Categories     dinner, project, main course

Time 30m

Yield Serves 4

Number Of Ingredients 11

4 6-ounce fillets black bass
7 tablespoons extra-virgin olive oil
Sea salt
8 ounces shiitake mushrooms, rimmed and cut into 1/4 -inch slices (4 cups)
1/4 cup thinly sliced shallots
4 thin slices (the size of a quarter) peeled ginger
1 1/2 cups diced (1/4-inch) rhubarb
2 teaspoons sugar
2 tablespoons butter
1 tablespoon heavy cream
1 teaspoon balsamic vinegar

  • In a large sauté pan, heat 2 tablespoons olive oil over medium-high heat. Add the shiitakes, season with salt and sauté until lightly browned and just softened. Scrape into a bowl, adjust seasoning and keep warm.
  • Return the pan to the heat and pour in the remaining 2 tablespoons oil. Add the shallots, ginger and rhubarb. Cook, stirring to scrape up any bits, until the rhubarb softens, about 4 minutes. Add 3/4 cup water and the sugar. Season with salt. Cook until reduced by half. Whisk in the butter and cream and then the vinegar. Press the sauce through a fine-mesh sieve set over a bowl.
  • To serve, divide the sauce among 4 shallow bowls. Lay a piece of fish in each and top with a spoonful of mushrooms.

Seared Black Bass With Scallion-Chile Relish image

If time is of the essence, a skin-on fish fillet is your best friend. This black bass crisps up beautifully when pressed down on a hot pan.

Provided by Chris Morocco

Time 15m

Yield 4 Servings

Number Of Ingredients 8

4 tablespoons olive oil, divided
4 (5-6-ounce) skin-on black bass fillets
Kosher salt, freshly ground pepper
1 bunch scallions, thinly sliced
1 serrano chile, thinly sliced
2 cups cilantro leaves with tender stems
2 tablespoons fresh lime juice
1 teaspoon toasted sesame seeds

Steps:

  • Heat 2 tablespoons oil in a large nonstick skillet over medium-high until very hot but not smoking. Season bass with salt and pepper and cook, skin side down, gently pressing occasionally with a spatula to ensure contact with skillet, until skin is browned and crisp and flesh is nearly opaque, 6-8 minutes. Turn and cook until flesh is opaque throughout, about 1 minute longer.
  • Meanwhile, toss scallions, chile, cilantro, lime juice, sesame seeds, and remaining 2 tablespoons oil in a medium bowl; season with salt. Serve bass with scallion-chile relish.

Categories     Citrus     Fish     Fruit     Ginger     Roast     Sauté     Orange     Mint     Bass     Spring     Rhubarb     Cinnamon     Simmer     Gourmet

Yield Makes 6 servings

Number Of Ingredients 13

4 navel oranges
3 tablespoons olive oil
1 tablespoon unsalted butter
1 large onion, halved lengthwise and thinly sliced lengthwise
1 lb rhubarb, cut into 1-inch pieces
2 tablespoons mild honey
1 1/4 teaspoons salt
1 1/2 teaspoons minced peeled fresh ginger
1/4 teaspoon cinnamon
1 (14- to 15-oz) can diced tomatoes including juice
1/4 teaspoon black pepper
6 (6- to 8-oz) black sea bass fillets with skin and small bones removed
1/4 cup chopped fresh mint

Steps:

  • Arrange oven rack in middle position and preheat oven to 375°F.
  • Cut peel, including white pith, from 3 oranges with a small sharp knife. Working over a bowl, cut segments free from membranes. Squeeze juice from membranes into bowl. Drain off as much juice as possible from segments into a measuring cup. Squeeze enough juice from remaining orange to total 2/3 cup of juice.
  • Heat 2 tablespoons oil with butter in a 12-inch heavy skillet over moderate heat until butter is melted, then cook onion, stirring occasionally, until softened and golden brown, 18 to 20 minutes.
  • While onion is caramelizing, cook rhubarb, honey, 1/3 cup orange juice, and 1/4 teaspoon salt in a 2-quart heavy saucepan over moderate heat, stirring occasionally, until rhubarb is very tender, about 12 minutes. Force mixture through a medium-mesh sieve into a bowl, scraping and pressing hard on solids and discarding them.
  • Add ginger and cinnamon to onion and cook, stirring, 1 minute. Add remaining 1/3 cup orange juice and boil until thickened, about 1 minute. Stir in rhubarb purée, tomatoes, pepper, and 1/2 teaspoon salt and briskly simmer, stirring occasionally until sauce is thickened slightly, 7 to 10 minutes. Remove from heat.
  • While sauce simmers, grease a 17- by 12-inch glass or ceramic baking dish with remaining tablespoon oil. Pat fish dry and sprinkle with remaining 1/2 teaspoon salt. Arrange fish, skin sides up, in 1 layer in baking dish and bake until opaque and just cooked through, 12 to 14 minutes. Stir orange segments into sauce and cook until heated through, 1 to 2 minutes, and season with salt. Stir mint into sauce and serve with fish.

