THE BEST SPINACH ARTICHOKE DIP

The Best Spinach Artichoke Dip image

This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Categories     appetizer

Time 40m

Yield 6 to 10 servings

Number Of Ingredients 11

Nonstick cooking spray
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)
One 14-ounce can artichoke hearts, drained well and coarsely chopped
1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
Crackers, chips or toasted bread, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
  • Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

HOT SPINACH AND ARTICHOKE DIP (LOWER-THAN-NORMAL-FAT)

Hot Spinach and Artichoke Dip (Lower-Than-Normal-Fat) image

Made with lower fat ingredients. Thicker texture (not runny). Dip freezes well. If you haven't tried this type of dip yet, you don't know what you're missing! Cook time is for microwave.

Categories     Spreads

Time 10m

Yield 6 cups dip, 8 serving(s)

Number Of Ingredients 11

300 g frozen chopped spinach, thawed and drained (1 package)
2 cups nonfat sour cream (1 package)
250 g low-fat cream cheese (1 package)
1 cup lowfat mozzarella cheese
1/2 cup grated parmesan cheese
398 ml artichoke hearts, drained and chopped (1 can, in brine)
1 tablespoon lemon juice
1 tablespoon fresh black pepper (or colored)
1 garlic clove, finely chopped
1 tablespoon onion powder (optional)
1 teaspoon chili pepper flakes (optional)

Steps:

  • Drain any liquid that may be sitting on top of the sour cream.
  • Mix everything together well.
  • Bake it at 350 degrees, stirring once or twice, until heated through (probably 40 minutes).
  • If lazy, hungry, or just plain impatient, use the microwave (takes only a few minutes). This mix freezes well. There is no need to bake before freezing. You may want to freeze this recipe in four 2-cup containers (i. e. large plastic sour cream tubs)
  • Serve with tortilla chips or pita.

LOW FAT SPINACH AND ARTICHOKE DIP

Low Fat Spinach and Artichoke Dip image

I love spinach and artichoke dip, but hate the fat... I came up with this fast and easy recipe that tastes great, is easy to put together, low in fat but big on taste! Flavored with roasted red peppers and Parmesan cheese, no yicky mayo here! Makes enough for a large crowd. Can be made in the microwave for even faster preparation. Also delicious served cold. Note: recipe can be made with fat-free marinade artichokes, I usually buy two small jars, adds a little extra zing! WW points = 1/serving

Mini Grilled Artichoke Hearts with Low Fat Spinach and Artichoke Dip image

Provided by Food Network

Time 15m

Yield 10 to 12 appetizer servings

Number Of Ingredients 10

2 (14-ounce) cans extra small artichoke hearts, packed in water, drained and patted dry (recommended: Reese)
1 tablespoon olive oil
1/2 onion, finely diced
1 cup fresh spinach, cut into julienne
1 cup Greek yogurt (recommended: Fage 2 percent)
1/2 cup shredded low-fat mozzarella cheese
4 tablespoons Parmesan
3 tablespoons fresh basil, cut into julienne
Dash ground nutmeg
Salt and freshly ground pepper

Steps:

  • Preheat the oven to 175 degrees F.
  • Halve all but 2 of the artichoke hearts and grill the rest over medium-high heat on an oiled grill (a grill pan may be substituted) until lightly charred and warmed through. Keep warm in the oven while preparing the spinach and artichoke dip.
  • In a large skillet, heat the olive oil over medium-high heat. Saute the onions until tender and translucent, about 3 minutes. Add the spinach and cook until wilted and all the moisture in the pan has evaporated, about 3 minutes. Chop the reserved whole artichoke hearts and add, along with the Greek yogurt, mozzarella and Parmesan. Cook until cheese has melted. Add the basil and nutmeg, season with salt and pepper, and serve on top of grilled artichoke hearts.

LOW FAT SPINACH AND ARTICHOKE QUICHE

Low Fat Spinach and Artichoke Quiche image

This is a low fat version of a quiche that I found online somewhere a while back. In our attempt to be healthier, we've altered most of our recipes. Hope you like it!

Provided by zomojen

Categories     Breakfast

Time 55m

Yield 1 quiche, 6 serving(s)

Number Of Ingredients 11

2 tablespoons fat free sour cream
1 tablespoon salt
2 1/2 cups fat-free half-and-half
8 eggs
1 tablespoon pepper
1 pinch nutmeg
1 prepared pie crust
3/4 cup chopped spinach
3/4 cup artichoke heart
3 cups shredded part-skim mozzarella cheese
1/2 cup reduced fat parmesan cheese

Steps:

  • For the batter:
  • In a medium mixing bowl, beat together the sour cream and the salt. Add the half-and-half, eggs, pepper, and nutmeg.
  • For the crust:
  • Preheat the oven to 350 degrees F.
  • Place a pie tin on top of the pie crust and turn the crust upside down. Place this inverted pie crust in the oven to bake for approximately 10 minutes or until edges begin to lightly brown. Remove from oven and allow to cool.
  • To assemble:
  • Mix the filling ingredients together. Fill the blind baked pie shell with the filling. Slowly pour some of the batter over the top of the filling, being careful not to have the batter flow over the edges of the crust. Bake for 45 minutes until puffed and browned.
