LOW-FAT SHRIMP CHOWDER

Low-Fat Shrimp Chowder image

"This zippy chowder is chock-full of shrimp and vegetables, so it satisfies hearty appetites, but the skim milk and reduced-sodium broth help keep fat and calories to a minimum," writes Michelle Conley of Evanston, Wyoming. "It tastes even better the next day, after the flavors have melded overnight."

LOW-FAT CLAM CHOWDER

Low-Fat Clam Chowder image

Provided by Food Network Kitchen

Time 1h45m

Yield 4 servings

Number Of Ingredients 14

4 pounds cherrystone clams, scrubbed
2 large red-skinned potatoes, peeled and cut into 1/2-inch cubes
1 slice lean center-cut bacon, chopped
1 medium onion, diced
1 stalk celery, thinly sliced
2 cloves garlic, minced
1 teaspoon fresh thyme
2 bay leaves
1 cup fat-free half-and-half
Kosher salt and freshly ground pepper
4 teaspoons unsalted butter, sliced
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
1/2 teaspoon paprika

Steps:

  • Put the clams and 2 cups water in a pot. Cover, bring to a boil over medium-high heat and cook 5 minutes. Uncover and continue to cook until the clams open, 5 to 10 minutes (discard any that do not open); transfer the clams to a bowl.
  • Pour the liquid into a large measuring cup. (You should have 3 cups liquid; add water if needed.) Wipe out the pot. Pour the liquid back into the pot through a paper towel-lined sieve. Add the potatoes, cover and simmer until tender, about 15 minutes. Remove one-third of the potatoes. Continue to cook the remaining potatoes, covered, until soft, about 10 more minutes. Puree in batches in a blender until smooth. Return the soup to the pot.
  • Cook the bacon in a skillet over medium heat until crisp, about 5 minutes. Add the onion and celery and cook until soft, about 5 minutes. Add the garlic, thyme and bay leaves and cook, stirring, about 3 more minutes. Add the bacon mixture and reserved potatoes to the soup. Cover and cook over low heat, about 5 minutes.
  • Meanwhile, remove the clams from their shells and roughly chop. Stir the clam meat and half-and-half into the soup; remove from the heat, cover and set aside, 20 to 30 minutes.
  • Discard the bay leaves. Season the soup with salt and pepper and reheat. Serve topped with a slice of butter, parsley, chives and paprika.

This is a hearty soup that you can serve as a first course or as an entree. You may want to try a little hot pepper sauce (such as Tabasco®) when serving. It kicks it up a notch.

SHRIMP AND SMOKED OYSTER CHOWDER

Shrimp and Smoked Oyster Chowder image

Food & Wine, March 2010. There are several tricks to this terrific chowder from Linton Hopkins of Restaurant Eugene and Holeman and Finch Public House in Atlanta. He adds potato chunks to the broth for thickness, then pours in a little naturally low-fat buttermilk for creamy tanginess. And instead of fatty bacon, he uses smoked oysters to give the chowder a slightly woodsy flavor. One serving: 180 cal, 5gm fat, 1.5gm sat fat, 16gm carb, 3gm fiber, 19gm protein, 780mg sodium.

Categories     Chowders

Time 1h

Yield 6 serving(s)

Number Of Ingredients 20

3 cups water
1 cup bottled clam broth
1/2 lb medium shrimp, shelled, deveined and quartered, shells reserved
6 garlic cloves, 4 smashed and 2 minced
1/4 cup dry sherry
1/2 teaspoon crushed red pepper flakes
2 bay leaves
1 onion, chopped (about 1.5 cups)
1 tablespoon extra virgin olive oil
1 small fennel bulb, cored and finely diced (1/2 cup)
1 celery rib, finely diced
1 small green bell pepper, finely diced
one 14 oz can peeled italian tomato, finely chopped and juices reserved
1 medium baking potato, peeled and cut into 1/2 inch pieces
salt & freshly ground black pepper
6 ounces skinless grouper or 6 ounces cod fish fillets, cut into 1 inch pieces
3 ounces smoked oysters, drained and chopped
1 tablespoon Worcestershire sauce
1 cup buttermilk, at room temp
2 tablespoons flat leaf parsley, chopped

Steps:

  • In a large saucepan, combine the water and clam broth with the shrimp shells, smashed garlic, sherry, crushed red pepper, bay leaves and 1/3 of the onion. Bring to a boil and simmer, covered, over low heat for 20 minutes. Strain the shrimp stock into a heatproof bowl and discard the solids.
  • In a soup pot, heat the oil. Add the fennel, celery, bell pepper, minced garlic and the remaining onion. Cover and cook over moderate heat, stirring once or twice, until the vegetables are barely softened, 3 minutes. Uncover and cook until tender, 3 minutes longer.
  • Add the tomatoes with their juices and the shrimp stock; bring to a simmer.
  • Add the potato, season with salt and pepper and simmer until just tender, 15 minutes.
  • Add the shrimp, grouper, oysters and Worcestershire sauce; simmer until cooked through, 3 minutes.
  • Off the heat, stir in the buttermilk and parsley.

SHRIMP CHOWDER

Shrimp Chowder image

I got the inspiration for this creation while watching one of my least favorite chefs, Email Lagross (who, by the way, is one of only a handful of chefs in the world who has such rare spices as "papa reeka" and "cardamin" in his pantry) on TV. As I watched him standing back and throwing spices, from about 6 feet away, into (or "inside of", in Lagross-speak) the pot, I said to myself, "Self! This is a freakin' cooking show, not basketball tryouts!" Fortunately, since I am not schizo, "self" did not answer "me". Are you with me so far?

Categories     Chowders

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 16

1/2 lb unsliced thick slab bacon or 1/2 lb pancetta, diced
1 cup chopped scallion
1 cup roughly chopped onion
1/2 cup chopped celery
1 large carrot, diced
3 bay leaves
1 teaspoon ground thyme, more to taste
2 teaspoons Old Bay Seasoning, more to taste
8 drops TABASCO® brand Chipotle Pepper Sauce, more to taste
1/2 cup all-purpose flour
1 lb potato, peeled and diced
4 cups shrimp bouillon or 4 cups homemade shrimp stock
2 cups heavy cream
12 -16 ounces large raw shrimp, peeled and roughly chopped
2 tablespoons finely chopped fresh parsley
salt and pepper

Steps:

  • In a heavy stockpot, over medium-high heat, cook the bacon or pancetta until most of the fat is rendered, about 8 minutes.
  • Stir in the scallions, onion, celery and carrots.
  • Sauté for about 2 minutes until the veggies start to wilt.
  • If desired, season lightly with salt and pepper (be careful since the bouillon/stock and Old Bay seasoning are salty – you can adjust later).
  • Add the bay leaves, thyme, Tabasco and Old Bay.
  • Stir in the flour and cook for 2 minutes.
  • Add the potatoes and stir in the bouillon or stock.
  • Bring to a gentle boil and then reduce heat to simmer.
  • Simmer until the potatoes are just fork tender, about 10 to 12 minutes.
  • Add the heavy cream and bring just to a simmer – no hotter or the soup may stick to the bottom.
  • Add the shrimp and simmer for 2 to 4 minutes until the shrimp are just turning opaque.
  • Stir in the parsley, taste the soup and adjust seasonings if necessary.
  • Eat it.