RHUBARB SAUCE

Rhubarb Sauce image

This jewel-bright rhubarb sauce has as many uses as a Swiss Army knife. Glossy and sweet-tart, it tastes fabulous in iced coffee, cocktails and other mixed drinks, and is especially welcome over vanilla ice cream. The optional vanilla bean adds musky warmth that extract does not, so skip it completely - don't substitute - if not using. With this recipe, you get two goodies: the sauce of course, and the strained fruit that remains, which is great draped over yogurt in the morning or spread onto a slice of buttered toast.

Provided by Eric Kim

Categories     sauces and gravies

Time 1h20m

Yield 1 cup

Number Of Ingredients 4

1 1/2 pounds rhubarb, trimmed and cut into 3-inch pieces
1 cup granulated sugar
1 tablespoon lemon zest, and 2 to 3 tablespoons juice (from 1 large lemon)
1 vanilla bean, split lengthwise and scraped (optional)

Steps:

  • Heat oven to 350 degrees. In a roasting pan or large, shallow Dutch oven, combine the rhubarb, sugar, lemon zest and juice, vanilla bean (if using) and 2 1/2 cups water. Using clean hands, gently move the rhubarb around to disperse the ingredients. Roast until the rhubarb softens, the sugar dissolves and the water is pink, about 1 hour.
  • Let the pan cool slightly before carefully straining the syrup through a fine-mesh sieve into a large measuring cup or bowl. You should have about 2 1/2 cups rhubarb syrup. Transfer the roasted rhubarb to an airtight container and refrigerate for up to 1 week. Pour the syrup back into the pan.
  • On the stovetop over high heat, bring the syrup to a boil, immediately reduce the heat to medium-high and continue boiling, stirring with a wooden spoon, until the syrup has reduced by a little more than half, 10 to 12 minutes. Watch carefully so that the hot syrup doesn't boil over the sides of the pan. (You should have about 1 cup sauce.)
  • Use the sauce immediately or refrigerate in an airtight container for up to 1 week. This tastes so good over vanilla ice cream, stirred into a glass of iced water for something reminiscent of pink lemonade or iced coffee for a high note, mixed into a pan sauce for duck breasts, or drizzled over any kind of whipped cream, pavlova or Eton mess-style dessert. The strained fruit tastes wonderful over yogurt.

WHOLE BLACK BASS WITH GINGER AND SCALLIONS

Whole Black Bass with Ginger and Scallions image

A whole fish, representing abundance, is almost always included on the celebratory Chinese table. Ours is flavored only lightly, with ginger and scallions, so as not to overpower the fresh taste of the fish.

Categories     Wok     Ginger     Onion     Bake     Quick & Easy     Lunar New Year     Bass     Healthy

Yield Makes 8 servings (as part of a Chinese meal)

Number Of Ingredients 9

1 (3-lb) whole black bass or sea bass (not Chilean), cleaned, leaving head and tail intact
1/2 teaspoon salt
1 bunch scallions, white and pale green parts cut into very thin 2-inch strips and greens reserved separately
1 (1-inch) piece fresh ginger, peeled and cut into very thin matchsticks
3 tablespoons light soy sauce (preferably Pearl River Bridge brand)
1/4 teaspoon sugar
1 tablespoon peanut or vegetable oil
Special Equipment
a large shallow baking dish (about 15 by 10 inches) to fit inside a 17- by 12- by 2 1/2-inch roasting pan; heavy-duty foil; a well-seasoned 14-inch flat-bottomed wok

Steps:

  • Put oven rack in middle position and preheat oven to 400°F. Put baking dish in roasting pan.
  • Rinse fish and pat dry, then rub inside and out with salt. Transfer to baking dish and sprinkle with scallion strips (white and pale green) and ginger.
  • Stir together soy sauce and sugar until sugar is dissolved, then pour over fish. Add enough boiling-hot water to roasting pan to reach halfway up side of baking dish. Oil a large sheet of heavy-duty foil, then tent foil (oiled side down) over fish and tightly seal around roasting pan. Carefully transfer roasting pan to oven and bake until fish is just cooked through, 30 to 35 minutes.
  • While fish bakes, cut enough scallion greens diagonally into very thin slices to measure 1/2 cup (reserve remainder for another use).
  • Just before serving, remove foil from fish and sprinkle with scallion greens. Heat wok over high heat until a bead of water vaporizes instantly. Pour oil around side of wok, then tilt wok to swirl oil, coating side, and heat until smoking. Remove from heat and immediately pour oil over scallion greens and fish.
