely, 3 to 4 hours, before assembling and decorating with vanilla buttercream.
- If you're using a 9x13 pan:.
- Butter and flour pan.
- Spoon cake mix into pan and smooth out.
- Bake at 325°F for 30-45 minutes, using a toothpick to test doneness.
- Cool for 15 minutes and remove from pan; setting cake on cooling rack to cool completely.
- Frost as desired.

RICH BUTTER CAKE
Everyone has their favorite butter cake recipe. This one is mine. Found it in old recipe file that belonged to my mother-in-law.

- Heat oven to 350°F Combine flour, baking powder and salt in medium bowl. Set aside.
- Beat sugar and 1 cup butter in large bowl at medium speed, scraping bowl occasionally, until creamy. Add eggs, two at a time, beating well after each addition. Add 2 teaspoons vanilla. Reduce speed to low; add flour mixture alternately with 1 cup milk, beating well after each addition.
- Pour batter into greased 13x9-inch baking pan. Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool completely.
- Meanwhile, beat 1/2 cup butter and cooled chocolate in large bowl at medium speed until creamy. Gradually add powdered sugar, alternately with 1/4 cup milk and 2 teaspoons vanilla and scraping bowl occasionally, until well mixed. Frost cooled cake. Sprinkle with decorator sprinkles, if desired.
- TIP: Add 1 to 2 tablespoons additional milk to frosting for desired spreading consistency.
- TIP: This cake is very versatile. Frost the cake or, leave unfrosted and top each serving with sliced strawberries and whipped cream.

- Prepare 20cm/8inch cake tin.
- Cream butter with sugar thoroughly for 3 to4 min, until light and fluffy. Beat in whole eggs, one at a time, adding a tbsp of flour with each. Beat in the milk with a tbsp of milk.
- Gently fold in rest of the flour sieved together with baking powder with large metal spoon.
- Transfer to tin and smooth top with knife.
- Bake in oven in oven at 160c, 325f or Gas mark 3. for 1 1/2 to 1 3/4 hours.
- Leave in tin for 5 min. Turn out onto wire wrack.
- Carefully peel off baking paper and cool.
