This makes a great sweet and savory sauce or salad dressing like the ones served at restaurants. It makes a great dip for fresh Thai or Vietnamese spring rolls. It's easy to make and I usually have all the ingredients in my cupboard. Garnish with mint leaves and chopped peanuts if desired.

2 tablespoons cornstarch
½ cup cold water
¼ cup low-sodium soy sauce
½ cup smooth peanut butter
¼ cup brown sugar
1 tablespoon white vinegar
2 teaspoons sesame oil
1 cup warm water
¼ cup chopped peanuts
1 tablespoon chopped fresh mint leaves

Steps:

  • Dissolve the cornstarch in 1/2 cup of cold water; set aside.
  • Whisk together the soy sauce, peanut butter, brown sugar, white vinegar, sesame oil, and 1 cup warm water in a small saucepan over medium heat; simmer and stir until sugar has dissolved. Stir in the cornstarch mixture; simmer until the sauce is thick, 1 or 2 minutes. Serve warm. Garnish with chopped peanuts and mint leaves as desired.

1/2 tablespoon fresh ginger, grated

  • Combine all ingredients in a small bowl, and whisk well.
  • Add to your favorite salad.

1/4 cup Creamy Peanut Butter (low fat or regular, whatever you like)
2 and 1/2 tablespoons rice vinegar
1/2 teaspoon EACH: sesame oil, toasted sesame seeds, AND red pepper flakes
3 tablespoons EACH: lime juice, sugar AND chopped cilantro
1 and 1/2 tablespoons Soy sauce
2 tablespoons EACH: canola oil AND honey
1 tablespoon EACH: minced garlic AND freshly grated ginger
5 cups Napa cabbage (shredded coleslaw mix works too)
2 cups Red Cabbage
1 Red bell pepper, thinly sliced
1 cup shelled edamame* (see note)
3 scallions, thinly sliced on the diagonal
3 whole carrots, shredded

Steps:

  • For the dressing: In a medium bowl, combine the peanut butter, rice vinegar, sesame oil, lime juice, soy sauce, canola oil, sugar and honey and whisk until smooth. Add the red pepper flakes, garlic, ginger, cilantro, and sesame seeds and mix until combined. Alternately, you can combine all ingredients in a blender and process until completely smooth. Let dressing rest for 10 minutes before tossing with salad.
  • For the Salad: In a large bowl, combine all ingredients, toss. Right before serving, drizzle peanut lime dressing over the top and toss.

I created this recipe as an answer to the high fat peanut sauces in restaurants and in most recipes. It is a touch sweeter than most, but I find the soy sauce and the cayenne dampens the sweetness considerably.

1/2 cup better n' Peanut butter low-fat peanut butter
1/2 cup hot water
1 tablespoon cornstarch
3 tablespoons soy sauce
1 tablespoon pureed ginger
1 tablespoon crushed garlic
5 scallions, sliced
5 sprigs fresh basil, chopped
1/2 teaspoon cayenne

Steps:

  • Mix peanut butter with hot water in a small bowl until smooth.
  • Add spices, soy sauce and cornstarch and whisk to remove any lumps.
  • Steam-fry veggies of choice, and add the peanut sauce when stirfry is half done.
  • Bring to a boil, then reduce to a simmer until veggies are done and the sauce thickens.
  • Serve!

Steps:

  • In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, honey, lime juice, ginger, sesame oil, garlic, and red pepper flakes. Season to taste with salt and pepper (I like 1 teaspoon salt and 1/2 teaspoon pepper). If the dressing is too thick, thin with water, 1 teaspoon at a time.

  • Whisk first 9 ingredients in medium bowl to blend.
  • Add enough water to large saucepan to reach depth of 1/2 inch. Bring to boil; add sweet potatoes and cook until just tender, about 5 minutes. Drain; cool.
  • Mix sweet potatoes, dressing, peas, and green onions in large bowl. Season salad with salt and pepper. (Can be made 4 hours ahead. Cover and refrigerate.) Sprinkle salad with peanuts and serve.
